4 8-ounce pork loin chops with bone, trimmed of excess fat (about 1 inch thick)
2 tablespoons olive oil
2 1/2 cups canned low-salt chicken broth
1/3 cup dried cherries (about 2 ounces)
1/3 cup balsamic vinegar

Steps:

  • Using sharp knife, cut bones from pork chops. Cover and refrigerate pork. Heat 1 tablespoon oil in heavy medium skillet over medium-high heat. Add bones; sauté until brown, about 15 minutes. Pour off any accumulated fat. Add 2 cups broth to skillet. Simmer over low heat until broth is reduced to 1 cup, scraping up any browned bits on bottom of skillet, about 25 minutes. Remove bones from skillet. Add cherries and vinegar to skillet; simmer until reduced to 2/3 cup, about 8 minutes. (Can be made 1 day ahead. Cover; chill.)
  • Sprinkle pork with salt and pepper. Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add pork; sauté until brown, about 2 minutes per side. Add remaining 1/2 cup chicken broth. Reduce heat to low. Cover and cook until pork is just firm and no longer pink in center, about 6 minutes. Transfer pork to plates. Tent with foil to keep warm.
  • Pour cherry mixture into same skillet. Bring to boil. Reduce heat; simmer until sauce is reduced to 3/4 cup and coats back of spoon, about 5 minutes. Season with salt and pepper. Spoon over pork.

Found this recipe the Raleigh (NC) News&Observer and I'm posting it b/c I do not want to lose it before I tried it (I'm good at throwing out the paper, forgetting I wanted to save something). Recipe from Sarah Foster of Foster's Market. Times do NOT include marinating pork in the frig.

2 (1 lb) pork tenderloin
1/2 cup dried cherries
1/3 cup dry red wine
1/4 cup balsamic vinegar
3/4 cup good-quality all-natural cranberry juice or 3/4 cup unfiltered apple juice
4 garlic cloves, minced
6 shallots, cut in half lengthwise
3 tablespoons fresh rosemary or 2 teaspoons dried rosemary
2 tablespoons olive oil
salt & freshly ground black pepper

Steps:

  • Rinse the pork loin, pat dry, and place in a shallow glass or ceramic baking dish and set aside.
  • Whisk together the cherries, wine, vinegar, cranberry juice, garlic, shallots, and rosemary in a bowl. Pour this mixture over the pork, cover and refrigerate 2 to 3 hours or overnight.
  • Preheat the oven to 375 degrees.
  • Heat the olive oil in a large, ovenproof skillet over medium heat. Remove the pork from the marinade (reserve the marinade) and place the pork in the heated skillet. Cook the pork on all sides, until lightly brown, about 5 to 6 minutes.
  • Pour the reserved marinade over the pork and place the skillet in the oven. Roast, basting several times, about 20 to 25 minutes or until a meat thermometer registers 150 to 155 degrees (160 degrees - about 5 minutes longer - for medium-well). The meat will be a very light pink color. (Note: The pork will continue to cook after it is removed from the oven.).
  • Remove from the baking dish and place on a grooved carving board. Cover the pork loosely with foil and let it rest 5 to 10 minutes before carving.
  • Season with salt and pepper. Slice into 1/4-inch pieces and spoon the pan juices over the pork. Serve immediately.

I found this recipe in a weekly magazine that comes with our newspaper. I am not a big meat eater, but I figured that matching the pork with the cherries was a good mix and boy was I right. I hope you enjoy this as much as my husband and I did! The cherry sauce did call for putting in 12 whole cloves when you are simmering it with the sugar and cinnamon, and then removing them. I did not do this as I don't like cloves.

