One-Pot Kielbasa With Cabbage, Apples, and Caraway image

An easy to make tasty weekday meal. Serve with Grainy Mustard for spreading on sausages and cabbage, and cider vinegar for drizzling atop. Note: Use crisp, tart apples, such as Granny Smith. Braeburn, or Jonathan. You can use any cooked or uncooked sausage--including chicken, turkey, or Polish sausage-for the Kielbasa. For the green cabbage, substitute red cabbage, kale, and even halved brussel sprouts. If you don't like caraway substitute coriander seeds.

1 1/2 lbs kielbasa, cut into 1-inch slices
1 teaspoon olive oil or 1 teaspoon canola oil
1 medium green cabbage, cut into wedges
1 cup apple cider
1/2 cup sliced red onion
1 teaspoon caraway seed
1/2 teaspoon kosher salt
1/2 teaspoon black pepper, freshly ground
2 apples, cored and cut into wedges
grainy mustard
apple cider vinegar

Steps:

  • In a 4 or 5 quart Dutch oven cook the sausage in hot oil for 5 to 7 minutes or until lightly browned.
  • Add the cabbage, apple cider, red onion, caraway seeds, salt and pepper.
  • Bring to boiling; reduce heat, cover and simmer for 15 minutes.
  • Add the apples and cook, uncovered, 5 to 10 minutes more or until the cabbage is tender and the cooking juices are slightly reduced.
  • Serve with grainy mustard for spreading on susages and cabbage, and cider vinegar for drizzling atop.

1 pound kielbasa sausage
1 tablespoon olive oil
1 medium red bell pepper, cut into chunks
1 medium onion, cut into chunks
2 teaspoons minced garlic
salt and ground black pepper to taste
1 medium apple, cut into chunks
½ cup shredded Cheddar cheese

Steps:

  • Remove skin from the kielbasa and slice into bite-sized pieces.
  • Heat oil in a large frying pan over medium heat. Add kielbasa, bell pepper, onion, and garlic. Fry until veggies have softened, 5 to 7 minutes. Season with salt and pepper.
  • Stir in apple, then cover with Cheddar cheese. Cover the pan and cook until cheese has melted, about 3 minutes.

2 lbs.smoked kielbasa
2 onions, sliced
2 tablespoons olive oil
1 tablespoon butter
salt, to taste

Steps:

  • In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add sausage slices, and cook until brown.
  • Remove sausage slices from skillet, and drain grease. Add remaining olive oil and butter to the skillet and heat over medium-low.
  • Spread sliced onions evenly over the bottom of the skillet. Stir onions to coat them with the oil and butter mixture.
  • Cook onions for about 20 minutes or until soft and brown. If onions seem to be cooking too quickly, lower heat to prevent them from burning.
  • Return sausage slices to the skillet, and stir together with the onions. Season with salt and pepper.
  • Cook until sausage is warmed through. Serve immediately, and enjoy!

  • In a large skillet, saute onion in butter for 15 minutes or until lightly browned. , In a large bowl, toss apples with lemon juice. 2 tablespoons olive oil
3 large onions, chopped (6 cups)
1/2 teaspoon salt
1 teaspoon black pepper
1/2 stick (1/4 cup) unsalted butter
1 large Granny Smith apple
1 3/4 cups reduced-sodium chicken broth (14 fluid ounces)
Accompaniment: mashed potatoes

Steps:

  • Lightly score each piece of sausage in several places with a sharp paring knife. Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then brown half of sausage, turning occasionally, until golden, about 4 minutes. Transfer to a bowl and cover to keep warm. Pour off fat from skillet and wipe skillet clean.
