A German biscuit similar to gingerbread, lebkuchen is easy to make and a great Christmas treat

Steps:
- Tip the dry ingredients into a large bowl. Heat the honey and butter in a pan over a low heat until the butter melts, then pour into the flour mixture along with the lemon zest. Mix well until the dough is combined and fairly solid. Cover and leave to cool.
- Heat oven to 180C/fan160C/gas 4. Using your hands, roll dough into about 30 balls, each 3cm wide, then flatten each one slightly into a disk. Divide the biscuits between two baking trays lined with baking parchment, leaving room for them to expand. Bake for 15 mins, then cool on a wire rack.
- To ice the biscuits, mix together the icing sugar, egg white and 1-2 tbsp water to form a smooth, runny icing. Dip the top of each biscuit in the icing and spread with the back of a knife. Leave to dry out in a warm room.

- Stir together the spices, salt flour, and baking powder.
- Stir in the almonds and lemon rind.
- In a separate bowl beat the eggs and sugar until a ribbon is formed when the beater is removed.
- Stir in the honey and milk.
- Gradually stir in the flour mixture; beat until smooth.
- Spread the batter in an 11 X 17-inch jelly roll pan that is well greased and floured.
- Bake at 400 degrees F for 12 to 15 minutes, until the cake is done.
- While the cake is still warm, turn it out onto a wire rack.
- To make the almond glaze, mix the confectioners' sugar, almond extract, rum, and 1 to 2 T of water.
- Beat until glaze is smooth and of the right consistency.
- Add more water to thin if neccessary.
- Spread the warm cake with the almond glaze.
- Cut cake into 1 X 2 1/2-inch bars while still warm.
- Spice bars keep 6 to 8 weeks in a sealed container if not glazed.
EASY GERMAN LEBKUCHEN RECIPE
These soft Lebkuchen Cookies are a classic German favorite!

- Combine the ground spices in a small bowl or jar.
- Cover and set aside.
- This recipe makes a little more spice mix than you need for these cookies. Feel free to add more spice mix to the cookies if you'd like a stronger flavor.
- Wash oranges and lemons.
- Zest the citrus using a microplane.
- Heat water and sugar in a small saucepan over medium high heat.
- Add zest and stir.
- Bring to a low boil and simmer for 10 minutes.
- Strain out the liquid and let the candied zest cool in a small bowl.
- Cover with plastic wrap and store in the fridge until you're ready to use it.
- This recipe will likely make a little more candied zest than you need for these cookies. Feel free to add more if you'd like a stronger flavor.
- Use a food processor to grind the almonds and hazelnuts until they're like crumbs. (But be careful that you don't grind so long that they turn into nut butter! It's ok if you have some larger nut chunks.They don't all have to be the same size.) Set ground nuts aside.
- Add the brown sugar, Lebkuchen Spice Mix, baking powder, and salt to a mixing bowl (or the food processor or the bowl of a stand mixer). Mix with a whisk or spoon until combined
- Add the candied zest and mix again.
- Add the nuts and mix.
- Add the spice mix and stir.
- And then add the honey and mix again.
- Whisk the eggs in a small bowl, then add the eggs to the dough and mix again.
- The dough should be pretty thick at this point.
- At this stage you can cover the dough with plastic wrap and let it chill in the fridge for 12 to 24 hours. Or you bake your cookies right away.
- When you're ready to bake your cookies, pre-head your oven to 325F/160C.
- Place the Oblaten wafers on a lined baking tray (if using).
- If using the 70mm size, spoon 2 tablespoons dough onto the middle of each wafer. If your dough immediately flattens out and spills out over the wafer, add more ground nuts (try grinding another 1/4 to 1/2 cup).
- Ideally you want the baked cookies to cover the entire wafer while keeping a domed shape. You can use lightly damp fingers to gently spread the dough towards the edge of the Oblaten. I just barely spread the dough towards the edges.
- For the cookies you want to eat plain (no glaze), you can press almonds into the dough at this stage. I totally forgot to do that so my plain cookies are very plain (still tasty, though)!
- Bake the cookies for 20-22 minutes or until the edges are browned. Let the cookies cool on a wire rack.
- Add powdered sugar, water, vanilla extract, and rum extract (optional) to a small bowl and mix until there are no lumps. Adjust powdered sugar and water as needed. The sugar glaze in the recipe below should be enough to glaze half of the cookies, so double it if you want to use it for all of the cookies.
- Chop the dark chocolate and add a bit of oil (vegetable, coconut, etc). Slowly melt the chocolate in the microwave on 15-20 second intervals or in a double boiler on stove (or place a glass bowl over a saucepan that has simmering water it in). Stir frequently. When 3/4 of the chocolate has melted, simply keep stirring to melt the rest. If you want all of your cookies to have a chocolate glaze, double the recipe.
- Use a pastry brush to apply the sugar or chocolate glaze to the top of the cookies. You can also dip the cookies in the glaze (I found it easiest to use the pastry brush).
- Add almonds (whole blanched, slivered or sliced) to decorate the top of the cookies before glaze sets.
- Let the glaze dry on the cookies for 12-24 hours. Store in an airtight container with wax paper between layers of cookies. They'll keep for at least a couple weeks, longer in the freezer.
LEBKUCHEN COOKIES
Make a batch of Lebkuchen and you are sure to fall in love with these traditional German cookies! Heavenly spiced soft cookies that are cross between a biscuit and a cake and only get better with age.