1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
3 -4 lbs boneless pork loin roast
1 (14 ounce) can red tart pitted cherries, packed in water
1 -1 1/2 cup sugar
1/4 cup cider vinegar
1/4 teaspoon cinnamon
1/3 cup cornstarch
1 tablespoon lemon juice
1 tablespoon butter

Steps:

  • Preheat the oven to 325 degrees.
  • Combine salt, pepper, and garlic powder in a small bowl and mix well.
  • Rub on the pork roast.
  • Place in an 11 x 7 baking dish, fat side up.
  • Bake, uncovered for 1 1/2 - 2 hours, until internal temperature reaches 160 degrees.
  • Drain cherries, reserving liquid. Add enough water to cherry liquid to measure 3/4 cup.
  • Pour 1/2 cup into a medium saucepan and add sugar, vinegar, and cinnamon.
  • Bring to a boil, reduce heat, and simmer uncovered, 10 minutes.
  • Combine cornstarch with reserved 1/4 cup liquid and stir until cornstarch dissolves.
  • Using a wisk, stir cornstarch mixture into hot cherry liquid.
  • Bring to a boil and cook for 2 minutes, stirring constantly.
  • Stir in lemon juice, butter and cherries.
  • Cook 1 minute longer.
  • Place pork on cutting board and let stand for 15 minutes before slicing.
  • Serve with cherry sauce.

2 -3 lbs pork loin roast
1 teaspoon salt
1 teaspoon sage
1/2 teaspoon pepper
1 (16 ounce) can unsweetened tart red cherries
1/4 cup balsamic vinegar
3/4 cup brown sugar
1/2 cup dried cherries
1 teaspoon mustard
4 teaspoons cornstarch

Steps:

  • Mix the salt, sage, and pepper. Rub this mixture all over the roast.
  • Roast, fat side up, on a rack at 325 degrees for 30 to 40 minutes per pound or until a meat thermometer registers 170 degrees.
  • Allow to set for 15 to 20 minutes while you prepare the sauce.
  • Sauce: Whisk the liquid from the cherries into the meat drippings in the roasting pan over medium heat. (You may remove some of the fat first, if desired.) Add the vinegar, brown sugar, dried cherries, and mustard. Cook over medium heat. Meantime, whir the canned cherries in your food processor until you have a cherry sauce similar to applesauce. Add these to the pan with the cornstarch. Cook until slightly thickened.
  • Slice the roast and spoon the sauce down the middle of the slices.

I am posting this recipe by Lidia Matticchio Bastianich by request of one of the members of the Italian cooking forum. It is a traditional Italian pork roast that is usually served for Christmas dinner but I would make it anytime as I love pork!

1/2 cup fresh rosemary leaf, plus
2 sprigs fresh rosemary
6 tablespoons extra virgin olive oil
10 cloves garlic
16 fresh sage leaves
2 teaspoons salt
3 1/2 lbs boneless pork loin (preferably with the tail intact)
1 bay leaf
fresh ground black pepper

Steps:

  • Put 1/2 cup rosemary leaves, 3 tablespoons of the olive oil, 5 garlic cloves, 8 sage leaves and 1 teaspoon of salt into a food processor bowl.
  • Process until you have a fairly smooth paste.
  • Lay out the pork loin fat side down.
  • Cut along the top side of the"tail" and into the eye of the roast.
  • Continue cutting in a sawing motion, unrolling the loin into a rectangle of more or less even thickness.
  • Spread the entire top surface of the pork evenly with the herb paste.
  • Starting with the side opposite the tail, roll the roast into a compact roll with a spiral of herb filling running through it.
  • Tie the roast at 1-inch intervals with kitchen twine.
  • Season generously with salt and pepper.
  • Set the meat into a round 5-quart casserole dish.
  • Add the remaining rosemary sprigs, sage leaves, garlic and bay leaf.
  • Pour in just enough water to cover the meat.
  • Season the water lightly with salt and pepper.
  • Bring to a boil over high heat, then lower the heat to a simmer and cook, turning the meat occasionally, until almost all of the water has evaporated and the meat begins to stick to the casserole, about 2 hours.
  • Skim any foam off of the surface as needed.
  • Pour off the fat remaining in the braising pan and pour in the remaining 3 tablespoons of olive oil.
  • Adjust the heat to very low.
  • Cook, turning often, until the pork has a caramelized golden brown crust, 15 to 30 minutes.
  • Let the meat rest for 20 minutes and then slice into 1/4" thick slices.

