This traditional Italian Easter Bread is flavored with orange and anise, brushed with icing and decorated with sprinkles.

8 cups all-purpose flour
1½ cups whole milk
½ cup granulated sugar
2 oranges (zested & juiced)
4½ teaspoons (2 envelopes) active dry yeast
1 cup margarine, melted
8 eggs
1 teaspoon salt
½ teaspoon anise oil
2 tablespoons unsalted butter (melted (for brushing))
2 cups powdered sugar
¼ cup whole milk
Sprinkles (if desired)

Steps:

  • Make the Dough: Place the flour in a large mixing bowl; set aside.
  • Heat the milk in a small saucepan over low heat, stirring occasionally, until it is warm to the touch, but not hot. If you have an instant-read thermometer, the temperature of the milk should be between 110 and 115 degrees F.
  • While the milk is warming, place the sugar in a small bowl and add the orange zest. With your fingertips, rub the zest into the sugar until it is completely incorporated and the sugar is moistened.
  • Once the milk reaches the correct temperature, stir in the sugar and zest mixture, stirring to dissolve the sugar. Add the yeast, stir, and let sit for 10 minutes.
  • Add the milk and yeast mixture to the flour and begin to mix it into a dough (it will be shaggy at this point).
  • Next, add the melted margarine and continue to mix. Then, add the orange juice to the dough and mix to combine.
  • In a small bowl, use a fork to lightly beat together the eggs, salt, and anise oil. Add to the dough and continue mixing.
  • At this point, you may need to add more flour to the dough, depending on how much juice you get out of your oranges. (I added quite a bit more to get the dough to come together.) Once you have a sticky ball of dough formed, turn it out onto a floured surface and knead for about 5 minutes, adding a small amount of flour at a time as needed, or until the dough is soft and elastic. It will remain slightly tacky.
  • Place the dough in an oiled bowl, turning to coat, and cover the bowl loosely with plastic wrap. Place in a draft-free area and allow to rise until doubled in volume, about 1 hour. Meanwhile, line two baking sheets with parchment paper and set aside.
  • Shape the Bread: Turn the dough out onto a clean surface and divide in two. Divide each half into two (you will have four pieces of dough). We will work with one pair, and then the other. Roll two pieces of dough into 24-inch long ropes. Loosely twist the ropes together. Transfer the braided rope to one of the prepared baking sheets and bring the ends together to form a ring, twisting and pinching the ends together to seal. Repeat with the remaining two pieces of dough so that you have two circular, braided loaves. Brush the tops of each with the melted butter, loosely cover with plastic wrap, and let rise until nearly doubled in size, about 45 minutes to 1 hour.
  • While the dough is rising, preheat the oven to 350 degrees F. Bake one at a time (unless you have the oven capacity to correctly bake both at the same time) until golden brown on top, 30 to 40 minutes. Remove from the oven and transfer to a cooling rack to cool completely.
  • Glaze the Bread: Once the breads are cooled to room temperature, you can glaze them (if you desire). In a small bowl, whisk together the powdered sugar and the milk until smooth. Use a pastry brush to brush the glaze onto the top and sides of the bread, and decorate with sprinkles. The bread is best served at room temperature. If you have leftovers, wrap well in plastic wrap and store at room temperature for up to 3 days.

1 (.25 ounce) package active dry yeast
1 cup warm water (110 degrees F/45 degrees C)
¼ cup white sugar
2 eggs
½ cup nonfat plain yogurt
1 teaspoon vanilla extract
1 tablespoon grated lemon zest
¼ teaspoon salt
4 cups unbleached all-purpose flour
¼ cup dried currants
¼ cup raisins
1 tablespoon confectioners' sugar
1 tablespoon butter, melted

Steps:

  • In a medium bowl, combine yeast, water and sugar. Cover and let stand 10 minutes, or until foamy. Add eggs, yogurt, vanilla, lemon zest, and salt. Mix well. Stir in flour 1/2 cup at a time until dough forms into a manageable ball. Turn out onto a lightly floured surface and knead for 5 to 10 minutes, adding flour as necessary, until dough is soft and pliable, but not sticky. (May need up to 5 cups flour.) Place dough in a large, lightly pan-sprayed bowl, cover, and let rise in a warm place until doubled, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C) and spray a round 8-inch cake pan with non-stick spray. In a small bowl, toss dried fruit with confectioners' sugar. Punch down dough in bowl, transfer to floured surface, and knead in the fruit.
  • Form dough into a ball, place in prepared cake pan, cover loosely with dish towel, and let rise 30 minutes. (Loaf will rise above the pan sides.) Brush with melted butter, if desired. Bake for 45 minutes, or until loaf is golden brown and a toothpick inserted in the center comes out clean. Makes 10 wedges.

