In this recipe, Jamie Oliver meets Nigella Laswon. His Spiced Lamb Stew with Walnuts and Pomegranate is transformed into a tagine, which was inspired by her Lamb Tagine with Dates and Pomegranate. I had no dates, so to balance out the sourness of the pomegranate, I used honey. It needed far more heat for my own preference. But with a little Harissa (prepared) on the side with a tangy Onion-Pomegranate Relish and some fluffed couscous, this was good and so very unusual. I had pondered grinding the walnuts after toasting them so they would act more as a thickener, but I liked the different texture and crunch with them being chopped. I found pomegranates that were reasonably priced at a nearby market. But since I was unable to extract very much juice from them, I purchased pomegranate juice at Trader Joe's. I have heard on foodie-type TV shows that the way an onion is sliced affects its flavor. Seems the flavor is more acrid when sliced horizontally, so I suggest slicing vertically.

2 lbs lamb, cut into 1 inch cubes
2 tablespoons flour
2 -3 tablespoons olive oil or 2 -3 tablespoons walnut oil
3 red onions, very thinly and vertically sliced (2 onions are used in the tagine, and 1 is used in the onion-pomegranate relish)
1 carrot, thinly sliced
4 stalks celery, thinly sliced
4 garlic cloves, finely minced
2 tablespoons fresh ginger, finely minced
1 cinnamon stick
2 teaspoons ground cumin
2 teaspoons turmeric
2 teaspoons ground allspice
1 cup walnuts, toasted then chopped
2 bay leaves
2 1/2 cups pomegranate juice
1 cup chicken broth
2 pomegranates, juiced and seeded
1/4 cup honey
2 limes, juice of
2 cups fresh cilantro, roughly chopped

Steps:

  • Dredge lamb in flour.
  • Heat walnut oil or olive oil in tajine or Dutch oven with tighlly fitting lid. Once oil is hot, add the lamb and season generously with salt and pepper. Brown lamb on all sides and remove from pan.
  • Meanwhile toast walnuts in preheated oven (350 degrees F) for 10 to 12 minutes. Allow to cool, then chop.
  • Add 2/3s of the onions and all of the carrot and celery to the tajine and saute until softened. (Since 1 onion is used to make the relish, only 2 onions are used in this stage) Next add the finely minced garlic and ginger and saute a few minutes longer. Then add ground cumin, turmeric, and allspice, stirring well to combine all ingredients. Return lamb to the pan, adding the toasted chopped walnuts. Continue to stir, allowing all flavors to marry.
  • Add in 2 cups pomegranate juice, cinnamon stick, and enough chicken broth to cover the meat. (You might not need the whole cup). Also add the bay leaves. (I had some curry leaves so used those instead of bay leaves). Bring to a boil, then reduce heat to simmer and cover with a tightly fitting lid. Simmer for two hours, stirring occasionally, until lamb has become tender. If it becomes too dry during cooking, add more liquid. If there is too much liquid, then simmer uncovered.
  • Meanwhile make the Onion-Pomegranate Relish: Place remaining thinly sliced onion in a bowl. Add the lime juice and ~ 1/2 cup pomegranate juice, then allow to stand one hour. Drain the onions, discarding all the liquid. This step takes the "bite" out the onion. Add pomegranate seeds to taste, a dash of salt, and chopped cilantro, also to taste.
  • Once lamb is tender, add honey. Start with 1/4 cup, then increase according to taste. Simmer gently, long enough for the honey to infuse throughout the lamb tajine. Keep in mind, however, that honey burns easily and can create a bitter taste. (If I had dates on hand, they would have been added early on and the honey would have been omitted.).
  • Serve over couscous, garnished generously with pomegranate seeds and chopped cilantro and the Harissa and Onion-Pomegranate Relish on the side. (Harissa is a chile-based condiment often used with Middle Eastern and Northern Africa cuisine. Although I have made it in the past, I just used what I had on hand -- something I had purchased from T J Maxx.).

1 cup pomegranate juice
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
3/4 teaspoon ground cinnamon

4 pounds boneless lamb shoulder, trimmed, cut into 1" cubes
1 medium onion, grated

1 tablespoon mint leaves, coarsely chopped

Steps:

  • Combine broth and pomegranate juice in a large heavy pot, Dutch oven, or tagine. Whisk in coriander, cumin, paprika, cinnamon, ginger, 1 3/4 tsp. salt, and 3/4 tsp. pepper. Add lamb, onion, and garlic, toss to coat, and gently simmer over low to medium-low heat, mostly covered, until lamb is fork-tender, about 1 1/2 hours. Uncover, increase heat to medium, and continue to cook until juices are thickened, about 15 minutes more; taste and adjust seasonings.
  • Transfer lamb mixture along with any accumulated juices to a serving dish. Top with parsley or cilantro, pomegranate arils, and mint.

  • Tagine can be made 3 days ahead; cover and chill. Rewarm before serving.

