This is my most asked-for recipe. I've used it for many years, which is obvious from my recipe card that's yellowed and full of stains. The fruity appearance and taste of this easy-to-make bread blend beautifully with our warm Florida sunshine. It's always a hit whenever I serve it.

Number Of Ingredients 11

1 cup snipped dried apricots
2 cups warm water
1 cup sugar
2 tablespoons butter, softened
1 large egg
3/4 cup orange juice
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts

Steps:

  • Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack.

1 pkg cranberry quick bread mix
1/2 c chopped dried apricots
1 c water
1 egg
APRICOT BUTTER;
1/2 c butter, softened
1/4 c apricot prsserves

Steps:

  • 1. Bread: Heat oven to 350F. Grease and flour bottom only of a 8x4" or 9x5" loaf pan. In large bowl, combine all ingredients; stir 50-75 strokes, until dry particles are moistened. Pour into prepared pan. Bake for 45-50 minutes or until toothpick inserted in center comes out clean. Cool upright in pan 15 minutes; remove and cool completely on wire rack. Wrap lightly and store in refrigerator. Serve with Apricot Butter, if desired. 1 loaf
  • 2. Apricot Butter; In small bowl, combine butter and preserves. Beat until fluffy . makes 1/4 cup. refrigerate .

2 cups all-purpose flour
1 cup sugar
1 to 2 teaspoons grated orange zest
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
3/4 cup water
1/4 cup vegetable oil
1 cup fresh or frozen halved cranberries
1/4 cup apricot preserves

Steps:

  • In a large bowl, combine flour, sugar, orange zest, baking powder, baking soda and salt. In a small bowl, beat egg, water and oil; stir into dry ingredients just until moistened. Fold in the cranberries., Pour into a greased and floured 9x5-in. loaf pan. Cut apricots in the preserves into small pieces; spoon preserves over batter. Cut through batter with a knife to swirl. Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.

3 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 pound (1 stick) butter, room temperature
1 cup sugar
1 tablespoon plus 1 teaspoon freshly grated orange zest
2 large eggs
2/3 cup orange juice
2/3 cup milk
2/3 cup finely chopped apricots
2/3 cup chopped walnuts
3 cups cranberries, picked over and chopped in a food processor

Steps:

  • Sift together the flour, baking powder, baking soda, and salt. Cream the butter and sugar in a large bowl. Beat in the orange zest and eggs, 1 at a time. Add the orange juice and milk and beat until mixed thoroughly. It will appear curdled.
  • Add the flour mixture and beat until it is just moistened. Stir in the apricots, walnuts, and cranberries.
  • Place baking rack in middle of the oven. Preheat the oven to 350 degrees F. Butter and flour five 5 3/4- by 2 1/4-inch loaf pans.
  • Pour the batter into the pans. Bake for 45 minutes. Test for doneness with a toothpick - it should come out clean. Remove the bread from the pans, transfer to a wire rack, and let them cool on their sides.

A wrapped loaf atop a cutting board would make a thoughtful hostess gift. You can cut the amount of butter by 1/2 cup for a lower fat version; it will be a slightly drier yet still delicious bread.

1 1/2 cups unbleached all-purpose flour
1 cup whole wheat pastry flour (available in health-food stores)
1 1/4 cups uncooked old fashioned oats
1 tablespoon baking powder
1 tablespoon ground cardamom
1 teaspoon ground allspice
1 1/2 cups unsalted butter, softened (sweet)
1 cup granulated sugar
1/2 cup firmly packed light brown sugar
3 large eggs
2 cups chopped fresh cranberries
1 1/2 cups chopped dried apricots
1 grated orange, zest of
1 1/2 cups milk
1/2 cup fresh orange juice
1/4 cup sour cream

Steps:

  • Preheat the oven to 375°F Thoroughly oil TWO-9 1/4 by 5 1/4 inch loaf pans.
  • In a large bowl, stir together the flours, oats, baking powder, cardamom, and allspice.
  • In another large bowl, using an electric mixer fitted with the paddle, beat together the butter and sugars until combined. One at a time, beat in the eggs, scraping the side of the bowl occasionally. Mix in the cranberries, apricots, and grated orange peel. Beat in the milk, juice, and sour cream until combined. Add the flour mixture and mix just until blended.
  • Divide the batter evenly between the pans, smoothing the surfaces. Bake for 50 to 60 minutes, or until a cake tester inserted into the center of each loaf comes out dry. Transfer the loaves in the pans to wire racks to cool for 5 minutes. Remove the loaves from the pans and cool completely. When the loaves are cold, store them in an airtight container at cool room temperature. This bread freezes well.

Steps:

  • Into a bowl sift together the flour, the baking powder, the baking soda, and the salt. In a large bowl with an electric mixer cream the butter with the sugar and beat in the zest and the eggs, 1 at a time. Beat in the orange juice and the milk and beat the mixture until it is combined well (it will appear curdled). Add the flour mixture and beat the batter until it is just combined. Stir in the apricots, the walnuts, and the cranberries, divide the batter among 5 buttered and floured loaf pans, each 5 3/4 by 3 1/4 by 2 inches, and bake the breads in the middle of a preheated 350°F. oven for 40 to 45 minutes, or until a tester comes out clean. Remove the breads from the pans and let them cool, right sides up, on a rack. The breads keep, wrapped well in plastic wrap and foil, chilled for 1 week or frozen for 1 month.

2 1/2 cups flour
1 cup sugar
3 1/2 teaspoons baking powder
1 teaspoon salt

3/4 cup orange juice
1 egg, beaten
1 cup nuts, chopped
1 cup dried apricot, chopped
orange rind, grated,to taste

Steps:

  • In a small saucepan, cook the apricots in water until soft; drain.

1/4 cup finely chopped dried apricot
3 tablespoons dried cranberries
1 1/2 tablespoons orange liqueur (or orange juice)
8 slices French bread (cut 1/4 inch thick)
3 tablespoons apricot jam, warmed
1 cup whipping cream
1 cup milk
1/3 cup granulated sugar
2 large eggs
1/2 teaspoon vanilla
1 small pinch salt

Steps:

  • Combine apricots, cranberries and liqueur in small bowl; let stand for 15 minutes.
  • Scatter half of apricot mixture with liqueur, on bottom on greased shallow 12 cup capacity ovenproof dish.
  • Spread one side of each piece of bread with apricot jam; arrange bread, jam side up, in dish slightly overlapping.
  • Scatter remaining apricot mixture over bread.
  • Whisk remaining 6 ingredients together in medium sized bowl; pour over bread; let stand for 10 minutes.
  • Cover with foil.
  • Place dish in roaster; pour enough boiling water to come halfway up side of dish.
  • Bake in 325° F oven for 1 1/4 hours; remove foil and bake for a further 15 minutes until custard is just set.
  • Carefully remove dish from roaster; let stand for 15 minutes before serving.
  • Serve warm or cold.
  • Serves 4 to 6.