This citrus-infused sweet bread, topped with toasted almonds, is based on the flavours of the Italian Colomba di Pasqua (an Easter celebration bread).

400g/14oz strong white flour
7g salt
40g/1½oz caster sugar
10g instant yeast
120ml/4fl oz milk
4 free-range eggs, lightly whisked
100g/3½oz softened unsalted butter, cut into small pieces, plus extra for greasing
2 lemons, finely grated zest only
1 orange, finely grated zest only
100g/3½oz toasted flaked almonds
100g/3½oz mixed candied peel
100g/3½oz dried cranberries
½ lemon, juice only
2 free-range egg whites
25g/1oz sugar
25g/1oz ground almonds
50g/1¾oz flaked almonds
caster sugar, to sprinkle

Steps:

  • To make the dough, combine the flour, salt, sugar, yeast, milk, eggs and butter in a food mixer fitted with a dough hook. Mix on a slow speed for three minutes and then set on a medium speed for five minutes, to work the mixture together into a soft dough. If you haven't got a mixer, mix the dough ingredients together by hand and knead on a lightly floured surface until you get a soft, elastic dough.
  • Tip the dough into a clean bowl, cover and leave to rise for one hour.
  • For the citrus mixture, combine the citrus zest with the toasted almonds, mixed peel, dried cranberries and lemon juice.
  • Add the citrus mixture to the dough and use your hands to incorporate it into the dough.
  • Grease a 23cm/9in round deep spring-form cake tin.
  • Shape the dough into a ball and place it into the prepared tin.
  • Cover, or place inside a large plastic bag, and leave to rise for three hours, or until the dough has reached the top of the sides of the tin.
  • Preheat the oven to 200C/400F/Gas 6 (in a fan oven) and bake the bread on the middle shelf for 20 minutes.
  • For the topping, in a bowl stir together the egg whites, sugar and ground almonds to make a paste.
  • After 20 minutes of baking, remove the bread from the oven and spread the paste over the top. Sprinkle with flaked almonds and a little more sugar.
  • Reduce the oven temperature to 180C/350F/Gas 4 and return to the oven for a further 20 minutes. If it is going to brown towards the end of baking then cover it loosely with foil.
  • Remove from the oven and leave to cool in the tin for 10 minutes; then release the sides of the tin. Remove from the tin and leave to cool completely on a wire rack.

4 eggs (1 egg is for the egg wash)
1/2 cup sugar
1 tbsp dry yeast
1/2 cup milk (115 F temperature)
6 tbsp melted butter
zest from 1 orange
zest from 1 lemon
1 tsp lemon juice
1 tsp vanilla extract
1 tsp salt
3 1/2 cups flour (may need more or slightly less for a soft dough)
2/3 cup golden raisins
1/3 cup chopped candied orange peel
2 tsp orange flavored liqueur

Steps:

  • Pour milk in a small bowl and sprinkle the yeast over it. Stir and cover. Let it sit for 7-8 minutes.
  • Pour hot water over the raisins. Let them soak for 15 minutes. Train.
  • In the bowl of a stand mixer, whisk together 3 eggs, sugar, vanilla, lemon juice, orange liqueur, lemon zest and orange zest. Add the milk yeast mixture.
  • Switch to the hook attachment and add the flour and salt. Mix for 4- 5 minutes, then add the melted butter and mix until combined. Add the raisins and candied orange peel. Mix to combine.
  • Spray a large bowl with cooking spray. Set aside.
  • Transfer the dough to a floured surface and shape into a ball. Place in the bowl. Cover with plastic wrap. Let it rise in a warm place for 1 - 1 1/2 hours, until it doubles its size.
  • Spray a 7-8 onch panettone mold with cooking spray.
  • After the dough has risen, dump it onto a floured surface and shape into a ball. Transfer to the mold. Cut a cross on top and brush with some melted butter or just spray with the cooking spray. Cover with plastic wrap and let it rise for one more hour, until it doubles (almost triples) its size.
  • Preheat oven to 350 F. Place the panettone mold on a baking sheet. Brush with egg wash (egg + 1 tbsp water) and bake for 40 -45 minutes, until toothpick inserted comes out clean and the top is golden brown. In the process of baking, if the panettone starts to brown too quickly, you can cover it with foil, to prevent burning.
  • Transfer to a wire rack and let it cool completely. Store tightly wrapped in plastic wrap.

