1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper. Cover, and simmer on the lowest heat for 15 minutes.

1/2 small onion, chopped

Steps:

  • In a large saucepan, sauté garlic and onion in olive oil until onion is tender.
  • Stir all remaining ingredients in with onion mixture; heat to boiling; reduce heat and simmer, uncovered, for 45 minutes, stirring occasionally.
  • Carefully puree hot sauce in in a food processor or blender; serve hot over cooked pasta and top with fresh-grated Parmesan cheese.

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

1 celery stalk, finely chopped

1 (32-ounce) cans crushed tomatoes
1 dried bay leaves

Steps:

  • In a large pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon each of salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaves. Season the sauce with more salt and pepper, to taste.
  • (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

1 (28 ounce) can crushed tomatoes
1 cup diced onion
1 tablespoon dried basil leaves

  • In a saucepan, saute the onions, but do not let them brown.

As some of you may know I love pasta! I have tried a ton of different marinara sauces prepared in many different recipes. I have found a few that are pretty good, many of which are on this site, but I created this recipe to meet all of the requirements I look for in a perfect sauce. A little sweet, a little spicy, not too watery, not too chunky, and not too difficult. I have served this recipe many times and it always gets a five star review. The secret ingredient here is the anchovy, you can't tell it is in there but it adds amazing depth of flavor to this sauce. I really hope that you all enjoy this!

1 tablespoon brown sugar
1/4 teaspoon red pepper flakes
1 large yellow onion, chopped

2 anchovy fillets or 1 tablespoon anchovy paste
1 (6 ounce) can tomato paste
1 (28 ounce) can crushed tomatoes
1 (14 1/2 ounce) can tomato sauce
1 (28 ounce) can diced tomatoes
3/4 cup red wine (I prefer good Chianti or Merlot, nothing too fruity)
1 tablespoon basil
1 tablespoon oregano
1/4 teaspoon red pepper flakes
1/2 tablespoon brown sugar

  • Heat olive oil in a large stock pot over medium heat.
  • Add brown sugar and red pepper flakes and mix until sugar melts.
  • Saute onions, garlic, and anchovy until onions are clear and anchovy breaks up.

  • Allow to simmer for two hours.

1 teaspoon salt (or to taste, a good tomato sauce needs lots so don't be shy with the salt)
fresh ground black pepper (to taste)

Steps:

  • In a heavy-bottomed stockpot or Dutch oven heat oil over medium-high heat.
  • Add in onions, garlic and dried red pepper flakes, basil and oregano; saute for about 3-4 minutes.
  • Add in the tomato paste and stir for 2-3 minutes.
  • Add in the Roma tomatoes with juice and wine; simmer uncovered over low heat for 1-2 hours (I usually cook it for at least a couple of hours) stirring occasionally.
  • Season with salt and pepper and add in sugar if desired.

This sauce consists mostly of pantry staples. Keep canned crushed tomatoes on hand, and you can prepare a batch of sauce any time. For the best taste, look for chunky tomatoes without added herbs or spices. Buy low-sodium or no-salt-added tomatoes so the finished sauce tastes more of tomatoes than salt. Cento and Eden Organic brands are recommened. Because marinara is a long-simmered sauce, dried herbs are best. They soften and maintain more flavor during the long cook time. Crumble them in your palm to release more of their tasty essential oils. The slow heat will compromise the delicate, fruity flavor of expensive extra virgin olive oil. Regular olive oil will work nicely in the marinara. Rely on a large Dutch oven or stockpot because this recipe makes enough sauce for several meals.
