LAMB TAGINE WITH CINNAMON, SAFFRON AND DRIED FRUIT

(Recipe from Cooking Light magazine, December) This looks to good not to make.Note: To roast spices, heat the whole spices in a dry pan to release their natural volatile oils and bring out their full aroma and flavor. Use a small, heavy skillet. Add the whole spices (roasting ground spices tends to turn them bitter, so is best avoided) and place over a gentle heat. Shake the pan, or stir with a wooden spatula to keep the spices on the move, and toast gently for 2 to 3 minutes. Some spices, including mustard and poppy seeds, "pop" when they are ready; others darken. The essential sign is that the spice becomes aromatic and smells toasty. Tip into a bowl to cook before grinding - preferably with a mortar and pestle. Remember, a coffee grinder can crush most spices, especially tough ones like cinnamon and cloves; clean the grinder afterward by grinding a small piece of bread or a couple of tablespoons of raw rice.

1/4 cup diced seeded anaheim chili
1 teaspoon cumin seed, toasted (see note)
1 teaspoon coriander seed, toasted
1 teaspoon grated peeled fresh ginger
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon freshly ground black peppercorns
2 cloves garlic, minced
cooking spray
1 1/2 lbs boneless leg of lamb, trimmed and cubed
3 cups chopped onions
1/2 cup tomato puree
2 1/2 cups water
2 3/4 cups green bell peppers, cut into 1 inch thick strips
2 cups cubed butternut squash
1 cup cubed carrot
1/4 teaspoon saffron thread
3 inches cinnamon sticks
2/3 cup dried apricot, cut into 1/4 inch strips
4 1/2 cups cooked couscous
1/4 cup minced fresh cilantro

Steps:

  • Combine Anaheim chili, cumin, coriander, ginger, salt, paprika, ground peppercorns and garlic.
  • Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Add lamb; cook 8 minutes on all sides or until browned.
  • Remove lamb from pan.
  • Add onion to pan; cook 5 minutes or until tender, stirring frequently.
  • Stir in half of chili mixture and tomato puree; cook 3 minutes, stirring occasionally.
  • Stir in lamb and water; bring to a boil.
  • Reduce heat; simmer 5 minutes.
  • Wrap handle of skillet with foil, and bake, covered, at 325 degrees for 1 hour.
  • Stir in bell pepper, squash, carrot, saffron and cinnamon.
  • Cover and bake an additional 15 minutes.
  • Stir in remaining chili mixture and apricots.
  • Cover and bake an additional 15 minutes.
  • Remove cinnamon stick; serve tagine over couscous.
  • Sprinkle with cilantro.

1/4 cup sesame seeds
1/2 cup sliced almonds
2 tablespoons olive oil
2 1/2 pounds boned lamb shoulder, trimmed of excess fat and cut into 1 1/2-inch cubes
Salt and freshly ground black pepper
2 cloves garlic, minced
1 medium onion, chopped
1 teaspoon ground cumin
1 teaspoon ground cardamom
1 teaspoon turmeric
1 teaspoon ground dried chili peppers such as ancho, or chili powder
1 cup dried figs, quartered
4 tablespoons chopped cilantro plus 8 sprigs of cilantro

Steps:

  • Preheat the oven to 350 degrees. Put the sesame seeds on a small sheet pan or pie plate and toast in the oven 6 minutes, remove and place in small dish. Add the almonds to the pan until golden brown. Set aside. Put the olive oil in a large, heavy-bottomed Dutch oven over medium-high heat. Season the lamb with salt and pepper. Brown on all sides in 2 batches, about 10 to 12 minutes total. Add the garlic, onions, cumin, cardamom, turmeric, and ground chilies to the lamb. Stir well and reduce the heat to medium-low. Cook for 5 minutes. Add 2 1/2 cups water and bring to a boil. Reduce the heat, cover, and simmer for 1 1/2 hours, or until the meat is tender. It should be slightly springy, but easy to pull apart with your fingers. Preheat the oven to 425 degrees. Strain the liquid from the stew into a small saucepan or bowl and skim the fat. Check for salt and pepper and keep warm. Mix the meat and figs and spread in a single layer in an ovenproof serving dish. Pour the sauce over the meat and figs and sprinkle with almonds. Bake for 12 minutes, or until crisp and golden. Sprinkle with sesame seeds and chopped cilantro and garnish wiht cilantro springs. Serve from the hot dish.

2 lbs cubed lamb
1 tablespoon vegetable oil
1 large onion, chopped
1 1/2 cups water
1 pinch saffron thread, crumbled
3/4 teaspoon salt
1/4 teaspoon black pepper
1 1/2 large carrots, cut into 1/4-inch-thick rounds
1 small sweet potato, peeled and cut into 3/4-inch pieces
3/4 teaspoon ground ginger
1/8 teaspoon cinnamon
2/3 cup pitted prune
1/2 cup dried apricot (preferably Turkish)
1 medium yellow squash, cut into 3/4-inch pieces
2 teaspoons honey (optional)
freshly grated nutmeg

Steps:

  • Heat 1/2 tablespoon oil in a flameproof wide shallow casserole with a tight-fitting lid over moderately high heat until hot but not smoking.
  • Brown meat on all sides in 2 batches, transferring to a plate as browned.
  • Add remaining 1/2 tablespoon oil to tagine and cook onion, stirring, until softened. Return meat and bones to pot.
  • Stir in water, saffron, salt, and pepper and bring to a boil.
  • Reduce heat and simmer mixture, covered, stirring occasionally, until lamb is tender, about 1 1/4 hours.
  • Transfer lamb to a clean plate, and add carrots and sweet potato to pot, then simmer, covered, stirring occasionally, until vegetables are barely tender, about 10 minutes.
  • Add ginger, cinnamon, prunes, apricots, and squash, then simmer, covered, stirring occasionally, until vegetables and fruits are tender, about 5 minutes.
  • Return lamb to stew and add honey. Season with salt, pepper, and nutmeg and simmer, uncovered, stirring occasionally, 5 minutes.

