FABULOUS FILBERT FOOTBALL COOKIES AKA SUPER BOWL COOKIES

Fabulous Filbert Football Cookies Aka Super Bowl Cookies image

You guests won't fumble when you "pass" them these delicious cookies! Dig out your football shaped cookie cutter and remember "Laces out!". We did tutorials a while back, and this recipe was one of the mini tutorials. http://www.recipezaar.com/bb/viewtopic.zsp?t=226633

Provided by Brenda.

Categories     Dessert

Time 40m

Yield 2-3 dozen

Number Of Ingredients 10

1 cup dark brown sugar, packed
1 cup butter (2 sticks) or 1 cup margarine, softened to room temperature (2 sticks)
1 large egg
1/2 teaspoon ground cinnamon
2 1/2 cups flour
1/3 cup baking cocoa
1/2 teaspoon baking soda
1 cup filberts, toasted and ground (hazelnuts)
1 cup white chocolate chips
2 teaspoons shortening

Steps:

  • In large mixing bowl, beat brown sugar and butter until creamy, about 2 minutes.
  • Add egg and cinnamon; beat until light and fluffy.
  • Add flour, cocoa and baking soda, beating on low speed to combine.
  • Mix in ground nuts. Dough will be somewhat stiff.
  • Shape dough into 2 flat rounds; cover with plastic wrap and chill for at least 1 hour.
  • On surface dusted lightly with flour, roll out 1 round at a time to 1/8-inch thickness. The dough may be a bit stiff at first and crack a bit. That's ok keep at it, they will be fine :).
  • With cookie cutter, cut out football shapes.
  • Place 1 inch apart on cookie sheets coated with cooking spray or parchment paper.
  • Using a knife, mark laces on 1/2 of the footballs. These will be the "tops".
  • Bake at 350 degrees F. for 10 to 12 minutes or until tops are no longer moist.
  • Remove from cookie sheets and place on wire racks to cool.
  • Place white chocolate chips and shortening in a microwave safe dish; microwave on 50 percent power for 3 to 4 minutes, stirring every 30-45 seconds until the chips are melted.
  • Fill pastry bag fitted with a tip to achieve a thin line with white chocolate mixture. Pipe melted white chocolate onto the back of an unmarked cookie; top with a cookie with laces marked on it to make a sandwich. Decorate the top by piping on additional melted white chocolate to resemble laces on football.
  • Repeat with remaining cookies.
  • Makes 2 to 3 dozen cookies, depending on size of cutter.
  • I recommend doubling the white chocolate mixture so you can be a bit more generous with the filling. I make 1 batch per round of cookie dough.
  • Based on a recipe from the National Pork Board :).

FOOTBALL CAKE POPS

Football Cake Pops image

My son loves football! For his eighth birthday, I made cake pops with a rich chocolate cake center and a yummy peanut butter coating. These are sure to be winners at parties, bake sales and sports-watching events. -Jenny Dubinsky, Inwood, WV

Provided by Taste of Home

Categories     Desserts

Time 2h35m

Yield 4 dozen cake pops

Number Of Ingredients 7

1 chocolate cake mix (regular size)
1 cup cream cheese frosting
1 cup dark chocolate chips
1 cup peanut butter chips
1 tablespoon shortening
48 4-inch lollipop sticks
1/4 cup white decorating icing

Place on parchment-lined baking sheets; refrigerate until firm, about 30 minutes., Meanwhile, place chocolate chips, peanut butter chips and shortening in a microwave-safe bowl. Microwave 30 seconds and stir; repeat, stirring every 30 seconds until melted and smooth, adding more shortening if needed. Do not overheat. , Dip a lollipop stick into chocolate mixture; insert halfway through a football shape, taking care not to break through the other side. Return to baking sheet until set; repeat to form remaining cake pops. Coat each cake pop with the chocolate mixture, allowing excess to drip off; reheat and stir chocolate mixture as needed. FOOTBALL CHEESEBALL WITH HERBED CRACKERS

Football Cheeseball with Herbed Crackers image

Provided by Valerie Bertinelli

Categories     appetizer

Time 3h

Yield 12 servings

Number Of Ingredients 15

1 pound cream cheese, softened
8 ounces sharp Cheddar, shredded
3/4 teaspoon hot sauce
3/4 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 medium shallot, minced
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
1 1/4 teaspoons minced fresh rosemary
1 1/4 teaspoons minced fresh thyme
One 9.1-ounce box whole-wheat crackers, such as Wheat Thins
1 1/4 cups walnuts
1 piece white string cheese
Vegetable crudites, for serving

Steps:

  • Combine the cream cheese, Cheddar, hot sauce, Worcestershire sauce, garlic powder, onion powder and shallots in a large bowl. Beat with an electric mixer until thoroughly blended. Season with salt and pepper. Transfer to a large sheet of plastic wrap, cover with a second sheet of plastic wrap and form into a football shape. Wrap up in the plastic and refrigerate until firm, at least 2 hours and up to overnight.
  • Preheat the oven to 350 degrees F.
  • Combine the butter, rosemary and thyme in a small bowl and microwave until melted.
  • Lay the crackers out on two baking sheets. Brush the tops with about 2 1/2 tablespoons of the herb butter. Bake until fragrant and a shade darker, about 10 minutes. Cool completely, then store in an airtight container at room temperature until ready to eat. (The crackers can be made up to 2 days ahead.)
  • Toss the walnuts with the remaining herb butter and arrange on a baking sheet in a single layer. Bake until golden brown, about 8 minutes. Cool completely, then finely chop.
  • Unwrap the cheese ball and cover completely with the walnuts. Transfer to a serving dish. Separate the string cheese into strands and arrange them to look like the laces on a football. Serve with the herbed crackers and crudites.

  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and sugar together on high speed until completely smooth and creamy, about 2 minutes. Add the egg, vanilla, and almond extract (if using) and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. If the dough seems too soft, you can add 1 Tablespoon more flour until it is a better consistency for rolling.
  • Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment paper or a lightly floured silicone baking mat (I prefer the nonstick silicone mat) to about 1/4-inch thickness. The rolled-out dough can be any shape, as long as it is evenly 1/4-inch thick.

  • Peanut Butter Football Dip. I never thought of peanut butter and chocolate as a dip -but with pretzels, it works! Dorothy at Crazy for Crust made a football shape with peanut butter and chocolate chips, then covered the whole thing in chocolate sprinkles.
  • Football Cake Pops. Made by Jamie at Love + Butter, the cake pops are made of chocolate cake crumbs and frosting shaped into footballs, then glued onto sticks with melted chocolate -which also coats them!
  • Football Cupcake Eggs. It looks like a football, but it's an egg. But it's not an egg, it's just an eggshell (although one that resembles a football) that has chocolate cake inside.
