EXTRA RICH AND CREAMY CHEESECAKE



Extra Rich and Creamy Cheesecake image

This Extra Rich and Creamy Cheesecake is freezer friendly and perfect for special occasions!

Number Of Ingredients 8

2 cups (198 grams) graham cracker crumbs
1/3 cup (67 grams) sugar
7 tablespoons (99 grams) butter, melted
5 blocks of full-fat cream cheese (40 ounces total), softened to room temperature
1 and 1/2 cups (300 grams) granulated sugar
2 teaspoons pure vanilla extract
5 large eggs plus 3 egg yolks, at room temperature
1/2 cup (113 grams) heavy cream

Steps:

  • Preheat oven to 350 degrees (F). Lightly spray a 9" springform pan with non-stick spray.
  • Wrap the bottom and sides of the pan with heavy duty tinfoil. I recommend doing several diligent layers here to ensure no water creeps through when you place the pan in the water bath. Set pan aside.
  • In a large bowl, combine graham cracker crumbs, sugar, and melted butter; stir well to combine. Firmly pat the mixture into the prepared pan.
  • Bake in preheated oven for 8 minutes. Place partially baked crust on a cooling rack and set aside while you prepare the filling.
  • In the body of a high power blender, food processor, stand mixer fitted with the whisk attachment, or in a very large bowl using a hand held mixer, beat the softened cream cheese until completely smooth, scraping the bowl as needed.
  • Add sugar and vanilla and beat smooth, scraping down the sides and bottom of bowl as needed. Add in the eggs and yolks, one at a time, beating well after each addition.
  • Add in the cream and beat until it's just incorporated in the batter.
  • Pour filling into prepared crust and, using a silicone spatula, smooth the top.
  • Place the cheesecake pan into a large, deep pan. Fill the pan with 2 inches of hot water. This is your water bath and will help ensure your cheesecake comes out crack free.
  • Carefully place the pan in the oven and bake for 1 hour and 10 minutes. Turn oven off and let the cheesecake sit, undisturbed, for 45 minutes, inside the oven with the door shut. The cheesecake should be still slightly wiggly.
  • Remove cake from oven and gently run a knife very around the edge of the cake. Place the cheesecake pan on a cooling rack and cool completely, then loosely cover the pan with saran wrap and chill for at least 8 hours.
  • Cheesecake will keep, covered in the fridge, for 5 days. Cheesecake may be frozen for 2 months. Thaw overnight before slicing.

1 cup graham cracker crumbs
2 tablespoons Splenda granular
1 tablespoon butter, melted
3 (8 ounce) packages light cream cheese
3/4 cup Splenda granular
1/4 cup sugar
3 tablespoons flour
1 cup low-fat eggnog (I actually use Holly Nog, a soy eggnog)
3 tablespoons egg whites
1 tablespoon rum
2 teaspoons rum extract
1/4-1/2 teaspoon nutmeg

Steps:

  • Preheat oven to 325°F.
  • Combine crumbs, Splenda and butter. Press into the bottom of a 9 inch springform pan that is lined with parchment paper.
  • Bake for 10 minutes. Cool.
  • Preheat oven to 425 F (400 F convection).
  • Beat remaining ingredients until very smooth.
  • Bake for 10 minutes.
  • Reduce heat to 250 F (225 F convection).
  • Bake for 45 minutes or until center of cheesecake is firm but wiggly.
  • Remove from oven, immediately run knife around edges to loosen cheesecake.
  • Cool completely at room temperature before removing rim.
  • Refrigerate overnight before serving.

24 ounces cream cheese (not whipped)

1 cup heavy cream
2 tablespoons flour (heaping)

Steps:

  • To prepare the crust:.
  • Grease a 10 inch spring form pan. Mix ingredients for crust and put in pan and pat down evenly. Place in freezer until cheese mixture is ready.
  • To prepare cheesecake filling:.
  • pre heat oven to 325 degrees.
  • Mix all the ingredients for filling together and pour over crumbs.
  • Bake for 20 minutes at 325 then turn down the oven to 300 and bake for an additional 40 minutes more. Turn off the oven and leave the cake in the oven for another hour to cool. IMPORTANT- DO NOT OPEN OVEN WHILE CAKE IS COOLING.
  • Take cake out and refrigerate when cold release lock on spring fornm pan and serve.
  • Can be topped with your favorite canned fruit or pie filling . I like to use canned blueberry or cherry pie filling.

75g butter, melted, plus extra for the tin
250g shortbread biscuits
250g mascarpone
300g full-fat soft cheese
50g icing sugar
40g cocoa powder
300ml double cream
½ x 397g can caramel or 200g dulce de leche
50g dark chocolate, chopped
star sprinkles or chocolate stars, to decorate

Steps:

  • Butter and line the base of a 20cm springform cake tin. Blitz the biscuits in a food processor into fine crumbs, then add the butter and blitz again. Tip the mixture into the tin and press down firmly with the back of a spoon. Chill while you make the filling.
  • Gently mix the mascarpone, soft cheese, icing sugar and cocoa until smooth. In a separate bowl, whip the cream until it is stiff, then fold into the mascarpone mixture. Spoon the mixture over the biscuit base and level the top. Chill for 1 hr.
  • Warm the caramel in a pan a little so it is easily spreadable, if you overdo it, wait until it cools again. Pour it onto the cheesecake, spread gently and chill. Meanwhile, melt the chocolate carefully in a bowl set over a pan of simmering water or in a microwave. Drizzle it back and forth over the caramel, then add the sprinkles or stars in whatever pattern you like. Chill until ready to serve, then carefully remove the tin and lining and slide the cheesecake onto a serving plate.

This is the best cheesecake I've ever had. I know everybody says that about their mom's baking, but this time its absolutely true! :)

4 eggs, separated (extra large or jumbo)
1 1/4 cups sugar
4 tablespoons self-rising flour (heaped spoons)
1 teaspoon vanilla
1 cup light sour cream
24 ounces fat free cream cheese, at room temperature
1/2 packet vanilla instant pudding mix
orange zest
8 ounces heavy cream (optional)
8 ounces milk (optional)
1/2 packet instant vanilla pudding (optional)
berries or other seasonal fruit (optional)

Steps:

  • Preheat oven 325 degrees, butter a 9inch springform pan.
  • whip egg whites with 3/4 cup sugar ntil very stiff.
  • Put aside combine yolks, remaining sugar (1/2 cup), flour, vanilla, sour cream, cream cheese, and 1/2 of the instant pudding powder, and mix until smooth.
  • I use the mixer for this.
  • gently fold whipped whites into cheese mixture and add the orange peel.
  • pour into prepared pan, and bake until top is almost golden but not quite, and the cake is quite firm.
  • In my oven it takes about 40-50min.
  • Remove from oven and let rest.
  • Cool completely.
  • I normally cool overnight before topping, best to keep in the fridge.
  • to prepare topping-- whip milk+cream+remaining pudding powder until stiff.
  • Pour over the cake and keep in the fridge.
  • Before serving you could top with berries or other fruits sprinkled with powder sugar.
  • It is best to serve this cake at room temperature and I normally take it out of the fridge at least an hour before serving.