1 cup milk
1/3 cup all-purpose flour

1/2 cup water (lukewarm)

For the Dough
10 large egg yolks (room-temperature)
2 large eggs (room-temperature)
1 teaspoon salt
1 cup sugar
8 ounces butter (melted)
2 teaspoons vanilla extract
1 tablespoon lemon zest (grated)
6 cups all-purpose flour
Optional: 1 cup raisins (light or dark)
1 large egg (room-temperature)
2 tablespoons milk (or water, room-temperature)

Steps:

  • Gather the ingredients.
  • Scald the milk and cool it to 110 F.
  • Place 1/3 cup flour in a medium bowl and pour the cooled scalded milk over, beating until smooth. Set aside.
  • In a measuring cup or small bowl, dissolve 2 teaspoons sugar in lukewarm water and stir in the yeast.
  • Transfer the yeast mixture to the milk-flour paste, mixing well.
  • Cover with plastic wrap and let rise until light and bubbly.

  • Grease 3 babka cylinders or food-grade coffee tins and fill each pan 1/3 full.
  • Cover with greased plastic wrap and let rise until tripled.
  • Brush tops with 1 large egg beaten with 2 tablespoons of milk or water.
  • Heat oven to 375 F.
  • Bake babkas 10 minutes.
  • Then lower temperature to 325 F and bake 30 minutes.
  • Then lower temperature to 275 F and bake 15 to 20 minutes longer. Cover tops with aluminum foil, if they are browning too quickly.
  • Remove from the oven and let stand in the pan for 10 minutes.
  • Turn loaves out of the pan, running a knife around them, if necessary, and cool completely on a wire rack.
  • If desired, the cooled loaves can be iced with a simple confectioners' sugar glaze , letting it drip down the sides for a decorative effect.
  • Serve and enjoy!

1 cup/120 grams currants (Zante)
1/4 cup/40 grams almonds (chopped)
1/2 cup /125 grams milk
Sponge:
1 2/5 cup/170 grams flour (low-protein*)
1/4 teaspoon instant yeast
2/3 cup/162 grams milk (cold)
Dough:
1 2/5 cups/170 grams flour (low-protein*)
2 to 3 tbsp./35 grams of sugar
1 small/33 grams egg
1 teaspoon instant yeast*
1/2 teaspoon/4 grams salt
3 1/2 tablespoons/50 grams sweet butter
1 teaspoon zest (lemon or orange)
Garnish: your choice of milk, egg yolk, apricot jam or powdered sugar glaze, almond slivers or coarse sugar

Steps:

  • Pick over the currants (small raisins) and let them soak in water.
  • Soak the almonds in a little milk. Drain both well before using (see below).
  • Mix the ingredients for the sponge together until it forms a ball. Knead for several minutes with a machine or by hand, being careful not to let the sponge temperature rise above about 72 F.
  • Let the sponge work for 1 to 2 hours and room temperature.
  • Place the sponge, flour, sugar, egg, yeast, and salt in a bowl and mix until combined.
  • Knead for several minutes. Add the butter and lemon zest and knead for several more minutes.
  • Add the drained currants and almonds and knead them in. You may have to add a little more flour to make the dough less sticky. The amount depends on how wet and plump the raisins are. Turn the dough out onto a floured board to finish and knead until satiny and only slightly sticky.
  • Form the dough into a loose mound and let rest on the table for 30 minutes.
  • Turn oven on to 390 F with a baking stone, if you have one. If you do not have one, line a baking sheet with parchment paper.
  • Form the dough into a boule (round loaf), pulling the surface down over the dough towards the bottom and pinching closed.
  • Cover with loose plastic wrap and let the loaf rise 45 minutes at room temperature on a floured board or the parchment papered baking sheet.
  • A few minutes before baking you can glaze and score your loaf. Brush milk or beaten egg yolk over the surface and sprinkle with sugar or almonds if you wish, then score a cross in the loaf with a razor blade.
  • Bake with steam for 30 to 45 minutes, or until internal temperature reaches 185 F. If the loaf is too dark on top, tent with foil for the last part and reduce the temperature to 350 F.
  • If you have not used a glaze before baking, brush hot loaf with apricot jam and sprinkle with almond slivers (traditional) or allow to cool and glaze with a powdered sugar and milk mixture.