4 ounces bacon, cut in 1-inch pieces
½ cup garlic cloves, peeled
7 pound pork shoulder (butt) roast, bone-in
1 tablespoon sea salt
½ cup extra-virgin olive oil
¼ tablespoons peperoncino, or more to taste or none
2 tablespoons tomato paste
1 small carrot, peeled and finely shredded or chopped
1 stalk celery , finely shredded or chopped
7 pounds onions, peeled and chopped into 1/4-inch pieces
4 cups Vegetable broth, or water

Steps:

  • Mince bacon and garlic together into a fine pestata. chop the carrot, celery and onion separately Rinse and dry the pork, then sprinkle half teaspoon salt lightly on all surfaces, patting it on. Pour the oil into the braising pan and set it over medium heat. Before it gets hot, lay the pork in and brown it-lightly-turning it after a minute or so on each side. While the meat is browning, scrape the pestata into the pan bottom; spread it out and let the bacon begin to render. Drop in peperoncino now, if you want some heat in the salsa; toast it in the pan bottom. After 3 minutes or so of browning the pork, drop the tomato paste into the fat; stir and caramelize a minute. Dump the shredded carrot and celery into the pan bottom; stir for a minute just to get them cooking. (Keep turning the meat so it browns evenly and slowly.) Now scrape the chopped onions into the pan around the meat. Sprinkle the remaining coarse salt over the onions; raise the heat a bit, stirring the onions up from the bottom and mixing them with the oil, pestata and tomato. Cook on medium high heat for about 5 minutes until the onions are starting to sweat. Cover and turn the heat to medium-low. The pork is now going to cook for about 3 hours. Leave it alone for the first 45 minutes, then uncover, turn the meat and stir the onions. They should be wilting and releasing liquid; if there is any sign of burning, lower the heat. Cover and cook for another 45 minutes, turn the meat and stir the onions. They should be quite reduced in volume, in a thick simmering sauce. Stir in 2 cups of hot broth, bringing the liquid higher around the pork. Cook covered for another 45 minutes, then stir. If the sauce level has dropped a lot and is beginning to stick, stir in another cup or 2 of broth. Taste and add more salt, if necessary. Cover and cook another 1/2 hour to 45". consistency of the onions-they should be melting into the sauce and the meat should be soft when pierced with a fork.

  • 1. For the pork, preheat oven to 375°F. Season the pork all over with 1 teaspoon salt and 1 teaspoon fennel powder. Heat a large Dutch oven over medium heat. Melt 2 tablespoons of the butter in the olive oil. When the butter is melted, sear the pork all over, about 6 minutes total, then remove to a plate.
  • 2. When the pork is out, melt the remaining 2 tablespoons butter in the Dutch oven, and add the garlic. Once the garlic is sizzling, add the onion and cook until wilted, about 4 minutes. Add the cabbage, bay leaves, and thyme, and season with the remaining salt and fennel powder. Cook until the cabbage just begins to wilt, about 5 minutes. Add the white wine, and bring to a simmer. Add 1 cup water. Set the pork on top of the cabbage, and cover the pot. Roast 20 minutes.
  • 3. After 20 minutes, uncover, stir in the 1/2 cup dried cherries, and continue to roast until a thermometer inserted into the center of the pork reads 145°F, about 25 to 30 minutes more. Let rest 10 minutes before slicing.
  • 4. Meanwhile, for the sauce, in a medium saucepan, combine 2 cups dried cherries, white wine, chicken stock, bay leaves, and thyme. Bring to a simmer, and cook until cherries are very soft, about 20 minutes. Let cool slightly, and remove bay leaves. Pour into a blender, and add the vinegar, butter, and salt. Carefully blend until smooth. Return to the saucepan, and reheat over low heat while you finish the pork.
