This one-dish wonder grants you immunity from even the most gluten-averse, meat-abstaining, fat-conscious houseguests. And the spicy vegetarian curry tastes as good as ever reheated.

1 lemongrass stalk, tough outer layer removed, coarsely chopped
1 (2-inch) piece ginger, peeled, chopped
4 garlic cloves
2 tablespoons vegetable oil
Kosher salt
1/4 cup red curry paste
2 tablespoons tomato paste
1 (14.5-ounce) can crushed tomatoes
2 (13.5-ounce) cans coconut milk
1 1/2 pound sweet potatoes, peeled, cut into 1" pieces
3/4 pound small or young carrots, peeled, cut on a diagonal into 2" pieces
6 medium shallots, peeled keeping roots intact, quartered lengthwise
1 red Thai chile, thinly sliced (optional)
1 tablespoon fresh lime juice
Steamed jasmine rice (for serving)
Thinly sliced scallions, basil leaves, cilantro leaves with tender stems, and lime wedges (for serving)

Steps:

  • Pulse lemongrass, ginger, and garlic in a food processor until very finely chopped.
  • Heat oil in a large heavy pot over medium heat. Add lemongrass mixture and cook, stirring often, until golden brown, about 5 minutes; season with salt. Add curry and tomato pastes and cook, stirring, until darkened, about 3 minutes. Add tomatoes and cook, scraping up any browned bits, until thickened, about 5 minutes. Stir in coconut milk; season with salt. Bring to a boil; reduce heat and simmer, stirring occasionally, until curry is rich and full of flavor, 20-25 minutes.
  • Add sweet potatoes and carrots, then pour in water to cover. Partially cover pot and cook until carrots are crisp-tender, 10-15 minutes. Add shallots and cook until potatoes are tender and shallots are soft, 15-20 minutes.
  • Add chile, if desired, and lime juice to curry and spoon over rice. Top with scallions, basil, and cilantro; serve with lime wedges.

  • Curry can be made 2 days ahead. Let cool; cover and chill.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Combine sweet potatoes, cauliflower, black pepper, olive oil, curry powder, maple syrup, garlic, thyme, and salt together in a bowl until evenly coated; spread onto the prepared baking sheet.

1 -2 tablespoon curry powder, to taste
1 teaspoon salt

  • Preheat oven to 400°.
  • Put sweet potatoes into a shallow casserole; sprinkle with curry and salt; drizzle with olive oil.
  • Bake, turning once or twice, for 45 minutes, until evenly browned; serve immediately.

I found this delicious recipe in the Margaret Fulton Cookbook. I didn't have any mustard seeds, so subbed a teaspoon of English mustard; and subbed a teaspoon of curry powder for the garam masala. We had it with a Thai red prawn curry and steamed rice, but it is often served as a main dish for vegetarian meals. Edited 16 December to include salt and paprika in ingredients.

30 g ghee or 30 g butter
1/2 teaspoon mustard seeds
1 medium onion, finely chopped
2 tablespoons coriander, chopped or 2 tablespoons mint leaves
1 teaspoon turmeric
1/2 teaspoon chili powder (optional)
1 teaspoon paprika
1 1/2 teaspoons salt
4 -6 potatoes, peeled and cubed
1 teaspoon garam masala
1 tablespoon lemon juice

Steps:

  • Heat ghee in large saucepan and fry mustard seed until it pops.
  • Add onion, fresh coriander, turmeric, chili powder, paprika and salt.
  • Mix well and then stir in the potatoes.
  • Stir for a few minutes, sprinkle with about 1/2 cup of water, turn heat very low, cover and cook for 25-20 minutes or until potatoes are done.
  • Shake saucepan occasionally to prevent sticking.
  • Add garam masala and lemon juice about 10 minutes before the end of the cooking time.

1 pound sweet potatoes, peeled
1/2 cup all-purpose flour
2 teaspoons sugar
1 teaspoon brown sugar
1 teaspoon baking powder

2 teaspoons curry powder

Salt and freshly ground pepper to taste
2 large eggs, beaten
1/2 cup milk (approximately)
Peanut oil for frying

Steps:

  • 1. Grate the sweet potatoes coarsely. In a separate bowl mix the flour, sugar, brown sugar, baking powder, cayenne pepper, curry powder, cumin, and salt and pepper.
  • 2. Add the eggs and just enough milk to the dry ingredients to make a stiff batter. Add the potatoes and mix. The batter should be moist but not runny; if too stiff, add more milk.
  • 3. Heat 1/4 inch of peanut oil in a frying pan until it is barely smoking. Drop in the batter by tablespoons and flatten. Fry over medium-high heat several minutes on each side until golden. Drain on paper towels and serve.
