This is one of the fastest, easiest side dish recipes! Plus it's has a delicious bright flavor that pairs well with just about any main dish, it's incredibly versatile too.

2 Tbsp extra virgin olive oil
1 1/2 tsp minced garlic ((1 large clove))
1 1/4 cups low-sodium chicken broth ((or vegetable broth))
1 tsp lemon zest
2 Tbsp fresh lemon juice
Salt
2 Tbsp chopped fresh parsley, (or more to taste (optional)*)
1 cup (6 oz) couscous ((not pearl couscous))

Steps:

  • Heat olive oil in a medium saucepan over medium-low heat.
  • Add garlic and saute until fragrant (not toasting and browning or it will be bitter!), about 20 seconds.
  • Remove from heat, pour in chicken broth, lemon zest, lemon juice and season with salt to taste. Place over medium-high heat and bring to a boil.
  • Pour in couscous, stir then remove from heat and immediately cover with lid. Let rest 4 - 5 minutes off heat.
  • Add parsley and fluff with a fork. Finish with a little more olive oil or broth to moisten if desired and serve warm.

2 cups instant couscous

Steps:

  • Gather the ingredients.
  • In a medium sauce pot, bring the chicken broth, lemon juice, and lemon zest to a boil.
  • In a medium bowl, combine couscous and salt.
  • Pour boiling broth over couscous and allow to sit, covered for 10 minutes, or until the broth is absorbed.
  • Fluff couscous with a fork and serve immediately.

We love this light couscous salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. See the notes section below for our tips.

1 1/2 cups dried Israeli couscous, also called pearl couscous
Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill, or mint
1/4 cup chopped walnuts, toasted
1/4 cup raisins, we love golden raisins

Steps:

  • Bring a large saucepan of salted water to a boil. Add couscous and cook until tender, 8-10 minutes. Drain.
  • While the couscous cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.
  • Stir in the cucumber, tomato, herbs, walnuts and raisins. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

Steps:

Ready in under 20 minutes, this Mediterranean-style vegan couscous salad is a quick and simple alternative to rice or other side dishes.

1 cup (180 g) dried couscous ((see notes for ratio info))
1 cup (240 ml) kettle-hot water or vegan stock
1 red pepper, deseeded and diced
4 medium tomatoes, diced
½ medium cucumber, diced
1 cup (150 g) pitted black olives, sliced in half
Zest and juice of 1 lemon
2 tablespoons extra-virgin olive oil ((plus more to taste))
2 small cloves garlic, crushed or finely chopped ((optional))
Salt and pepper, to taste
Small handful fresh basil

Steps:

  • To a large bowl, add the diced red pepper, tomatoes, cucumber, and sliced olives.
  • In a small mixing bowl, combine the lemon juice, lemon zest, olive oil, crushed garlic, salt, and pepper. If you have a large lemon with a lot of zest, start with around half then add more zest to taste later on.
  • Heat a pan over low-medium heat and add the dried couscous to the dry pan. Toast for around 5 minutes or until golden brown, moving regularly to avoid burning.Note: I like to make couscous in a pan with a tight-fitting lid, as it lets me toast the couscous first. Toasting isn't necessary but adds extra flavour. If you don't want to do this, you can just add the dried couscous and liquid to a heat-proof bowl with a lid or cling film (plastic wrap) to create a tight fit.
  • Once the couscous is toasted, remove the pan from the heat and pour over the boiling water or vegan stock. Cover with a lid and leave to steam for around 5 minutes or until the couscous is soft (it may take slightly longer depending on the variety).
  • Once soft, fluff up the couscous lightly using a fork.
  • Roughly chop the fresh basil. Add this to the bowl of veg along with the couscous and lemon dressing, then mix everything together well. Adjust the seasoning to taste and serve.

1 medium onion, finely chopped
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
3/4 cup water
1 1/4 cups vegetable broth (10 fl oz) or 1 1/4 cups chicken broth
1 (10 ounce) box couscous (1 1/2 cups)
1/2 cup finely chopped fresh parsley
1/2 cup finely chopped fresh basil
1/4 cup finely chopped of fresh mint
1 -3 tablespoon fresh lemon juice (or to taste)
salt and pepper

Steps:

  • Cook onion in 1 tablespoon oil in a 2- to 3-quart heavy saucepan over moderate heat, stirring occasionally, until golden, about 3 minutes.
  • Add garlic and cook, stirring, 30 seconds.
  • Add water and broth and bring to a boil.
  • Stir in couscous, then cover and remove from heat. Let couscous stand, covered, 5 minutes, then fluff with a fork and stir in herbs, lemon juice, remaining tablespoon oil, and salt and pepper to taste. Serve and enjoy!
  • For vegetarian do not use Chicken Broth.

2l vegetable or chicken stock
3 tbsp harissa , homemade (see recipe below) or shop bought
3 carrots , chopped
3 large parsnips , chopped
2 red onions , cut into wedges through the root
2 large potatoes , chopped into chunks
½ butternut squash , chopped into chunks
4 leeks , sliced into rings
12 dried figs , halved
2 preserved lemons , homemade (see recipe below) or bought, rinsed, pulp scooped out and finely sliced
small bunch mint , chopped
200g couscous
400g can chickpea
25g butter
1 red onion , finely diced
3 spring onions , sliced
2 tbsp harissa
50ml olive oil
juice 1 lemon
bunch coriander , roughly chopped

Steps:

  • For the broth, bring the stock to a simmer in a large pan. Add the harissa and vegetables, bring back to the boil, then reduce heat and simmer for 15 mins. Add the figs and continue to cook for 5 mins more until the veg is tender.
  • Meanwhile, put the couscous and half the chickpeas into a bowl, add the butter, and season. Pour 350ml boiling water over the couscous, cover with cling film, leave aside for 10 mins, then fluff up with a fork.
  • In a separate bowl, combine the red onion, spring onions, harissa, olive oil, remaining chickpeas, lemon juice and coriander, then mix into the couscous. Pile onto a large deep serving dish, ladle over the braised vegetables and broth, and sprinkle with the preserved lemons and chopped mint.