Traditional Paska Easter Bread Recipe a.k.a. Kulich has been made by our family for generations.

2 cups + 2 Tbsp warm milk (I used whole milk)
6 large eggs (room temp)
1 Tbsp active dry yeast
2 cups sugar
2 sticks unsalted butter ((1/2 lb or 226 gr), melted (if using salted butter, omit salt))
1/2 tsp salt
1/2 cup sour cream
1 tsp vanilla extract
9 cups all-purpose Canadian flour (divided)
1 to 1 1/2 cups raisins (white or brown)
2 cups powdered Sugar
3 Tbsp Lemon Juice
3 Large Panettone Paper Molds; we purchased them on Amazon

Steps:

  • In a large Mixing bowl, whisk together 2 cups + 2 Tbsp warm milk, 6 eggs, 1 Tbsp yeast, 2 cups sugar, 2 sticks melted butter (just warm, not hot!), 1/2 tsp salt, 1/2 cup sour cream and 1 tsp vanilla. Whisk in 4 cups flour. Your batter will be thick like sour cream. Cover bowl with plastic wrap and let it rise in a warm place or a warm oven (about 100˚F) for 2 hours.
  • Add 5 more cups of flour; one cup at a time or until the dough no longer sticks to your hands (it will still feel sticky but wont' stick to your fingers). I find it's easiest to fold flour in with a silicone spatula. Dough should be soft. Stir in 1 to 1 1/2 cups raisins. Cover and let dough rise another 2 hours in a warm oven (100˚F).
  • Divide dough evenly into the three paper baking molds; try not to mix it or stomp it down too much. Let dough rise uncovered in a warm 100˚F oven for an additional 2 hours or until the molds are almost full. Remove from the oven and preheat oven to 350˚F.
  • Bake at 350˚F for 30-35 minutes in the middle of the oven until the top is golden brown. Let cool to room temp or just warm and then tear off the wrapper.
  • Once the Breads are at room temperature and wrappers are off, get your frosting ready. In a medium bowl, whisk together 2 cups powdered sugar with 3 Tbsp lemon juice. Add a little water if it's too thick or a little more powdered sugar if it's too runny. Pour the glaze over each cooled Easter bread. Traditionally, these are topped with colorful sprinkles before the glaze sets.

  • After the 10 minutes, whisk in the remaining sugar, milk, eggs, anise seeds, anise extract, lemon extract, lemon zest, salt, oil, and melted butter. Combine well by hand, with a hand mixer, or in a stand mixer.
  • Once everything is well combined, mix in the flour, 1 cup at a time, to form a wet, sticky dough.
  • Turn onto a lightly floured surface. Knead for about 5 minutes, adding flour as needed to keep the dough from sticking to the surface, to form a smooth and elastic dough.
  • Place dough in a lightly oiled bowl. Lightly oil the surface of the dough, and cover the bowl with a damp towel. Place in the oven with the light on (but no heat). The dough needs to rise until doubled in size, which will take 6 to 12 hours. This is a slow-rising dough that can be left overnight without fear of it expanding so much that it runs over the bowl.
  • When doubled, punch dough down . Turn out onto a lightly floured surface and divide into 4 pieces.
  • Take 1 piece and cut it into 3 strips. Braid and form into a circle. Repeat with remaining dough.
  • Place wreath loaves on a silicone mat or parchment-lined baking sheets. Cover very loosely with lightly greased plastic wrap, and let rise for 2 hours.
  • Heat oven to 350 F. Once loaves have risen, bake for 25 minutes or until golden brown and an instant-read thermometer registers 190 F to 200 F. Remove and cool on wire racks.
  • Once cooled completely, the loaves can be served immediately or stored in an airtight container or zip-top bag for up to three days, or frozen for longer storage.

