Kong Tau Yew Bak (Braised Pork in Soy Sauce) is a well loved, very flavorful Hokkien (Fujianese) comfort food dish. Usually comes with hard boiled eggs.

2 tbsp vegetable oil
1 bulb garlic ((separated but not peeled))
1 tsp peppercorns ((cracked or smashed))
2 cloves garlic ((minced))
1½ lbs boneless pork ribs (or pork shoulder, cut into bite size pieces (675g))
3 tbsp sweet soy sauce
2 tsp sugar
¾ cup water ((180ml))
½ tsp salt ((or to taste))
4 hard boiled eggs ((peeled))

Steps:

  • Heat vegetable oil in a medium sized pot. Saute garlic cloves, cracked peppercorns, and minced garlic for 1 minute.
  • Add pork and fry to seal in the juices. This should take about 3 minutes.
  • Add sweet soy sauce, sugar, and water.
  • Bring liquid to a boil. Reduce heat to low and simmer for 20 minutes.
  • Add salt and hard boiled eggs. Cover and simmer for another 15 minutes.
  • Turn eggs occasional to coat evenly with soy sauce. Turn off stove.
  • Serve warm with steamed rice.

1 cup prepared pulled pork
1 teaspoon chopped ginger
2 scallions, finely chopped
2 (7.5-ounce) canisters refrigerated biscuit dough (20 total biscuits)
1/4 cup hoisin
1/4 cup low-sodium soy sauce
1 tablespoon apple cider vinegar

Steps:

  • Special equipment: 1 (2 1/2 or 2 3/4-inch) biscuit cutter; steamer, steamer basket or bamboo steamer
  • For the pork buns: Bring 2 cups water to a simmer in a pot that will fit a steamer basket or a bamboo steamer.
  • In a medium bowl, mix together the pork, ginger and scallions. Set aside
  • Working with 1 dough canister (10 biscuits) at a time, roll out the biscuits with a rolling pin until they are about 3 to 3 1/2 inches in diameter. Place 1 heaping tablespoon pork mixture in the center of 5 of the biscuits. Cover each with a remaining rolled-out biscuits. Gently press the biscuits together all the way around the filling and to the edges. Place a (2 1/2 or 2 3/4-inch) biscuit cutter on top so that it is centered on the bun. Press down on the cutter to form a clean, sealed edge and remove the excess dough from around the outside of the biscuit cutter. (If you do not have a biscuit cutter then just pinch together the edges of the buns with your fingers.) Place the sealed buns onto a sheet tray and cover with plastic wrap. Repeat with the remaining ingredients.
  • Place the buns into the steamer basket. Depending on the size of your steamer, you may have to cook the buns in batches of 5. Place the steamer basket over the pot of simmering water, cover and steam, about 10 minutes. The buns will be puffed and the tops will look somewhat dry and shiny. Let cool 1 to 2 minutes.
  • While the buns are steaming, make the hoisin dipping sauce: In a small bowl, stir together the hoisin, soy sauce, 2 tablespoons water and the vinegar. Serve with the buns.

This is normally served with little white buns. I got it from another food website where it was eagerly awaited. It is made over charcoal fire and left to mellow for a few days in the fridge. The ingredient amount may be adjusted to taste. Time taken is an estimation.

1 kg pork belly
2 cloves garlic, peeled and minced
1 1/2 tablespoons brown sugar
2 teaspoons five-spice powder
1 teaspoon salt
2 tablespoons dark soya sauce
2 teaspoons black vinegar

Steps:

  • Wash and blanch pork for 10 minutes. Rub meat with dark soya sauce.
  • Deep fry in moderate heat till brown and skin turns crispy Slice into 1/2" thick pieces (thicker or thinner up to you).
  • Mix pork with minced garlic, sugar, 5 spice powder, salt, soya sauce, vinegar Place in bowl with skin facing downwards Add warm/hot water till 1/2" before the pork is covered.
  • Steam for 20 minutes (until pork is cooked and tender, but not falling apart). Remove from heat and cool- leave overnight in fridge Scoop out excess fat and re-steam again before serving
  • Turn it upside down and serve-- something like serving pineapple upside down cake? Serve with chinese parsley, lettuce and steam buns.

