KETO ROASTED GLAZED CARROTS
These delicious keto roasted glazed carrots make the perfect side dish any time of the year but are especially welcomed during the holidays. They are much lower in carbs than the traditional glazed carrot dish yet just as delicious.

Steps:
- Pre-heat oven to 475 degrees.
- Wash, dry, and trim the carrots.
- Chop the carrots both length-wise and then into 1 1/2 inch pieces. Ensure that the pieces are cut as uniformly as possible as this will ensure the roasting is even. Otherwise, some carrots will take longer than others.
- In a large bowl toss the chopped carrots with olive oil, salt, and black pepper. Make sure to coat the carrots evenly in olive oil.
- Then spread the carrots on a large cookie sheet and place them on the top rack of your oven.
- You are going to roast your carrots for about 20-25 minutes but at the 15-minute mark flip your carrots so that they are roasting evenly.
- Cook your carrots until tender. Transfer the carrots to a serving bowl.
- Next, you will prepare the glaze on the stovetop.
- Using a skillet or small saucepan, melt your butter and sugar substitute using a wooden spoon to stir the glaze at medium-high heat.
- Allow the glaze to cook for about 5 minutes or until the sugar-substitute dissolves completely and the sauce has thickened.
- Once your glaze is done add the sauce to the roasted carrots in the bowl and gently toss.
- Garnish the carrots with the finely chopped parsley and serve.
- Store any leftovers in the refrigerator for up to three days.

- Preheat your oven to 400°F. Prepare a baking sheet or pan and add cleaned carrots to it.
- Melt butter in a small bowl, and add salt, thyme, pepper, smoked paprika, and red pepper flakes. Mix to combine, then pour in 6 tablespoons of the sugar free maple syrup, reserving 2 tablespoons for the end.
- Pour seasoned maple butter mixture over the carrots, coating well. Bake for 35-45 minutes until the carrots are fork tender, tossing halfway through to ensure the butter is covering all of the carrots.
- Garnish with remaining maple syrup and enjoy!
- These will keep in an airtight container in the fridge for up to 5 days.

Steps:
- Combine 4 1/2 cups water, carrots, 4 tablespoons butter, sugar, and coarse salt in heavy large pot. Bring to boil. Reduce heat; cover and simmer until carrots are just tender when pierced with knife, about 10 minutes. Drain. (Can be prepared 3 hours ahead. Let stand at room temperature.)
- Melt remaining 6 tablespoons butter in large nonstick skillet over medium-high heat. Add maple syrup and brown sugar and stir until sugar dissolves. Add carrots and cook until heated through, about 5 minutes. Season with salt and pepper.
- Transfer carrots to large bowl. Sprinkle with parsley and serve.

- Peel and cut the carrots into batons. (You can do this up to 24 hours ahead and keep them in a polythene bag in the fridge.) Tip them into a pan, pour in enough boiling water just to cover, bring back to the boil, then put a lid on the pan and cook for 4-5 minutes until the carrots are just tender.
- Meanwhile, put the butter and maple syrup in a small pan. Heat until the butter is melted then stir in the mustard. Take off the heat. Drain the carrots and tip into a warmed serving dish.
- Pour the warm maple glaze over the carrots. Taste and adjust seasoning to suit.