6 pounds lamb shanks (6-8 shanks, depending on size), trimmed
Kosher salt, freshly ground pepper
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground turmeric
1 teaspoon ground cumin
1/2 teaspoon ground cardamom
1/2 cup olive oil, divided
2 medium onions, thinly sliced
6 sprigs thyme
4 garlic cloves, crushed
2 bay leaves
2 tablespoons all-purpose flour
1/2 cup dry red wine
4 cups (or more) low-sodium chicken broth
1 cup pomegranate juice
1/2 cup pomegranate molasses
2 cups walnuts, rinsed
3 tablespoons unsalted butter, cut into pieces
Cooked polenta (for serving)
3 wide strips lemon zest, very thinly sliced lengthwise

Steps:

  • Preheat oven to 350°F. Place lamb shanks on a large rimmed baking sheet; season generously with salt and pepper. Mix cinnamon, turmeric, cumin, and cardamom in a small bowl; massage spice mixture into lamb. Let rest 1 hour at room temperature or chill uncovered up to 12 hours (the longer, the better).
  • If chilling, let shanks sit at room temperature 1 hour for even roasting.
  • Heat 1/4 cup oil in a large pot over medium-high. Working in batches, cook lamb shanks until brown on all sides, 10-15 minutes. Transfer lamb to paper towels to drain.
  • Wipe out pot and let cool slightly so that vegetables don't burn. Heat remaining 1/4 cup oil in pot over medium. Add onions, season with salt, and cook, stirring occasionally, until golden and softened, 8-10 minutes. Add thyme sprigs, garlic, and bay leaves and cook, stirring often, until fragrant, about 2 minutes. Sprinkle flour over and stir vigorously to evenly distribute. Cook, stirring often, until flour is absorbed, about 1 minute. Add wine; bring to a simmer and cook, stirring often, until thickened, about 2 minutes. Gradually stir in broth, pomegranate juice, and pomegranate molasses. Bring to a simmer and cook, stirring occasionally, until flavors meld, about 5 minutes.
  • Arrange lamb shanks in a single layer in a large roasting pan. Pour in onion mixture and push lamb shanks down into liquid (about three-quarters of lamb shanks should be submerged; add more broth if needed). Cover pan with foil and cook lamb, turning occasionally, until meat is fork-tender and almost falling off the bone, 1 1/2-2 hours. Remove pan from oven and let lamb rest, covered, in liquid at least 30 minutes.
  • Transfer lamb to a platter and tent with foil to keep warm. Strain braising liquid through a fine-mesh sieve into a medium saucepan; skim off fat from surface and discard. Add walnuts to braising liquid and bring to a simmer over medium-high. Cook until reduced by one-third, 15-20 minutes (sauce should be slightly thickened and velvety). Add butter a piece at a time, stirring after each addition until incorporated before adding more; sauce should look glossy. Return lamb to pot and cook, stirring to coat, until heated through. Taste and adjust seasoning with salt and pepper.
  • Arrange lamb over polenta on a platter and spoon walnuts and sauce over; top with lemon zest.
  • Do Ahead
  • Lamb shanks can be braised 1 day ahead. Chill uncovered until cold, then cover and keep chilled.

Combine 1/4 cup orange juice, 1/4 cup pomegranate juice, honey and seasonings; add to slow cooker., Cook, covered, on low for until meat is tender, 6-8 hours. Remove lamb to a rimmed serving platter; keep warm. Stir remaining orange and pomegranate juices into cooking liquid; pour over lamb. Sprinkle with pomegranate seeds and parsley. If desired, serve over couscous.

1 3/4 lbs lean lamb leg steak
1 1/2 ounces onions, chopped
2 cloves garlic, chopped
1/2 teaspoon cayenne pepper
2 inches cinnamon sticks, broken in half
1 teaspoon ground ginger
1 teaspoon paprika
10 -12 saffron strands
turmeric, if you want a little colour
salt and pepper
4 1/2 ounces ready to eat dried apricots, quartered
6 ounces carrots, diced
3 1/2 ounces zucchini, diced
12 ounces tomatoes, chopped
2 tablespoons chopped fresh coriander (chopped)
2 tablespoons chopped fresh parsley
10 ounces couscous

Steps:

  • Trim any fat off the lamb and cut it into 1 inch cubes.
  • Put the meat, onions, garlic, cayenne pepper, cinnamon, ginger, paprika and saffron if using,into the bottom of a double boiler or a large saucepan, season to taste and add enough water to cover.
  • Bring the contents to a boil, then cover the pan, reduce the heat to low, and simmer for 1 hour 30 minutes.
  • Add the apricots, carrots,zucchini,tomatoes, coriander and parsley to the pan and cook, covered for a further 15 minutes.
  • Meanwhile, following package directions, prepare enough couscous for 6 people.
  • Add salt to taste.
  • To serve, spoon the couscous onto serving dish, lift the lamb and vegetables from the pan with a slotted spoon and lay them on top of the couscous and sprinkle them with chopped coriander and parsley.
  • Pour the broth into a jug or bowl to serve separately and let people help themselves at the table.

