Categories     Component     Snack

Number Of Ingredients 9

12 to 14 Persian cucumbers or 8 to 10 pickling cucumbers
4 garlic cloves (halved)
2 teaspoons mustard seeds
2 teaspoons peppercorns
a few good-sized dill sprigs, per jar
2 cups water
2 cups distilled white vinegar
¼ cup cane sugar
2 tablespoons sea salt

Steps:

  • To make dill pickle spears, slice the cucumbers lengthwise into quarters. To make dill pickle chips, thinly slice them horizontally.
  • Divide the cucumbers among 4 (8-ounce) or 2 (16-ounce) jars. Divide the garlic, mustard seeds, peppercorns, and dill sprigs among each jar.
  • Heat the water, vinegar, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolve, about 1 minute. Let cool slightly and pour over the cucumbers. Set aside to cool to room temperature, then store the pickles in the fridge.
  • Pickle spears will be lightly pickled in 2 days, but their best flavor will start to develop around day 5 or 6. Pickle chips will be lightly pickled in 1 day, and will become more flavorful every day after that. Store in the fridge for several weeks.

Provided by oldworldgardenfarms

Number Of Ingredients 8

6 lbs. pickling cucumbers (approximately 3-4 cucumbers per jar)
3 cups white vinegar
3 cups water
4 Tbsp. pickling salt
7 garlic cloves (peeled)
7 tsp. dill seeds
3 1/2 tsp. whole black peppercorns
4 large (fresh grape leaves)

Steps:

  • Prepare jars - wash or sterilize them in the dishwasher - keeping them hot.
  • Start water bath now - you want it close to the boiling point by the time you are ready to add your jars.
  • Wash cucumbers - making sure to scrub the skin thoroughly.
  • Cut off each end of the cucumber, and slice, dice or spear as desired.
  • In a medium sauce pan, over medium high heat, bring vinegar, water and salt to a boil.
  • In each jar, add 1 garlic clove, 1 teaspoon of dill seed, and 1/2 teaspoon of peppercorns to the bottom.
  • Pack cucumbers tightly into each jar.
  • Pour hot brine over cucumbers, leaving 1/4 inch head space at the top of each jar.
  • Run a plastic utensil on the inside of the jar to release any air bubbles.
  • Add 1/2 of a grape leaf on top of the cucumbers.
  • Wipe top of jar with a clean damp cloth, add hot lid and band.
  • Place in hot water bath and process for 10 minutes at a rolling boil. (Adjust time based on altitude as required)
  • Remove jars with a jar lifter and place on a thick towel and let cool at room temperature for 24 hours.

FERMENTED DILL PICKLES

Fermented Dill Pickles image

This recipe does not call for vinegar like most pickle recipes. The cucumbers ferment in brine. The pickles need to ferment for at least 7 weeks before eating.

Provided by Amy Thielen

Time 40m

Yield four 1-quart jars

Number Of Ingredients 7

2/3 cup pickling salt
1/4 head green cabbage, cut into 2-inch pieces
8 cloves garlic
8 fresh grape or black currant leaves, each the size of a silver dollar
12 dried red chile peppers (optional)
4 large heads fresh crown dill (bloomed dill), stems trimmed (or 4 teaspoons dried dill seeds)
30 to 40 Persian or other small cucumbers (about 6 inches long and 1 inch thick)

Steps:

  • Grape leaves keep the pickles crisp. Ask for them at a farmers' market, or as an alternative, add 1/2 teaspoon alum powder to each jar before filling.
  • Sterilize the jars: Wash the jars, lids and bands in hot soapy water and rinse well. Place a canning rack or folded kitchen towel in the bottom of a stockpot and fill halfway with water. Add the jars, making sure they are submerged. Bring to a boil and boil 10 minutes. Remove with a jar lifter or tongs and place on a clean towel. Put the lids and bands in a saucepan of simmering water until ready to use.
  • Make the brine: Combine 13 cups water with the pickling salt in a large pot and bring to a boil, whisking to dissolve the salt. Set aside.
  • Fill the jars: In the bottom of each sterilized jar, add a layer of cabbage leaves, 1 garlic clove, 1 grape leaf, 2 chiles and a tuft of crown dill. Pack the jar with cucumbers, standing them upright and getting in as many as you can. Top each jar with another garlic clove, grape leaf, chile and tuft of crown dill.
  • Add the brine: Ladle the hot brine into each jar (use a funnel if you have one), leaving 1/8 inch headspace. You may not need all of the brine.
  • Close the jars: Wipe the jar rims with a cloth dipped in boiling water. Screw the sterilized lids on tight-as tight as you possibly can.
  • Ferment the pickles: Once the jars cool, transfer them to a warm place (75 degrees For so) and let the pickles ferment 1 week. This is the warm jump-start period; the brine should get cloudy and the lid tops should become tight with pressure. Then transfer the jars to a cool, dark place and wait at least 6 weeks and up to6 months before eating.
  • Be careful opening the jars-fermentation causes the brine to carbonate and it may spray. And don't worry if the garlic changes color; it's still edible.

REFRIGERATOR DILL PICKLES

Refrigerator Dill Pickles image

Using only a handful of pantry ingredients, a Mason jar, and a few hours in the refrigerator, you can make classic dill pickles that are just as tangy and flavorful as those prepared according to more traditional (and labor-intensive) canning techniques. Plus this recipe can be scaled with ease, meaning you can make just one jar or ten in a matter of minutes. So if you're a pickle lover but short on time, this method is for you.

Provided by Food Network Kitchen

Time 1h10m

Yield 1 quart

Number Of Ingredients 7

1 cup rice wine vinegar or distilled white vinegar
Kosher salt
1 teaspoon whole black peppercorns
1/4 teaspoon crushed red pepper flakes
6 sprigs dill
3 cloves garlic
1 1/4 pounds kirby cucumbers, ends trimmed (about 4 medium cucumbers; see Cook's Note)

Steps:

  • Bring the vinegar, 1 1/2 cups water and 1 tablespoon salt to a boil in a small saucepan over medium heat, stirring until the salt is dissolved, about 3 minutes. Remove from the heat.
  • Meanwhile, place the peppercorns, red pepper flakes, dill and garlic in a 1-quart Mason (or other glass) jar. Pack the cucumbers in the jar as tightly as possible.
  • Pour the vinegar mixture over the cucumbers so the cucumbers are completely submerged. Leave uncovered and allow to cool to room temperature, about 1 hour. Cover and refrigerate for at least 1 day before using. The pickles will keep in the refrigerator for up to 2 weeks.
