CLASSIC VEAL PARMESAN

This classic Veal Parmesan recipe combines crispy breaded veal with tomato sauce, Parmesan cheese, and melty mozzarella cheese for an incredible Italian meal.

1 lb veal cutlets or scallopini (about 4 cutlets)
Kosher salt and pepper
1/2 cup flour
2 eggs
3/4 cup bread crumbs
1 cup shredded Parmesan cheese, divided
1 teaspoon parsley flakes
1 teaspoon garlic powder
1 teaspoon dried basil
2 Tablespoons olive oil
1 cup jarred pasta sauce
4 thick slices fresh mozzarella cheese

Steps:

  • If you're using cutlets, place them between two slices of saran wrap and pound them until they're about an 1/8-1/4 inch thick. If you're using scallopini, proceed to step 2.
  • Season the veal with Kosher salt and pepper on both side.
  • Set out 3 bowls to bread the veal (large, shallow bowls work best for this). Add the flour to one and the eggs to another. Give the eggs a quick whisk.
  • In the third bowl, whisk together the breadcrumbs, 1/4 cup Parmesan cheese, parsley flakes, garlic powder, and basil.
  • Pick up one veal scallopini and dip it in the flour, coating it on both sides. Dip in the egg, then press into the breadcrumbs, making sure they're evenly distributed. Transfer to a plate and repeat with remaining veal.
  • Preheat the oven to 375 degrees.
  • Heat the olive oil in a large skillet over medium heat. Add the cutlets and cook for 2-3 minutes per side, or until browned and crispy. Transfer to a greased baking dish. Repeat with any remaining cutlets.
  • Top each cutlet with the remaining Parmesan. Spoon the spaghetti sauce over top, followed by a slice of mozzarella cheese. Bake for 15 minutes.
  • Serve the Veal Parmesan with a side of pasta or your favorite vegetable.

3 boneless, skinless chicken breasts
1 cup seasoned Italian breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground paprika
1/3 cup mayonnaise

Steps:

  • Preheat the oven to 400°F. In a large shallow bowl or on a large plate, combine the breadcrumbs, Parmesan cheese, garlic powder, salt, pepper, and paprika. Set aside.
  • Use a thin, sharp knife to slice each chicken breast in half lengthwise to create two thin fillets. Place the chicken breasts between two pieces of plastic wrap on a cutting board, and gently pound to about 3/8-inch with a meat tenderizer.
  • Brush both sides of the chicken fillets with mayonnaise to evenly coat. Dredge each of the chicken fillets in the breadcrumb mixture and place on a baking sheet sprayed with cooking spray. Bake for 17-20 minutes or until cooked through and the outsides are golden and crispy.

½ cup all purpose flour
2 eggs
⅔ cup seasoned Italian bread crumbs (I use Progresso)
⅓ cup freshly grated Parmigiano-Reggiano cheese
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
3-4 boneless skinless chicken breasts (about 1½ pounds), pounded ¼"-thick (see note)
Salt and freshly ground black pepper
¼ cup olive oil
Lemon wedges, for serving

Steps:

  • Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; beat the eggs in the second bowl; and mix the bread crumbs, Parmesan cheese, salt, pepper, and chopped fresh herbs in the third bowl.
  • Season chicken breasts with salt and pepper. Dredge the first chicken breast in the flour and shake off the excess until just a light coating remains. Next, dip the chicken in the egg mixture and turn to coat evenly, letting any excess egg drip off. Finally, dredge the chicken in the bread crumb mixture, turning a few times to coat well. Set breaded chicken on a plate and repeat until all of the chicken breasts are breaded.
  • Heat the oil in a large sauté pan over medium heat. When the oil is hot, add the chicken breasts to the pan and cook for 2 to 3 minutes until the first side is golden brown. Flip and continue cooking until done, 2 to 3 minutes longer. Serve immediately with lemon wedges.
  • Note: If chicken breasts are large (8 or more ounces), it's best to cut them in half once they are pounded out. Alternatively, you can cut them in half horizontally before pounding.

1 package (1/4 ounce) active dry yeast
3 cups all-purpose flour, divided
1/4 cup butter, softened

½ cup butter, melted
1 teaspoon garlic salt
¼ teaspoon dried rosemary
⅛ teaspoon dried basil
⅛ teaspoon dried thyme
⅛ teaspoon garlic powder
1 tablespoon grated Parmesan cheese
1 (1 pound) loaf French bread, halved lengthwise

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a small bowl, mix butter, garlic salt, rosemary, basil, thyme, garlic powder and Parmesan cheese.
  • Spread each half of the French bread with equal portions of the butter mixture. Sprinkle with additional Parmesan cheese, if desired.
  • Place bread halves, crusts down, on a medium baking sheet. Bake in the preheated oven 10 to 12 minutes, or until the edges are very lightly browned.