Char Siu Bao is the most popular item in the Cantonese dim sum repertoire.

200 g (2.2 cups) of pao flour
10 g (3.2 tsp) Active dry yeast
145 g (1.1 cups) icing sugar
285 ml (1.2 cups) of lukewarm water
10 g (2.5 tsp) baking powder
400 g (4.4 cups) of pao flour
1/4 teaspoon white vinegar, optional
1/4 teaspoon ammonium bicarbonate, optional
50 g (1/4 cup) shortening
2 g (1/2 tsp) of salt
400 g (0.9 pounds) of diced chicken breast meat, or use 80% lean pork and 20% pork fat
4 tbsp of sugar
12 g (1 1/4 tbsp) corn starch
200 ml of water
70 g (4.5 tbsp) oyster sauce
25 g (1.5 tsp) light soy sauce
35 g (2.5tbsp) dark soy sauce
50 g (1/3 cup) of onion
1 teaspoon Chinese five-spice powder
3 tbsp of oil

Steps:

  • Heat 3 tablespoons of oil in a pan or wok, sauté the onion for 1 to 2 minutes until soft and transparent. Add the diced chicken breast meat and sauté until the chicken is cooked.
  • Add the remaining ingredients. Stir and cook until the gravy thickens.
  • Transfer to a plate and let it cool.
  • Dissolve the dry yeast in water.
  • Add 200g of pao flour and icing sugar. Mix well and cover for an hour.
  • Add the ingredients under the title 'Other ingredients of the dough' into the starter mixture and knead for 8 to 10 minutes.
  • Cover the dough with a piece of damp cloth and let it proves for 30 minutes, or until the size has doubled.
  • Divide the dough into 50g portions. Let the dough rest for 10 minutes.
  • Flatten the dough with a rolling pin to form a circle of 8-10 cm in diameter. Place 30g of filling in the middle, wrap and pleat the dough to seal. Place it on a 1.5 inches (4cm) square baking paper, sealed side up. Rest for 15 minutes before steaming.
  • Place the Char Siu Pao in a steamer, leave about 2-3 cm gap in between each Char Siu Pao. Steam in a preheated steamer on high heat for 8 minutes.
  • Remove the Char Siu Pao immediately from the steamer and cool them on a rack to prevent the bottom of the Char Siu Pao from becoming soggy.

This is the bun that is usually eaten with Kong Bak (Dark Soya Sauced Pork. It is steamed. I grew up eating these buns at my aunt's place where it was served occasionally with her Kong Bak but the buns were store-bought. Got this from The Best of Singapore Cooking.

Number Of Ingredients 9

1 1/2 teaspoons yeast
1 teaspoon sugar
2 tablespoons warm water
1/2 teaspoon salt
3 tablespoons lard or 3 tablespoons oil
8 tablespoons castor superfine sugar
225 ml warm water
565 g flour, slight warmed
flour, for dusting

Steps:

  • Mix first 5 ingredients and leave alone for 5 mins.
  • Mix next 2 ingredients in another bowl.
  • Put flour in bowl, make a hole in the middle and pour in first mixture.
  • Mix.
  • Pour in second mixture.
  • Mix and knead dough till smooth.
  • Should not be sticky.
  • Put dough in a greased bowl, cover with damp cloth and leave to rise till double.
  • On a floured surface, divide dough into four portions.
  • Roll out and divide each into equal (chicken egg sized) portions.
  • Flatten and shape each into a 0.
  • 5 by 7 cm circle.
  • Brush lightly with oil.
  • Fold into two (a bit like parker house rolls but equal halves) Place on greaseproof paper.
  • Place apart on trays.
  • Cover with dry cloth and leave in warm place to rise for 15- 20 mins.
  • Steam over rapidly boiling water for 7- 10 mins.
  • Remove from steamer, cool and remove paper.
  • Open up the bun and stuff the meat in and it's ready to eat!