1 1/4 cups chicken broth (or vegetable broth )
1 1/4 cups couscous (uncooked)
1 tablespoon vegetable oil
1 cup mushrooms (sliced)
1/2 cup onions (chopped)
1 cup red pepper (thinly sliced)
1/2 - 1 teaspoon ginger (grated)
2 garlic cloves
2 teaspoons soy sauce
2 teaspoons lemon juice

Steps:

  • In a 2 quart saucepan over high heat, heat the broth to boiling. Remove it from the heat and stir in the couscous. Cover and let it stand (off the heat) for 5 (or up to 10 minutes) to allow the couscous to absorb the broth. Fluff it with a fork
  • Meanwhile, heat the oil in a 10 inch skillet over medium heat. Once the oil is hot, cook the mushrooms, onions, peppers, ginger and garlic until the vegetables are tender-crisp. Stir the mixture often while it is cooking.
  • When the vegetables are cooked, stir in the soy sauce and lemon juice. Pour it over the cooked couscous, mix it all together and heat it through.

12 spears asparagus, grilled and cut into 1/4-inch pieces
1 zucchini, halved, grilled and cut into 1-inch pieces
1 yellow squash, halved, grilled and cut into 1-inch pieces
2 large red peppers, grilled, peeled and diced into bite-size pieces
1/2 cup kalamata olives, pitted and chopped
2 tablespoons chopped fresh basil leaves
Freshly ground black pepper
Lemon-Balsamic Vinaigrette, recipe follows
1 small shallot, minced
3 tablespoons fresh lemon juice
1 teaspoon lemon zest
3 tablespoons aged balsamic vinegar
1 tablespoon red wine vinegar
Salt and freshly ground black pepper
3/4 cup extra-virgin olive oil

Steps:

  • Heat large saute pan on grates of the grill over medium heat. Add couscous and toast until lightly golden brown.
  • Bring 6 cups of water to a boil over high heat, add 1 tablespoon salt and toasted couscous and cook until al dente. Drain well and place in a large bowl. Add grilled vegetables, olives, basil, and vinaigrette and toss until combined; season with salt and pepper. Let sit at room temperature for 30 minutes before serving or cover and refrigerate.
  • Whisk shallot, juice, zest, vinegars, and salt and pepper together in a small bowl. Slowly whisk in oil until emulsified.

2 teaspoons finely shredded lemon peel

Steps:

  • In a small saucepan, bring 1 1/4 cups reduced-sodium chicken broth to boiling. Remove from heat; stir in 1 cup whole wheat couscous. Cover and let stand 5 minutes. Meanwhile, in a medium skillet cook 3/4 cup chopped zucchini and 1/3 cup chopped red onion in 2 teaspoons hot olive oil over medium heat for 3 to 5 minutes or until tender. 1 red onion, finely sliced
1/2 cup finely sliced green bell pepper
1/4 cup currants
1/2 preserved lemon, rinsed,finely sliced
1/2 cup jarred marinated roasted red pepper
250 g couscous
1 teaspoon vegetable stock powder
450 ml boiling water
1 tablespoon butter
3 tablespoons chopped lemon thyme

Steps:

  • Heat the oil in a pan over medium heat.
  • Add the onion and cook until just softened, not coloured.
  • Add the green pepper and saute until it turns a bright green.
  • Add the currants, lemon, roasted red pepper, couscous and stockpowder and combine well.
  • Remove from heat.
  • Pour over the boiling water and stir again.
  • Cover and allow to stand for 3-5 minutes or until water is absorbed and couscous has swelled.
  • Add the butter and stir over a very low heat for a further 2-3 minutes.
  • Stir through the lemon thyme and serve at once.

  • Prepare aubergine and red pepper. Then fry both off in olive oil, garlic and ground coriander over medium heat. Add a light dash of water to help the pan ingredients steam through and allow to simmer for ten minutes on a lower, until softened.
  • Meanwhile, submerge the couscous and vegetable stock in boiling water. Stir until the stock is dissolved. Then cover and place to one side while it steams through. You can also use this time to prep all of your cold vegetables.
  • Chop the cucumber, tomatoes, red onion, parsley, mint and cranberry cashew nut mix. Place all of them into a bowl, along with the pomegranate. Mix together until well combined. Place to one side.
  • Once the pan ingredients and couscous are cooked, allow them to cool off. Drain the couscous in a colander and rinse with cold water. You can also drain the aubergine and red pepper to remove any juice. Place both to one side to allow to cool further.


VEGETARIAN COUSCOUS WITH LEMON, PEPPERS AND OLIVES
Heat the oil and cook the garlic and shallots until translucent. Add the chopped lemon, red pepper and olives and stir briefly. Transfer to a bowl and mix with the lemon juice. Season well with salt and pepper, mix in the chopped coriander and carefully stir in the couscous. Leave to stand for at least 1 hour before serving.
