Satisfy your craving for something different tonight. It's good and fairly easy. This is stuff I usually have on hand too.

1 lb ground beef or 1 lb ground turkey
1/2 medium yellow onion, chopped
1 (1 1/4 ounce) package taco seasoning
6 large flour tortillas
1 (16 ounce) can refried beans
2 -3 cups shredded taco cheese or 2 -3 cups cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup
4 ounces sour cream
jarred hot sauce, if desired to spice it up

Steps:

  • Brown ground meat/turkey & onion; drain.
  • Add taco seasoning and stir in refried beans.
  • Mix soup and sour cream in a separate bowl.
  • Spread 1/2 sour cream mixture in the bottom of a casserole dish.
  • Tear up 3 tortillas and spread over sour cream mixture.
  • Put 1/2 the meat bean mixture over that.
  • Add a layer of cheese.
  • You could put some hot sauce on this now.
  • Repeat the layers.
  • Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

2 lbs lean ground beef
1 small white onion, chopped
2 cups cooked rice
1 (10 3/4 ounce) can condensed cheddar cheese soup or 1 (10 3/4 ounce) can nacho cheese soup
1 (1 1/4 ounce) packet taco seasoning
12 burrito-size flour tortillas
1 (16 ounce) salsa
1 (15 ounce) can black beans, drained
1 (29 ounce) can corn, drained
4 cups shredded cheddar cheese
1 (10 ounce) can enchilada sauce
2 tablespoons cilantro

Steps:

  • Preheat oven to 350.
  • In a large skillet, brown ground beef with onion; drain. Return beef & onions to hot skillet off of heat and stir in rice, undiluted soup and taco seasoning. Mix together well.
  • Lightly spray a lasagna pan/ 13" x 9" pan with nonstick cooking spray.
  • Line bottom of pan with 4 of the tortillas.
  • Evenly cover tortillas with half of the meat/rice mixture, then 1/2 of the salsa, then sprinkle with half of the corn, half of the black beans and 1 cup of cheese.
  • Cover again with 4 more of the tortillas and repeat these layers again.
  • Finally, top with the last 4 remaining tortillas. Pour entire can of enchilada sauce over top. Sprinkle with remaining 2 cups cheese and cilantro.
  • Bake at 350 for about 25 minutes.
  • Serve with a dallop of sour cream, if desired.

1 onion, chopped
2 teaspoons minced garlic
1 (2 ounce) can black olives, sliced
1 (4 ounce) can diced green chili peppers

2 (16 ounce) cans refried beans
12 (8 inch) flour tortillas
9 ounces shredded Colby cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes. Drain any excess fat, if desired. Mix in the olives, green chile peppers, tomatoes with green chile peppers, taco sauce and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
  • Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
  • Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly.

1 package (taco seasoning)
1 can (10.5 oz, diced tomatoes with green chilies)
1 can (16 oz, refried beans)

chopped fresh cilantro

Steps:

  • Preheat oven to 350 and grease an 8" springform pan with nonstick cooking spray and set aside.
  • In a large skillet, brown beef and drain.

1 onion, chopped
2 teaspoons minced garlic
1 can (4 ounce size) black olives, sliced (reserve some for garnish)
1 can (4 ounce size) diced green chiles
1 can (10 ounce size) diced tomatoes with green chili peppers such as Rotel
2 1/2 cups taco sauce
1 can (16 ounce size) refried beans
12 (8-inch size) flour tortillas
9 ounces shredded cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F. Heat a large skillet over medium-high heat. Add the ground beef, onion, and garlic. Cook, stirring frequently, until the beef is browned. Drain off any excess grease. Add the olives, green chiles, tomatoes, taco sauce, and refried beans. Mix well. Cook on low heat for 15 minutes, stirring frequently. Spread a thin layer of the beef mixture in the bottom of a 9x13 baking dish (or other large baking dish). Place a layer of the flour tortillas over the beef mixture. Top with another layer of meat, then a layer of shredded cheddar cheese. Repeat the layers with the remaining tortillas, meat mixture, and cheese, ending with meat and cheese on top. Steps:

  • Make the filling:
  • In a large heavy skillet cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened, add the beans, and mash about half of them coarse with the back of a wooden spoon. Add the tomato sauce, the cumin, the chilies, and salt and black pepper to taste, simmer the mixture, stirring, for 3 to 5 minutes, or until it is thickened slightly, and stir in the coriander.
  • Working with 1 warmed tortilla at a time and keeping the others covered, spread about 3 tablespoons of the filling down the center of each tortilla and roll the tortillas, enclosing the filling but keeping the ends open. Arrange the burritos, seam sides down, in one layer in a baking dish, sprinkle them with the Monterey Jack, and bake them, covered with foil, in the middle of a preheated 350°F. oven for 10 minutes. Serve the burritos with the guacamole and the salsa.

  • Cook your meat with the chopped onion, I use my favorite pan or my pressure cooker -- see this post for how.
  • Make the sauce: melt butter in a saucepan and add chopped garlic. Sauté until the garlic starts to get lightly golden. Add the flour and whisk until smooth. Cook on medium heat for 2-3 minutes, keep whisking and be careful to watch closely and keep it on low-medium so it doesn’t burn. Slowly add the cream or milk and the broth, and keep whisking. Add the tomato paste, tomato sauce, and seasonings (or the salsa), and keep whisking it in as the flavors all come together and it thickens. Taste-test to see if it needs more salt or more spices. If this is done before you’re ready to assemble, just turn your heat off and let set.
  • Start assembling in a buttered baking pan. You can layer any way you'd like, just make sure there's always sauce touching the tortillas so they don't get dry, and tear the tortillas so they completely covering each layer. (See the pictures below.) Here's how I did the layers: Tortillas, sauce, meat, cream cheese, tortillas, sauce, beans, peppers, tortillas, sauce, rest of the meat, tortillas, sauce, cheese. Basically keep layering everything in whatever order, and as you get to the top, just use up whatever you have left. Remember to make two pans at once if you have enough, because it really is a great time-saver later!