LAMB TAGINE WITH OKRA AND QUINCE

The flavors in this modified Saveur recipe are very complex and spicy. Being unfamiliar with quince, fruit that cannot be eaten unless cooked seems unusual. Quince are ripe when yellow in color and are usually available during Fall. Adding an exotic component to the complexity of this dish, nothing can substitute for its tartness and sweetness. Now the poor little misunderstood okra often gets beat up by those who have never had it prepared correctly. Related to cotton, hollyhock, and hibiscus, okra grows in warm climates. Look for young pods under 4 inches long, which should yield tender results when gently simmered a few minutes. Keep in mind that a food processor can speed up the prep work. Although meat is not traditionally browned in making a tajine, I do anyway. Served with couscous and a garnish of preserved lemon on the side, you just might imagine eating outside under a partially open tent, looking out on the desert, all shimmering and silver beneath the starlit Moroccan sky.

2 lbs lamb, trimmed of fat, cut into 2 inch cubes
2 tablespoons olive oil
salt and pepper
1 teaspoon ground ginger
1/2 teaspoon hot paprika
3 red onions, one grated, 2 finely chopped
18 garlic cloves, peeled and minced
2 tablespoons cilantro, chopped
2 tablespoons flat leaf parsley, chopped
1 pinch saffron thread
1 (14 1/2 ounce) can tomatoes
1 jalapeno pepper, seeded and minced
1 tablespoon cumin seed
3 large quinces
2 tablespoons butter
2 tablespoons sugar
1/4 teaspoon ground cinnamon
1 1/4 lbs okra, tops pared
1 cup couscous

Steps:

  • Using the grating disc in food processor, grate one onion and set aside.
  • Using chopping blade in food processor, mince the garlic and set aside. Mince jalapeno, then chop the two remaining onions and set aside. (Do not combine with the minced garlic or grated onion, since ingredients are added to the simmering tajine at different times.) Chop cilantro and parsley, then set aside.
  • Heat olive oil in bottom of tagine or dutch oven with a tightly fitting lid. Brown lamb, adding salt and pepper to taste. Add grated onion, saffron, ginger, paprika, cilantro, parsley and garlic and stir with the browned lamb. Add the can of tomatoes and bring to boil. Reduce heat and simmer for 45 minutes stirring occasionally.
  • Meanwhile toast cumin seed in a small skillet until fragrant, just a few minutes. Allow to cool, then grind in spice grinder. The Saveur recipe calls for 1/2 teaspoon of ground cumin, but you might want to use all that you ground. Or save the rest for another use.
  • After lamb has been simmering for 45 minutes, add chopped onions, jalapeño, and 1/2 teaspoon (or more if you want) of toasted ground cumin, then simmer 45 minutes more.
  • Meanwhile poach the quince. Cut each quince into 6 slices, leaving skin on and removing core and seeds. Using a large skillet, poach the quince in simmering salted water until tender, about 10 minutes. Drain off almost all of the poaching water, reserving about 2--3 tablespoons in the skillet. Add 2 tablespoons of butter, 2 tablespoons of sugar, and the cinnamon, making a syrup. Cook fleshy side down until glazed, about 20 minutes. Turn over and brown the skin side. Keep warm to serve with the lamb.
  • Simmer okra in a small amount of water until tender, about 5 minutes. Drain and add to tajine. (The Saveur recipe just adds the okra to the tajine after it has simmered for the 90 minutes. But when I did this before, I simply could not get my okra tender within a few minutes. Once the okra had finally cooked sufficiently, it seemed that some of the other ingredients, like the garlic and cumin, had overcooked, resulting in a bitter flavor. So to get the flavor right, I cook the okra separately).
  • To prepare couscous, add 1 cup of boiling water to 1 cup of couscous. Cover and let stand for 10 minutes. Then fluff with a fork.
  • To plate, serve tajine over the couscous and garnish with the quince. If you have any preserved lemon, add a little to the plate with a few sprigs of cilantro.

1 cup plain yogurt
2 tablespoons harissa
1 lb ground lamb
1 large onion, chopped
1 tablespoon ground cumin
4 teaspoons finely minced peeled fresh ginger
1/4 cup raisins
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup canned chick-peas, drained and rinsed
4 teaspoons fresh lemon juice
4 large burrito-size flour tortillas, warmed
10 -12 ounces spinach leaves, stems removed

Steps:

  • Mix the yogurt and harissa together in a bowl; set aside.
  • Add lamb, onion, cumin, ginger, raisins, salt, and pepper to a large skillet over medium heat; Cook, stirring/breaking up the lamb with a wooden spoon, 5-7 minutes until the meat is cooked and the onions are soft.
  • Add in the chickpeas; using a potato masher, mash at least half of them right in the pan, blending them with the meat.
  • Continue to cook/stir, 1-2 minutes until they are warm; add in the lemon juice.
  • To assemble: Spread about 2 tablespoons of the spiced yogurt on a warm tortilla, leaving a 1-inch border.
  • Layer a quarter of the spinach and the lamb mixture and another 2 tablespoons spiced yogurt in a thick horizontal strip across the bottom third of the tortilla, making sure the ingredients don't quite touch the edges.
  • Fold in the two sides and roll the wrap away from you.
  • Complete the wraps with the remaining ingredients; cut in half on the bias and serve.
