CHILLI AND CORIANDER PRAWNS
We love seafood - from Australian BH&G Diabetic Living. TIP 1 You can slice up your own selection of fresh vegetable for this recipe. TIP 2 For a lower salt option replace the prawns with 150 grams skinless chicken breast fillet thinly sliced.

Steps:
- Put he prawns in a medium bowl and add the ground chillies, chilli flakes and ground coriander and toss to coat and set aside.
- Puit the noodles in a medium heatproof bowl and cover with boiling water and set aside for 1 to 2 minutes and then drain well and separate the noodles with a fork.
- Heat the oil in a wok on high and add the vegetables and cook stirring for 1 to 2 minutes or until just tender and then add the noodles and toss to combine and transfer to a medium bowl and add the sweet chilli sauce and soy sauce and toss to combine and set aside.
- preheat a barbecue plate to medium high and spray the prawns with cooking spray and toss to coat and then put the prawns on the barbecue plate and cook tossing occasionally for 3 to 4 minutes or until the prawns just change colour.
- Divide the noodle mixture between bowls and top with the prawns and coriander leaves to serve.
BARBECUED PRAWNS WITH CHILLI, LIME & CORIANDER BUTTER

Steps:
- To make the butter, put the garlic, coriander, chilli and lime juice in a food processor and pulse until chopped but not sludgy. Remove 1 tbsp of the mix, toss with the prawns and set aside in the fridge. Add the butter and some seasoning to the food processor, and pulse again until everything is combined. Scrape out onto a sheet of foil, roll into a sausage and put in the freezer to harden.
- Fire up the barbecue. When the coals have just turned white, cook the prawns for 3-4 mins on each side until they turn pink. Lift them off the barbecue onto a platter and, while still sizzling hot, melt thin slices of about half the butter over the prawns. Melt the remaining butter and serve with the prawns to dip into, and lime wedges for squeezing over.

King prawns on the bbq with mango salad...yumm! This recipe yields five prawns per person....if serving as an appetizer then 2 prawns per person would be plenty.

Steps:
- Soak skewers in cold water.
- Peal and devein prawns leaving the the tails intact.
- Mix the chillies, olive oil, lime juice, palm sugar, fish sauce and garlic well and pour half into a ziplock bag.
- Add the prawns and refrigerate for 30 minutes.
- Put the mangoes and coriander in a bowl and add the remaining marinade, toss and refrigerate.
- Thread prawns onto skewers.
- Preheat your barbecue on medium high heat. Barbecue prawns, turning and basting for about 3 minutes until the flesh is pink.
- Serve with mango salad and lime wedges.

CHILLI PRAWN LINGUINE

- To make the dressing, mix 2 tbsp virtually fat-free fromage frais, the grated zest and juice of 2 limes and 2 tsp golden caster sugar in a small bowl and season with salt and pepper. Set aside.
- Cook 280g linguine pasta according to the packet instructions. Add 200g trimmed sugar snap peas for the last minute or so of cooking time.
- Meanwhile, heat 2 tbsp olive oil in a wok or big frying pan, toss in 2 finely chopped large garlic cloves and 1 deseeded and finely chopped large red chilli and cook over a fairly gentle heat for about 30 seconds without letting the garlic brown.
- Tip in 24 peeled raw king prawns and cook over a high heat, stirring frequently, for about 3 minutes until they turn pink.
- Add 12 halved cherry tomatoes and cook, stirring occasionally, for 3 minutes until they just start to soften.
- Drain the linguine pasta and sugar snap peas well, then toss into the prawn mixture.
- Tear in a handful of basil leaves, stir, and season with salt and pepper.
- Serve with mixed salad leaves drizzled with the lime dressing, and warm crusty white bread.

BBQ LEMON, CHILI AND CORIANDER PRAWNS
This is a recipe I whipped up with some leftover herbs and things. Nicest when cooked on a bbq grill or a griddle, but can definitely be stirfried in a frypan just as easily.

Steps:
- Defrost prawns.
- Place in mixing bowl.
- Crush and mince garlic and add to bowl.
- Add coriander to bowl.
- Chop edible portion of lemongrass stalk and add to bowl.
- Add olive oili and lemon juice.
- Finely chop chillis and add to bowl.
- Add cracked black pepper
- Allow to marinate for several hours.
- Heat up bbq hotplate/griddle.
- Cook prawns - be careful not to overcook. When they change colour, they are cooked.
- Meanwhile take juice from marinade and reduce in a saucepan until it's approximately 1/3 cup.
- Place cooked prawns in bowl and pour sauce over the top.

CHILLI GARLIC PRAWNS
this recipe is based on one from Food.com.au that the DH and changed a little to suit our tastes. I have not included the time for peeling the prawns, leave the tails on if you wish but we don't. Feel free to change the chilli amount we like a bit of bite. We served ours with fried rice but will be trying with the rocket and bread, we would use the coriander as we don't care for it. This would serve 2 as a main or 4 as an entree/starter.

- Heat the oil and butter in a large frying pan over medium-high heat and add the garlic and the chilli and cook stirring, for 1 minutes or until aromatic and then add the prawns and season with salt and pepper and cook stirring for 3 to 4 minutes or until the prawns are just cooked through.
- Add the lemon juice, lemon rind and coriander to prawn mixture and toss to combine.
- Divide the prawns among serving plates and serve with rocket and bread.
- A TWIST - To make a Chilli Prawn Panzanella, coarsely tear the bread and rocket leaves, toss with the prawns mixture in a bowl and serve.

- Heat oven to 200C/180C fan/gas 6. Using a 6cm pastry cutter, cut out circles from the tortillas. Heat the tortilla circles from the tortillas. Heat the tortilla circles for 5 secs in a microwave, then press into a mini muffin tin. Brush with the oil and bake for 8-10 mins until golden and crisp. Remove and leave to cool completely.
- Chop the prawns into small pieces and marinate in the lime juice for 5 mins. Put the prawns and lime juice in a bowl with the mango, red onion, chilli and coriander. Season, mix together and use to fill the corn cups just before serving. Top with coriander leaves.