4 boneless skinless chicken breast halves (about 2 pounds)
1 1/2 teaspoons salt
5 cups bread crumbs
1 tablespoon dried oregano
1 tablespoon dried thyme
Freshly ground black pepper
All-purpose flour, for dredging
6 large eggs, beaten
2 tablespoons whole milk
Vegetable oil, for frying
Olive oil, as needed
7 cups Quick Marinara Sauce, recipe follows
2/3 cup grated Parmesan, divided
1 pound fresh mozzarella, thinly sliced
3 tablespoons extra-virgin olive oil
1 small onion, diced
4 cloves garlic, chopped
2 teaspoons dried oregano seasonings
7 cups whole, peeled, canned tomatoes in puree (about 2 (28-ounce cans), roughly chopped
1 tablespoon kosher salt
Freshly ground black pepper

Steps:

  • Put each chicken breast between to pieces of plastic wrap and pound them out to a uniform thickness, no more than about 1/3-inch.
  • In a large bowl, whisk together the 1 1/2 teaspoons salt, bread crumbs, oregano, thyme, and season with pepper.
  • Place the flour in a large plate or bowl. In another medium bowl, whisk the egg and milk together. Dredge a chicken breast in the flour and shake off excess. Then dip it into the egg mixture and finally dredge in the seasoned breadcrumb mixture. Shake off any excess breading and transfer to a baking sheet. Repeat with the remaining chicken.
  • Preheat the oven to 400 degrees F.
  • In a large straight-sided skillet, pour the vegetable oil to a depth of 1/2-inch. Heat the oil over medium heat until it registers 400 degrees F on a deep-frying thermometer. (The oil must be heated to 400 degrees F so that the breaded chicken, when added, will drop the temperature of the oil to the proper frying temperature of 375 degrees F.)
  • Fry 1 breast at a time until golden brown on each side, about 6 minutes total. Using tongs, transfer to a paper towel-lined baking sheet and season with salt, to taste.
  • Lightly brush a baking dish, large enough to place the chicken in a single layer, with olive oil. Cover the bottom of the baking dish with half of the marinara sauce and arrange the chicken over the sauce. Cover with the remaining sauce. Scatter the Parmesan and the mozzarella on top. Bake until sauce is bubbling and the cheese is brown, about 30 minutes. Serve immediately.
  • Heat the oil in a medium saucepan over medium-high heat. Saute the onion, garlic, and Italian seasoning. Stir until lightly browned, about 5 minutes. Add the tomatoes and bring to a boil. Lower the heat to a simmer, cover, and cook for 10 minutes.
  • Stir in the salt and season with pepper, to taste. Use immediately or store covered in the refrigerator for up to 3 days or freeze for up to 2 months.

CRISPY BAKED WALLEYE

2 teaspoons parmesan cheese
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon dried basil
1/2 teaspoon dried parsley flakes

1/4 teaspoon thyme
1/4 teaspoon tarragon (optional)
10 tablespoons olive oil, for mixing

Steps:

  • Grind spices until fine (either in the palm of your hand or in a spice grinder).
  • Add cheese to spices and mix well.
  • Store in a spice container until ready to use.
  • In a small bowl add 2 tbls of olive oil to one teaspoons of spice mix.
  • Mix well.
  • Let set for at least five minutes.

  • Bake as directed on crescent roll package.
  • Parmesan Herb Monkey Bread:
  • 1 can refrigerated biscuits, unbaked (8 count)
  • 1 packet seasoning mix
  • 1/2 stick margarine, melted
  • Cut biscuits into quarters and place in large bowl.
  • Add seasoning mix to melted butter and stir well.
  • Pour butter over biscuits and toss to coat very well.
  • Place biscuit pieces in medium loaf pan (4 1/2 x 8 1/4")
  • Bake at 350 for 20 minutes.
  • Parmesan Herb Salad Dressing:
  • Place 1/2 cup good quality olive oil into a jar.
  • Add 1/4 cup cider vinegar.
  • Add seasonings mix from packet.
  • Place lid on jar and shake until blended.
  • Serve over green salad.
  • Makes 3/4 cup salad dressing.