- Measure the honey and sugar in a mixing bowl and heat in the microwave for 30 second bursts. Stir together vigorously with a wooden spoon until sugar dissolves.
- Add the cubed butter and zest and stir until the butter melts.
- Stir in the baking powder, soda, salt and spices and egg.
- Add the flour and ground almonds. Mix until you have a soft and slightly sticky dough, adding a little lemon juice as needed.
- Mist a spatula or your hands with oil and gather the dough into a ball. Cover the mixing bowl with a towel and leave to rest for at least an hour or even overnight at room temperature.
- Preheat the oven to 350°F (180°C). Prepare the glaze: mix together all the ingredients in a bowl until you have a thin and runny glaze.
- Divide the dough into thirds. Roll the dough on a silicone baking mat to a thickness of 2cm (just under an inch).
- Cut shapes using round, star or heart cookie cutters. Space the cookies out on the silicone mat and bake for 12 minutes. Repeat with remaining dough, gathering up any scraps and rolling out again and bake in batches.
- Transfer the cookies carefully to a wire rack and brush with the glaze while they are still a little warm.
- Leave the glaze to dry and add a second layer if desired. Add sanding sugar, sprinkles or slivered almonds to decorate if you like. Check the recipe notes if you want to cover the lebkuchen in chocolate.
- Put the cookies in a cake tin, separated by parchment paper so that they don't stick. Place a few strips of orange peel in the tin. Lebkuchen become more delicious the longer you keep them making them the ideal festive gift!

- Preheat your oven to 350˚F.
- In a large mixing bowl, combine flour and milk. Add the cacao powder, honey, melted butter, a pinch of salt (if using), Lebkuchen spice mixture, and baking powder. Mix well. If you like your Lebkuchen sweeter, you can add up to ½ cup of sugar to it.
- Line a baking dish with parchment paper or grease and lightly flour.
- Transfer the dough to the baking dish. Using a silicone spatula, spread evenly.
- Bake the Lebkuchen for about 35 minutes or until a wooden toothpick comes out clean.
- While still warm, brush the top of the Lebkuchen with some milk. Let cool completely on a wire rack. Cut in squares. Optional: dust with powdered sugar or your favorite toppings.

- Make nut flour:
- Finely grind nuts with remaining nut flour ingredients in a food processor.
- Make dough:
- Beat together brown sugar, honey, and butter in a large bowl with an electric mixer at medium-high speed until creamy. Add eggs 1 at a time, beating well after each addition. Mix in nut flour at low speed until just blended, then stir in candied fruit.
- Preheat oven to 350°F.
- Arrange rice-paper rounds, shiny sides down, on 2 large baking sheets. Roll level 2-tablespoon amounts of dough into balls with dampened hands, then put 1 on each paper round and flatten slightly (dough will spread to cover paper during baking).
- Bake cookies in upper and lower thirds of oven, switching position of sheets halfway through baking, until surface no longer appears wet, about 15 minutes total. Transfer to racks to cool.
- Ice cookies:
- Sift confectioners sugar into a bowl, then stir in water until smooth. Evenly brush tops of cooled cookies with icing. Let icing set, about 1 hour.

- Pre-heat oven to 400F. In large mixer bowl combine sugar, butter, egg, salt, spices, and vanilla. Beat at medium speed, scraping bowl often, until mixture is light and fluffy, 2 to 3 minutes. Add flour. Beat at low speed, scraping bowl often, until well mixed, 2 to 3 minutes. If dough is too soft, cover and refrigerate until firm enough to form cookies, 30 to 45 minutes. Place dough in cookie press. Form desired shapes 1 inch apart on cookie sheets (do not grease the baking sheets or use a non-stick pan or baking mats...your cookies will not stick to the pan as they come out of the cookie press). - In small bowl stir together powdered sugar, milk, and vanilla until smooth. Drizzle or pipe over warm cookies. You can also make a thinner glaze by adding a tiny bit more milk (start with 1 teaspoon more) and just dip the cookies in the glaze (pictured). Allow glaze to harden before stacking.
