This Kiwi Cucumber Salad with Walnuts and Fresh Mint is definitely green, but it's not your typical green salad! Tender butter lettuce, crisp cucumbers and heart-healthy kiwi fruit are drizzled with Lime Vinaigrette in this tasty salad!

Steps:
- Wash, dry and tear lettuce leaves and arrange in a serving dish or on 4 plates. Slice cucumber very thinly, using a sharp knife, a mandoline slicer or a spiralizer. Pat dry with paper towel to remove excess moisture. Add to salad.
- Peel and slice 2 kiwifruit and add to salad. Carve the remaining kiwi fruit into flowers and add to salad. Top with walnut pieces and fresh mint leaves.
- Drizzle with Lime Vinaigrette just before serving.

This is a Persian recipe and my favorite cucumber salad. Cucumbers are combined with toasted walnuts and sultanas and a light dressing of yogurt, fresh dill, and fresh mint. For best results refrigerate salad for about 1 hour.

Steps:
- Place yogurt into a fine-mesh sieve lined with a coffee filter and allow to drain, about 20 minutes. You should end up with about a cup of thick yogurt.
- Heat a small skillet over medium heat, add walnuts, and toast while stirring until nuts start to turn golden brown and become fragrant, 3 to 5 minutes. Allow to cool.
- Mix yogurt, sultanas, walnuts, dill, mint, salt, and pepper in a large bowl, add cucumber and toss to combine. Refrigerate for 1 hour.