  • In a large bowl whisk together flour, baking powder, salt and 1 1/4 cups sugar, add the softened butter and with a pastry blender blend until mixture resembles coarse crumbs. Stir in the lemon zest.
  • In a small bowl add eggs and beat lightly with a fork add milk and mix until combined, then pour this mixture into the flour mixture and stir just until flour is moistened.

1 cup warm water (105 to115 degrees F/40 to 45 degrees C)
2 (.25 ounce) packages active dry yeast
4 ½ cups all-purpose flour, divided

¼ cup golden raisins
½ cup slivered almonds
1 tablespoon unsalted butter, melted, or more as needed

Steps:

  • Combine warm water and yeast in a medium bowl. Let stand for 5 minutes.

1 & 3/4 cups flour (spooned and leveled)
1 cup sugar
1 & 1/2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons lemon zest (from about 2 lemons)
1/4 cup butter (melted (1/2 stick))
2 large eggs
1/4 cup oil (I like light flavored olive oil)
1 cup sour cream
1/3 cup lemon juice (you will need at least 2 large lemons)
2 cups powdered sugar (sifted if clumpy)
3-4 tablespoons lemon juice (you will need at least 1 large lemon)

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 9x5 in loaf pan with parchment paper for easy removal. Or you could spray the pan with nonstick spray. (Or line with foil; be sure to grease.)
  • In a medium bowl, whisk together the dry ingredients: 1 and 3/4 cup flour, 1 cup sugar, 1 and 1/2 teaspoons baking powder, and 1/2 teaspoon salt.
  • Use a microplane grater to zest 2 large lemons into the dry ingredients. You want at least 2 tablespoons. Whisk it all together and set aside.
  • In a small bowl, microwave 1/4 cup butter until melted. Set aside to cool a bit.
  • In another large bowl* or stand mixer, add the wet ingredients: beat 2 large eggs until combined and smooth. Add 1/4 cup oil, 1 cup sour cream, and 1/3 cup lemon juice.
  • Add in the melted butter. Stir it all together.
  • Add the dry ingredients (and then wipe out the dry bowl and put it back in your cupboard.) Stir until combined. Make sure that everything is incorporated, but do not over beat. A few lumps are ok. See photos above to see the batter.
  • Pour the batter into the prepared pan and smooth out the top.
  • Bake at 350 for about 45-52 minutes. Every oven is different, so start checking early. The bread is done when there are brown spots on top and a toothpick, when inserted in the center, comes out with no wet batter on it.
  • Let the pan cool on a wire rack for 20 minutes before lifting the bread from the pan. Let the bread continue cooling on the wire rack while you make the glaze.
  • To make the glaze, add 2 cups of powdered sugar to a medium bowl. If it looks rather clumpy, sift it through a strainer so that you don't have lumps in your glaze.
  • Add 3 tablespoons lemon juice to the bowl and use a whisk to combine. Add more lemon juice if necessary to get a glaze consistency that easily drips off of a spoon.
  • Glaze the bread in increments. Add about 1/3 of the glaze to the cooled bread and spread to the edges, letting it drip down the sides. Allow the glaze to set for 10-20 minutes until it has formed a crust. (Stick it in the fridge or freezer to speed this up.)
  • Add another 1/3 of the glaze and let set as before.
  • Add the rest of the glaze and let set completely. You don't have to add the glaze in stages like this, but it's the best way to get a really thick glaze on top of the bread.
  • Slice the bread and serve!
  • Store the bread covered on the counter for 2-3 days. After that, store in the fridge.
  • This bread can be frozen and served later! Let thaw on the counter in the container that you froze it in (sealed).

