1 medium leek, (white portion only), halved and sliced
1 tablespoon butter
1-3/4 cups chicken broth
1 medium potato, peeled and diced
1/3 pound fully cooked kielbasa or Polish sausage, cut into bite-size pieces
1/4 cup heavy whipping cream
1/8 teaspoon each caraway and cumin seeds, toasted
1/3 cup thinly sliced fresh spinach

Steps:

  • In a large saucepan, saute leek in butter until tender. Add broth and potato; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potato is tender. , Stir in the sausage, cream caraway and cumin; heat through (do not boil). Just before serving, add the spinach.

I was just throwing things together in a crock pot when this recipe was born. It has stuck with me and my family loves it on cold winter days.

1 (1 lb) package kielbasa (sliced)
1/2 cup chopped onion
2 tablespoons minced garlic
2 tablespoons butter
2 chicken bouillon cubes
4 large potatoes, peeled & cubed
1 teaspoon basil
1 teaspoon oregano
1/4 cup parmesan cheese, grated (optional)
salt & pepper
water (to cover)

Steps:

  • In pan place butter, onions & garlic sauté.
  • Pour onions, garlic & butter into crock pot (set on high).
  • Add 2 chicken flavored bouillon cubes dissolved in hot water, potatoes, kielbasa, salt, pepper, basil & oregano.
  • Fill with water to cover to about 1 inch above potatoes.
  • Let cook for 2-3 hours (or set to low & simmer longer).
  • Add Parmesan close to serving time.

3 tablespoons unsalted butter
14 ounces kielbasa, diced
1 onion, diced
2 stalks celery, diced, plus 1/4 cup celery leaves, roughly chopped
1 1/4 pounds russet potatoes, peeled and diced
1 1/2 teaspoons caraway seeds
1 14.5-ounce can sauerkraut, drained and rinsed
Kosher salt and freshly ground pepper
1/2 cup heavy cream
2 tablespoons spicy brown mustard
1/4 cup fresh dill, roughly chopped

Steps:

  • Melt the butter in a large wide pot or Dutch oven over medium heat. Add the kielbasa and cook, stirring occasionally, until golden and crisp, 3 to 5 minutes. Remove with a slotted spoon to a plate, leaving the drippings in the pot.
  • Add the onion, diced celery and potatoes to the pot and cook, scraping up any browned bits with a wooden spoon, until the onion and celery are softened, about 5 minutes. Add the caraway seeds and sauerkraut and cook, scraping up any remaining browned bits, 1 to 2 more minutes. Add 6 cups water, 1/2 teaspoon salt and a few grinds of pepper. Cover and bring to a boil. Uncover, reduce the heat to a rapid simmer and cook until the potatoes are tender, 15 to 20 minutes.
  • Stir together the heavy cream and mustard in a small bowl. Once the potatoes are tender, reduce the heat to medium low and whisk the heavy cream mixture into the soup. Return the kielbasa to the pot. Increase the heat to medium and simmer until thickened slightly, 3 to 5 minutes. Season with salt and pepper.
  • Divide the soup among bowls. Top with the chopped celery leaves and dill.

1 1/4 pounds (1 ring) kielbasa, 1-inch dice
1 pound (1 large or 2 medium) starchy potato, such as russet, peeled and chopped
1 tablespoon paprika, 1 scant palmful
1/2 tablespoon coriander, half a palmful
1/2 teaspoon ground allspice
2 carrots, chopped
2 ribs celery, chopped
2 cloves garlic, crushed
1 onion, chopped
Salt and freshly ground black pepper

1/2 head savoy cabbage, chopped
A few grates nutmeg
1 cup lager beer, room temp
4 cups chicken stock
2 cups tomato passata or puree
1/2 cup creme fraiche
3 tablespoons chopped fresh dill or 1 1/2 teaspoons dried
Handful fresh parsley leaves, chopped
1/2 lemon, juiced

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat, add the kielbasa and brown. Remove the kielbasa to a paper towel-lined plate. Add the potatoes, paprika, coriander, allspice, carrots, celery, garlic, onions and some salt and pepper. Cook, partially covered, 5 to 6 minutes. Then wilt in the cabbage and season with a little nutmeg. Deglaze the pan with the beer. Add the stock and passata, then slide the kielbasa back in the pot and simmer to combine flavors, 15 minutes. Cool and store for a make-ahead meal. Reheat over medium heat. Finish the soup with the creme fraiche, herbs and lemon juice; serve in shallow bowls.

1 1/2 lbs lean fresh kielbasa or 1 1/2 lbs smoked kielbasa, sliced
1 cup chopped onion
2 cups chopped celery
4 cups shredded cabbage

1/2 teaspoon dried thyme
2 tablespoons white vinegar
3 cups beef broth
2 cups water
3 cups peeled and cubed potatoes
salt and pepper

Steps:

  • Melt butter in a large skillet, add sausage, onions and celery, and cook over medium heat until sausage are lightly browned.
  • Pour mixture into a soup pot and add remaining ingredients except for potatoes.
