TROPICAL THAI COCONUT-TAPIOCA PUDDING
A delicious and healthy dessert, Thai coconut-tapioca pudding is easy to make. Better yet, it's also vegan and gluten-free.

Steps:
- Gather the ingredients.
- In a medium bowl, cover tapioca with 1 cup water.
- Let soak for 15 to 20 minutes or until the granules expand slightly. Avoid over-soaking or the tapioca will not be able to hold its shape.
- Pour off excess water.
- In a pot with a lid, combine tapioca, salt, and the remaining 2 cups water. Bring to a boil over high heat.
- Reduce the heat to medium-low and simmer for 10 to 15 minutes. Stir occasionally, adding a little more water if necessary to prevent tapioca from bubbling and "spitting."
- When the tapioca turns soft and a little gooey, turn off the heat and place the lid on tight. Let it sit at least 10 minutes. The residual heat inside the tapioca will finish turning all of the seeds soft and translucent.
- Remove the lid and allow the tapioca to cool on the stovetop.
- Cover it again and refrigerate until it's cold; it will thicken and gel together.
- To serve, scoop about 1/4 cup or more of the cold tapioca per person and place in serving glasses or bowls.
- Pour 1/4 to 1/3 cup coconut milk over each portion and stir to mix. This pudding should be on the runny side and you will have to stir it well to distribute the tapioca.
- Add a little syrup to each portion (about 1 tablespoon or to taste). Each person can add more according to their preferred sweetness.
- Add slices of fresh mango or any tropical fresh fruit, if desired.

EASY FROG EYE PUDDIN' (TAPIOCA PUDDING)
My uncle was a torturer of young children. He was in high school when my brothers and cousins and I were in grammar school. He would tell us that tapioca pudding was made from frog's eyes and none of us would eat it so he ate the entire bowl himself. He also told us that Jell-o was made from pony bones to scare us from eating it. So here is the version of instant tapioca pudding my mother and grandmother would make which is adapted from the Kraft Minute Tapioca box- Frog's eyes are optional.

Steps:
- Beat the egg whites until foamy and gradually add in the sugar.
- Mix the tapioca, splenda, half and half and yolks in a saucepan and let rest for 5 or 6 minutes. Cook on medium heat stirring constantly and let it come to a full boil and remove from heat.
- Stir in the egg whites, add vanilla and zest and let cool for 20 minutes. Serve warm or cold.
- NOTE: You can guild the lily by topping with whipped cream. Mmmm.

FISH EYE SALAD (TAPIOCA FRUIT SALAD)
This recipe is from my Mother in Law. My brother in law told my kids not to eat grandma's salad because it was made with fish eyes!! It took them a while to convince them that there were no fish eyes in the salad and now they love this treat. They even request it by asking for the Fish Eye Salad--hence the name! Prep time does not include the overnight soaking of the tapioca

- Soak tapioca and water over night,drain Add milk and salt and cook until transparent.
- Add sugar, and cool.
- Add fruit cocktail.
- Fold in whipped cream.
- Chill.
TAPIOCA FRUIT SALAD
Homemade tapioca pudding topped off with fresh pineapple, strawberries, mangoes, blueberries and blackberries. I haven't had a chance to try this yet, but wanted to put it here for safekeeping. This recipe is from Favorite Brand Name Sunday Suppers cookbook. Time does not include chill time.

- Mix coconut milk, milk, 1/2 cup sugar, eggs, water, tapioca, vanilla and salt in medium saucepan. Let stand 5 minutes. Cook over medium heat, stirring, until full boil. Remove from heat. Cool 30 minutes. (Pudding thickens as it cools.).
- Spoon into individual dessert bowls. Combine pineapple, strawberries, mango, blueberries and blackberries in large bowl. Stir in remaining 1/4 cup sugar, lime peel and juice; mix well. Spoon over tapioca.
- Cover; refrigerate 2 to 3 hours before serving.
FROG EYE SALAD
Acine de Pepe is a small, round pasta, hence the "Frog's Eye". My kids are wild about this recipe. It is their choice whenever we are asked to bring a dish for a pot luck.

- Bring a large pot of lightly salted water to a boil. Cook acini de pepe in the boiling water, stirring occasionally until tender yet firm to the bite, about 11 minutes. Drain and rinse well with cold water.
- Beat reserved pineapple juice, milk, sugar, and pudding mix together in a large bowl for about 2 minutes. Stir pineapple chunks, marshmallows, mandarin oranges, whipped topping, crushed pineapple, and coconut into the bowl with the juice mixture carefully.
