ROSE MARY'S HOMEMADE SLOPPY JOES
I had never made SLOPPY JOES from SCRATCH UNTIL TODAYS DINNER. As a kid I had never had them because my Mama never made them, so it never occurred to me that I could create my own totally from scratch without the help of the canned stuff.This homemade version is much better. Steps:
- 1. I doubled this recipe, and the directions stated you should get 8 sandwiches from 1 pound of ground beef, NOT IN MY HOUSE. I USED 93% LEAN GROUND TURKEY INSTEAD OF GROUND BEEF. I used 2 1/2 pounds. THIS IS MY VERSION OF THE RECIPE FOUND ON THE HEINZ BOTTLE. From now own I will be looking for the recipes on the back of the Ketchup bottles. This one was awesome.
- 2. Heat oil in large skillet over medium high heat, Add the chopped onions and peppers and sauté about 5 minutes.
- 3. Then add the Ground Turkey, & cook until it is browned and no pink remains. Drain any excess liquid through a strainer or colander. Then add the meat back into the pan.
- 4. Measure catsup into a 4 cup measure, then add the Worcestershire sauce and Brown sugar, stir to blend, then pour into skillet, add diced drained tomatoes and turn heat to medium low, stir to blend ketchup mixture with meat mixture, and continue to cook, add salt and pepper if desired. Stir occasionally to prevent sticking, and allow to continue to cook for at least 10 to 15 minutes, and mixture has thickened.
- 5. Serve on Sandwich buns as desired, toasted or untoasted, with additional condiments if desired.
- 6. This is what we had left from the original 2 1/2 pounds of ground turkey.
SLOPPY JOES
This saucy ground beef sandwich is a favorite for all ages.

- Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until soft, about 5 minutes. Add the peppers, garlic and marjoram and continue to cook until the peppers are tender, about 5 minutes. Add the meat, increase the heat to medium-high and cook, breaking the meat up, until no longer pink, about 5 minutes.
- Spoon off any excess fat from the pan and discard. Add the tomato sauce, sugar, Worcestershire, mustard, vinegar and 1/2 cup of water and stir to combine. Bring to a simmer, cover and cook until the flavors have blended and the sauce has thickened slightly, 15 to 20 minutes. (If the mixture appears to be too dry add up to 1/4 cup additional water.) Season with the salt and pepper.
- Serve the beef mixture on toasted hamburger buns topped with shredded Cheddar and pickle chips.

- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.
SLOPPY JOES
Sloppy joes are a simple, American staple the whole family can get stuck into. Add a dash of spicy chipotle or smoky barbecue sauce to the minced beef filling for some zing.

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

- In a large skillet over medium-high heat, cook and stir ground beef with onion until beef is brown.
- Drain fat from cooked beef.
- Add garlic salt, pepper, chili sauce, brown sugar, white vinegar, mustard, and tomato sauce.

SLOPPY JOES
Some foods are memory triggers, meals that send you back to long-forgotten moments in your life. The sloppy Joe sandwich is one such time machine. This version is an adaptation of one developed by Chris Gesualdi, the chef at TriBakery in Manhattan. It's a tribute to the one his mother, Rose, used to make for him as a child, and it is perfect: a sweet and spicy hill of thick sautéed ground beef spilling out of a toasted homemade kaiser roll. He tops his with melted cheddar, and that can't be a bad thing. All in all, it is a terrific antidote to adulthood.

- In a large skillet over medium heat, warm oil, and saute onions until translucent, 5 to 6 minutes. Add garlic, and saute for 30 seconds. Add ground beef, and saute until well browned, 15 to 20 minutes.
- Add tomato paste, tomato puree, chili powder, Tabasco, chipotle and bay leaf. Stir until blended. Raise heat to bring to a boil, then reduce heat to low. Simmer mixture, stirring occasionally, until thick enough to spread on a sandwich, about 45 minutes.
- To serve, heat a broiler. Slice the rolls open and place them under the broiler until lightly toasted, turning as necessary. Ladle about 1/2 cup onto the bottom of each roll, and top with cheddar cheese to taste. Return bottom halves to the broiler until cheese just melts. Top with the remaining halves, and serve immediately.
