SOUTH AMERICAN RAISIN CAKE

South American Raisin Cake image

These days we are used to to finding convenience foods in the supermarket - and they really help us save time. This recipe is based on a traditional South American favorite using today's shortcut ingredients.

Provided by JackieOhNo

Categories     Dessert

Time 55m

Yield 12 serving(s)

Number Of Ingredients 6

1 1/4 cups apple juice
1/2 cup sugar
1 cup raisins
1 cup chopped walnuts
2 tablespoons cornstarch
3 (11 1/2 ounce) packages refrigerated cinnamon rolls (8 rolls per package)

Steps:

  • Preheat oven to 325 degrees. In a medium saucepan, over medium-high heat, combine the apple juice, sugar, raisins, walnuts, and cornstarch. Bring the mixture to a boil, then reduce the heat to low and cook for 5 minutes or until the mixture thickens.
  • Meanwhile, cut each cinnamon roll into 6 pieces. Place half of the pieces on the bottom of a 13x9-inch glass baking pan that has been coated with nonstick baking spray. Cover with the raisin-nut mixture, then top with the remaining dough pieces. Bake for 30-40 minutes, or until the dough is firm and golden. (For a sweeter touch, spread the icing from the cinnamon roll packages over the top just after removing the cake from the oven.) Cool, then cut into serving-size pieces.

GRILLED AREPAS WITH SALSA (SOUTH AMERICAN CORN CAKES)

Grilled Arepas With Salsa (South American Corn Cakes) image

This is a bit easier than the other grilled arepa recipe I posted, as it uses premade arepas. Some supermarkets and Latino markets carry these, in the dairy section. They can also be found online. Adapted from Steven Raichlen's Planet Barbecue! The salsa ingredients can be chopped in a food processor. NOTE: I have used "corn cakes" as the ingredient name, because the software does not recognize arepas as an ingredient.

Provided by Chocolatl

Categories     Colombian

Time 10m

Yield 7 arepas

Number Of Ingredients 10

1/2 medium sweet onion, very finely diced
1/2 green bell pepper, very finely diced
1/2 red bell pepper, very finely diced
1 clove garlic, minced
1/3 cup finely chopped fresh cilantro
2 tablespoons distilled white vinegar
1 tablespoon fresh lime juice (approximately)
salt
7 corn cakes, thawed if frozen (arepas)
3 tablespoons melted butter, divided

Steps:

  • Combine onions, peppers, garlic, cilantro, vinegar, and lime juice.
  • Toss to mix.
  • Season with salt to taste.
  • Add more lime juice if desired. There should be about 1 1/2 cups of salsa.
  • Salsa can be made several hours in advance.
  • Preheat grill to high.
  • Brush and oil grill very well.
  • Lightly brush both sides of arepas with some of the melted butter.
  • Arrange arepas on grill, and and grill until toasted and brown, about 2 minutes.
  • Turn over with a spatula or tongs and grill on other side about 2 minutes.
  • Transfer arepas to a platter and brush with any remaining butter.
  • Top each arepa with some of the salsa.
  • Serve immediately.

BOILED RAISIN CAKE

Boiled Raisin Cake image

This recipe was in a box of loose recipes I'd cut out of magazines and newspapers. I'm posting it here so it won't get lost. See NOTE at bottom of recipe if you don't have pastry flour. UPDATE-- Made this today. It didn't rise much, maybe it's not supposed too. I did use pastry flour. The flavor is wonderful. I dropped the salt down to 1/2 teaspoon, and used butter instead of shortening. There's less than 1/2 left it was so tasty.

Provided by Dorel

Categories     Dessert

Time 1h10m

Yield 10 serving(s)

Number Of Ingredients 11

2 cups raisins
1 cup brown sugar
1 cup hot water
1/2 cup shortening
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1 teaspoon vanilla
2 cups pastry flour
1 teaspoon baking soda

Steps:

  • In saucepan. place raisins, brown sugar, hot water, shortening, salt, cinnamon, nutmeg, and cloves.
  • Bring mixture to boiling point, cover and let simmer for 6 minutes.
  • Cool to lukewarm and add vanilla.
  • Add soda to flour and mix.
  • Combine flour and raisin mixture well.
  • Bake in buttered 9X5" loaf pan in 325° oven for 1-1 1/4 hours. Cool in pan.
  • This cake improves with keeping.
  • -------------------------------------.
  • NOTE--It can be a challenge to find pastry flour. Even well-stocked supermarkets seldom carry more varieties than cake flour, all-purpose flour (9% to 12% protein), and bread flour. If you can't find pastry flour, you can mix your own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.
