1 tablespoon extra-virgin olive oil
1/2 cup chopped onion
2 cups water
1 cup uncooked long grain rice
1 can (10 oz) mild Old El Paso™ enchilada sauce
1 can (4.5 oz) Old El Paso™ Chopped Green Chiles
1/4 cup chopped cilantro

Steps:

  • Heat the olive oil in a medium saucepan over medium heat. Add the onion and saute until soft, about 5 minutes.
  • Pour the water into the pan. Bring to a boil. Add the rice, stir, then cover the pan and reduce the heat to a simmer. Let the rice cook for 15 to 18 minutes, until the rice is tender. Turn off the heat and allow it to sit for 5 minutes, then fluff with a fork.
  • Pour the enchilada sauce into the rice, followed by the green chiles and the cilantro. Stir to combine.

BEEF ENCHILADA CASSEROLE

1 c. long-grain white rice
2 tbsp. olive oil
1 1/2 lb. ground beef
1 medium onion, chopped
2 garlic cloves, finely chopped
2 4-ounce cans diced green chiles
2 tsp. ground cumin
2 tsp. paprika
1 tsp. kosher salt
1/2 tsp. black pepper
1 large tomato, chopped
1 c. corn kernels, thawed if frozen
1 16-ounce jar salsa verde
12 small corn tortillas
3 c. grated sharp cheddar cheese (about 12 ounces)
2 10-ounce cans enchilada sauce
1/2 c. chopped black olives
3 scallions, thinly sliced
Sour cream, for serving

Steps:

  • Cook the rice according to the package directions. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat. Add the beef, onion and garlic and cook, stirring, until the beef is browned, 4 to 6 minutes. Pour off the fat, then add the green chiles, cumin, paprika, salt and pepper to the skillet and stir to combine. Add the tomato and 1 cup water and simmer gently until reduced by half, about 2 minutes. Remove from the heat, stir in the corn and set aside.
  • Cover the casserole with foil, tenting it so it doesn't touch the cheese. Place on a rimmed baking sheet and bake for 20 minutes. Uncover and continue baking until bubbly and hot, about 20 minutes more. Switch the oven to broil and broil until just golden on top, about 5 minutes. Let sit for at least 10 minutes. Top with the olives and scallions and serve with sour cream.

1 pound ground beef
2 cans (10 ounces each) enchilada sauce, divided
10 flour tortillas (8 inches), warmed
1-2/3 cups shredded cheddar cheese, divided

Steps:

  • Prepare rice mix according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in Spanish rice and 1-1/4 cups enchilada sauce. , Spoon about 2/3 cup beef mixture down the center of each tortilla. Top each with 1 tablespoon cheese; roll up., Place in an ungreased 13x9-in. baking dish. Top with the remaining enchilada sauce and cheese. Bake, uncovered, at 350° until the cheese is melted, 20-25 minutes.

1 pound lean ground beef (90% lean)
1 large onion, chopped
1/4 teaspoon salt
1 small garlic clove, minced
2 cups shredded cheddar cheese
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 package (8 ounces) process cheese (Velveeta), cubed
3/4 cup evaporated milk
1 can (4 ounces) chopped green chilies, drained
1 jar (2 ounces) diced pimientos, drained
12 corn tortillas (6 inches)
1/4 cup canola oil

Steps:

  • In a large skillet, cook the beef, onion and salt over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in cheddar cheese; set aside., Meanwhile, in a large saucepan, cook and stir the soup, process cheese and milk over medium heat until cheese is melted. Stir in chilies and pimientos., In a large skillet, fry tortillas, one at a time, in oil for 5 seconds on each side or until golden brown. Drain on paper towels. , Place a scant 1/4 cup of reserved meat mixture down the center of each tortilla. Roll up and place seam side down in greased 13-in. x 9-in. baking dish. This is a one-pan tasty and quick weeknight meal! It's something you can spice up any way you like yet is healthy and filling. It's one of my husband's favorite dishes to take to work for leftovers. It reheats really well. The recipe calls for sprinkling cheese on top at the end. I don't do this...and it's still great and filling. Got this recipe from my mom eons ago. This makes a very dry beefy rice...which my family prefers. If you like it more moist, you'll want to alter the rice/broth ratio to suit your tastes. Minced jalapeno's also make a tasty addition if you like some spice.

1 lb lean ground beef
1 tablespoon olive oil
1/2 cup diced onion
4 garlic cloves, minced (I add lots more!)
3 teaspoons chili powder (I add lots more!)
1 teaspoon oregano
1 teaspoon garlic salt (I use garli garni)
2 (4 ounce) cans diced green chilies (as hot as you want them!)
1 (14 ounce) can diced tomatoes (can use Rotel!)
3/4 cup beef broth
1 1/2 cups Minute Rice
2 teaspoons parsley (optional)
6 ounces shredded cheddar cheese (optional)

Steps:

  • Brown beef in oil and drain.
  • Add onions and garlic and saute until fragrant.
  • Add remaining ingredients except for rice, parsley and cheese and bring to a full boil.
  • Stir in rice and cook 8 minutes, covered, or until liquid is absorbed.
  • Sprinkle with parsley and cheese.

I whipped up this recipe with some leftovers and some ingredients I had on hand. This recipe is nice because it's simple and can be modified very easily with whatever ingredients you and your family prefer. I intended for this to be a side dish, but adding cooked chicken or pork would easily make this a meal.

1 cup rice
1 (15 ounce) can black beans
1 (10 ounce) can enchilada sauce (Red)
1/4 cup diced jalapeno (this really kicks up the heat, omit for a milder version)
1 1/2 cups shredded cheddar cheese
sour cream (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Cook rice according to the directions on the package (depending on the kind of rice this makes between 2 to 3 cups of rice).
  • Let the rice cool for 5 to 10 minutes.
  • Combine all the ingredients into a greased baking dish, mix until well blended.
  • Cover with foil and bake for 20-25 minutes.
  • Top with sour cream and cheese if desired.