3 lbs boneless lamb shoulder, cut into 2 inch pieces
1 cup fresh orange juice
1/2 cup sherry wine vinegar
4 garlic cloves, finely minced
1/4 cup extra virgin olive oil, plus more if needed
1 onion, chopped
3 carrots, peeled, halved lengthwise and cut into 2 inch pieces
1 teaspoon saffron thread
2 teaspoons ground cumin
2 teaspoons dried thyme
1 1/2 teaspoons ground coriander
1 tablespoon all-purpose flour
1 cup canned chick-peas, rinsed and drained
1/2 cup pitted prunes
1/2 cup dry red wine
salt & freshly ground black pepper, to taste
3 ripe tomatoes, seeded and cut into 1/2 inch pieces
1/2 cup imported black olives, pitted
1 tablespoon fresh lemon juice
of fresh mint, for garnish

Steps:

  • Place the lamb in a large nonreactive bowl and add the orange juice, vinegar and garlic. Toss to combine. Let the lamb marinate, covered, in the refrigerator for 2 hours, turning the pieces once or twice. Drain the lamb, reserving the marinade.
  • Heat 2 T olive oil in a flameproof casserole over medium high heat. Add the lamb, in batches, and cook until browned, about 10 minutes per batch, adding more oil as needed.
  • As the lamb is browned, remove the pieces to another bowl. Set the lamb aside. Reduce the heat to medium low and add the onion and carrots to the casserole. Adding more oil if necessary, cook the vegetables until softened, about 8 minutes. Then stir in the saffron, cumin, thyme, and coriander and cook over lowheat for 5 minutes to blend the flavors.
  • Sprinkle the flour over the vegetables and cook, stirring, for 1 minutes. Add the chickpeas, prunes, wine and reserved marinade. Season with salt and pepper.
  • Return the lamb to the casserole and add the tomatoes and olives. Simmer, covered over medium-low heat, stirring occasionally, for 1 1/4 hours. Stir int he lemon juice (this brightens the flavors.).
  • Serve over couscous, garnished with fresh mint.

2 pounds lamb meat, cut into 1 1/2 inch cubes
2 teaspoons paprika
¼ teaspoon ground turmeric
½ teaspoon ground cumin

¼ teaspoon ground cloves
½ teaspoon ground cardamom
1 teaspoon kosher salt
½ teaspoon ground ginger
1 pinch saffron
¾ teaspoon garlic powder
¾ teaspoon ground coriander
2 medium onions, cut into 1-inch cubes
5 carrots, peeled, cut into fourths, then sliced lengthwise into thin strips
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 lemon, zested
1 (14.5 ounce) can homemade chicken broth or low-sodium canned broth
1 tablespoon sun-dried tomato paste
1 tablespoon honey
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Place diced lamb in a bowl, toss with 2 tablespoons of the olive oil, and set aside. In a large resealable bag, toss together the paprika, turmeric, cumin, cayenne, cinnamon, cloves, cardamom, salt, ginger, saffron, garlic powder, and coriander; mix well. Add the lamb to the bag, and toss around to coat well. Refrigerate at least 8 hours, preferably overnight.
  • Heat 1 tablespoon of olive oil in a large, heavy bottomed pot over medium-high heat. Add 1/3 of the lamb, and brown well. Remove to a plate, and repeat with remaining lamb. Add onions and carrots to the pot and cook for 5 minutes. Stir in the fresh garlic and ginger; continue cooking for an additional 5 minutes. Return the lamb to the pot and stir in the lemon zest, chicken broth, tomato paste, and honey. Bring to a boil, then reduce heat to low, cover, and simmer for 1 1/2 to 2 hours, stirring occasionally, until the meat is tender.
  • If the consistency of the tagine is too thin, you may thicken it with a mixture of cornstarch and water during the last 5 minutes.

  • In a large bowl, stir together the cumin, turmeric, salt, pepper, paprika and chile. Add the cubed lamb and toss until the pieces are evenly coated with the spice mix. Sprinkle with the flour and toss to give the lamb a light coating of flour (you may have a little flour left in the bottom of the bowl; save this to thicken the tagine).
  • Heat a large saute pan or stove top-safe slow cooker insert over medium-high heat. Add the oil and butter. When the butter has melted, add the lamb pieces in a single layer (this may need to be done in more than one batch) and sear until the pieces are browned on all sides, about 8 minutes per batch. Remove the lamb with a slotted spoon back to the large bowl.
  • Add the onions and shallots to the pan. Saute the onion and shallots until the onions are just softened and slightly golden, about 5 minutes, stirring frequently. Remove the pan from heat.
  • Place the onions and shallots in an even layer in the slow cooker insert (if not already in use). Stir in the garlic, ginger, apricots, raisins, honey, cinnamon sticks and broth. Place the lamb pieces over the onion mixture in an even layer. Gently sprinkle any remaining flour over the lamb.