2 teaspoons baking powder
2 teaspoons salt
½ cup butter, room temperature

6 tablespoons lemon juice

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour 2 loaf pans.
  • Combine the flour, baking powder, and salt and set aside.
  • Beat the butter and 2 1/2 cups sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the almond extract with the last egg.
  • Pour in the flour mixture alternately with the milk, mixing until just incorporated. Fold in the lemon zest and chopped walnuts, mixing just enough to evenly combine. Pour the batter into the prepared pans.
  • Bake in the preheated oven until the loaves are very lightly browned and a toothpick inserted into the middle comes out clean, 60 to 70 minutes.
  • Mix the lemon juice with the 1/2 cup sugar in a bowl until the sugar has dissolved. Pour the lemon glaze over the hot cakes; allow to stand for 10 minutes before removing cakes from the pans. Cool before serving.

  • For step 1 (Making starter):

Cover bowl with plastic wrap. Let starter rise until puffy, about 45 minutes. (Initially, the starter, or biga is firm and compact, but it softens and becomes puffy and spongy after rising.)
  • For step 2:
  • Attach dough hook to mixer. Add all ingredients in step 2 to starter. Beat until blended, scraping down sides of bowl often, about 5 minutes (dough will be soft and thick). Scrape dough off hook; remove hook. Cover bowl with plastic. Let dough rise at room temperature until puffy and bubbly on top, about 1 hour. The dough will look thick, shiny, and slightly puffed.
  • For step 3:
  • Reattach clean dough hook. Add first 5 ingredients in step 3 to dough; beat until blended. Add flour. Beat at low speed until smooth, scraping down bowl and hook often, about 5 minutes (dough will be firm and compact). Scrape dough off hook; remove hook. Cover bowl with plastic; let dough rise at room temperature until lighter in texture and slightly puffed, about 3 1/2 hours. The dough will double in volume and become lighter in texture but less glossy.
  • For step 4:
  • Reattach clean dough hook. Mix water and yeast in small cup. Let stand until yeast dissolves, about 10 minutes; add to dough. Add 1 1/3 cups flour, half of butter, sugar, and 2 yolks; beat until dough is smooth, about 3 minutes. Scrape down dough hook and sides of bowl. Add remaining 2 yolks, milk, vanilla extract, and salt. Beat at low speed until blended, about 3 minutes. Scrape down hook. Add remaining 2/3 cup flour, remaining butter, and orange peel. Beat dough until well blended, about 5 minutes. Scrape dough into very large (at least 4-quart) buttered bowl. Cover with plastic. Let dough rise at room temperature until doubled and indentation remains when 2 fingers are pressed about 1/4 inch into dough, 8 to 10 hours.
  • For step 5:
  • Sprinkle 1/2 cup flour onto work surface. Scrape dough out onto floured work surface (dough will be soft and sticky). Gently toss dough in flour until easy to handle. Brush away excess flour. Divide dough into 3 equal pieces. Divide 1 piece in half; shape each half into 10-inch-long log. Arrange 1 log crosswise in each paper baking mold, curving ends to fit. Roll each remaining dough piece into 11-inch-long log, slightly tapered at ends. Place 1 log across dough in each mold. (If using 2 springform pans, divide dough in half; place half in each prepared pan). Cover molds (or pans) with plastic. Let stand at room temperature until dough rises to top of each mold and indentation remains when 2 fingers are pressed about 1/4 inch into dough, about 3 1/4 hours.
  • For step 6 (Glaze and baking):
  • Position rack in bottom third of oven and preheat to 375°F. Finely grind sugar and whole almonds in processor. Add egg whites and almond extract; blend 10 seconds. Peel plastic off dough in molds. Spoon half of almond glaze over top of each. Sprinkle each with sliced almonds. Sift powdered sugar over. Slide rimless baking sheet under molds; slide molds directly onto oven rack.
  • Bake breads until brown on top and slender wooden skewer inserted into center comes out clean, about 45 minutes. Cool breads completely on rack. (Can be made ahead. Wrap; let stand at room temperature up to 2 days or freeze up to 1 week.)
  • Candied orange peel can be found in some specialty foods stores. Dove-shaped paper baking molds can be found at Sur La Table (800-243-0852) and some other cookware stores, or you can order the molds, along with fine-quality candied orange peel, from Emporio Rulli (888-887-8554).
