THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

Steps:
- Put the oranges, lemons, and limes through a juicer. Pour the juice into a large pitcher. Add the sugar and stir to dissolve. Then stir in the Cointreau, Triple Sec, and tequila.
- To serve: Pour salt onto a small plate. Run a lime wedge around the top of each glass and dip the glass in the salt. Fill each glass halfway with ice and pour in the juice mixture. Garnish with a lime wedge and serve.
- Chef's note: Farm freshness is the key here. Look for the citrus that is mostly in season and adjust the recipe. Tangerines, Meyer lemons, and key limes all have amazing flavor if you can find them.

Steps:
- Dip the rims of 4 long-stemmed glasses in the lemon juice and put the glasses in the freezer. In a sealable bottle or pitcher combine the Tequila, the Triple Sec, the remaining lemon juice, and about 2 cups crushed ice, seal the bottle, and shake the Margarita vigorously until it is very cold and the ice is almost melted. Remove the glasses from the freezer, dip the rims in the salt, shaking off the excess, and fill the glasses with ice cubes. Divide the Margaritas among the glasses.
WHOLE LIME MARGARITA
Made with thin-skinned limes, these margaritas are bright and flavorful-nothing reminiscent of a bottled mix! The lime rind adds beautiful color and a burst of tart, but not overly sweet, taste. You'll never make a margarita the old way again.

- In a pot, bring 1 cup of boiling water to a boil. Add in the 1 cup of sugar. Stir to combine and then take it off the heat. Let it cool completely - place in fridge if you wanna cool it super fast!
- Using a handheld juicer, squeeze the lemons and limes. Mine yielded about 4-5 oz or so of fresh citrus juice.
- Follow the above steps to make the drink - except instead of normal salt, mix together the chili powder, sugar and salt on a plate. Coat the rim of your glass with water or lime and then dip it into the sugared chili mixture. Enjoy!
- Add in 1-2 fresh slices of DE-SEEDED jalapeno in the bottom of the glass. Using a spoon, gently crush/muddle them. Follow the steps above for making the base of the drink. If desired, garnish with another couple slices of jalapenos. Remember that jalapenos vary by heat so be careful :) Enjoy!
