Slow Cooker Olive Garden Chicken Gnocchi Soup is a creamy, lightened-up copycat recipe of the famous classic, made easy thanks to the crockpot!

1 1/2 to 2 pounds chicken breasts (3 to 4 large chicken breasts)
1 1/2 cups shredded carrots
3 cloves garlic (minced)
1 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon celery salt
1/4 teaspoon ground nutmeg
1 bay leaf
Salt and freshly ground black pepper (to taste)
5 cups chicken stock or broth
1 cup half-and-half
2 tablespoons cornstarch
1 (16-ounce) package potato gnocchi
1 cup chopped fresh spinach

Steps:

  • Arrange chicken breasts in the bottom of a large (6-quart) slow cooker. Add carrots and garlic on top, then sprinkle with parsley, basil, celery salt, nutmeg, and bay leaf. Season with 1/4 to 1/2 teaspoon salt (depending on the saltiness of your chicken broth) and freshly ground black pepper. Pour chicken stock/broth over ingredients in slow cooker, cover with lid, and cook on LOW for 6 to 8 hours or until the chicken is tender.
  • At the end of the cooking time, remove the chicken to a cutting board and discard the bay leaf. Using a fork, whisk the cornstarch into the half-and-half until dissolved and then stir the slurry into the soup, along with the gnocchi. Cover the slow cooker and increase the heat to HIGH.
  • Chop or pull the chicken into bite-sized pieces. Stir it back into the slow cooker, cover, and continue to cook for 15 to 30 more minutes, until the gnocchi is cooked through and the soup is thickened. Just before serving, stir in the chopped spinach and cover for a few more minutes until wilted. Adjust the seasonings, to taste, with additional salt and pepper (if needed) and serve immediately.

This crockpot chicken gnocchi soup is a hearty, nutritious, creamy and yet lightened-up soup packed with chicken, gnocchi and vegetables, just like the one you love at Olive Garden! 1.5 pounds chicken breasts (skinless boneless (3 medium to large))
1 onion (large, chopped)
2 carrots (peeled and sliced)
4 sticks celery (chopped)
3 cloves garlic (peeled and crushed or chopped)
4.5 cups chicken stock ((US=chicken broth))
1 tablespoon mixed Italian herbs (e.g. basil, thyme, oregano (or Italian seasoning))
14 ounces evaporated milk ((1 can))
3 tablespoons corn flour (dissolved in a little water (US=cornstarch))
16 ounces gnocchi
7 ounces spinach ((baby spinach))
salt and pepper (to taste)

Steps:

  • Place the chicken, onion, carrots, celery, garlic, stock and herbs in the crockpot and cook on low for six hours minimum (or high for four). If you prefer to use an electric pressure cooker/Instant Pot, cook for 10 minutes on high pressure (70kpa), then quick pressure release (either instant or auto quick which takes 5-10 minutes in my pressure cooker).
  • At the end of the cooking time, shred the chicken in the pot with two forks.
  • Stir in the evaporated milk, cornstarch/water, and gnocchi (no need to cook it first). Bubble on 'high' until the soup has thickened a little and the gnocchi is cooked (a few minutes). If cooking in a pressure cooker, use the saute function instead.
  • Wilt the spinach into the pot, grind in plenty of salt and pepper to taste, then serve.

1 litre/about 4.5 cups good quality chicken stock
1 tablespoon mixed Italian herbs e.g. basil, thyme, oregano
1 can evaporated milk (mine was 400 grams/14 ounces)
2 good tablespoons cornstarch dissolved in a little water
1 (roughly) 450 gram/16-ounce packet potato gnocchi
3 cloves garlic, peeled and crushed or chopped
200 grams/7 ounces fresh spinach
salt and pepper to taste

Steps:

  • Place the chicken, onion, carrots, celery, stock and herbs in the crockpot and cook on low for six hours minimum (or high for four). 2.Shred the chicken in the pot, then stir in the evaporated milk, cornstarch mixed with water and gnocchi. Replace the lid of the pot. 3.Now heat up a little oil in a frying pan and cook the garlic for a couple of minutes. Add the spinach to the pan and cook until wilted (a couple of minutes). Add the spinach and garlic to the crockpot along with plenty of salt and pepper to taste. 4.Adjust the thickness of the soup to your liking (if too thin, add a little more cornflour mixed with water, if a little thick, add some water). This is even better than most of the so called Olive Garden Chicken Gnocchi soup recipes. Most of the other recipes use thyme, this uses fresh basil instead. My neice worked her way through college at the Olive Garden she says it's the best version she has ever had, and others who have had absolutely devour it. It's even better the next day.

1 cup celery, diced
3 garlic cloves
3 -4 chicken breasts, cooked and diced
4 cups chicken stock
salt, to taste
black pepper, to taste
16 ounces potato gnocchi
6 tablespoons flour
2 cups half-and-half
1 teaspoon fresh basil
1 cup fresh spinach, chopped
1 cup shredded carrot
1 cup freshly grated parmesan cheese, and romano use cheese to taste

Steps:

  • Heat butter and oil in large pot over medium heat. Add onion, celery, garlic, and carrots. Season with salt and pepper. Cook until tender (about 10 minutes).
  • Sprinkle flour into pot while stirring vegetables. Cook 3 minutes.
  • Stir in chicken broth gradually (one cup at a time).
  • Stir in half and half.
  • Add cooked chicken and bring to a simmer. Season with salt and pepper. Simmer for 20 minutes, stirring often.
  • Cook the gnocchi separately as says on the package, add gnocchi to the soup along with spinach. Simmer until spinach wilts. Stir in basil. Serve with freshly grated parmesan and romano cheese to taste.

This is very close to the Olive Garden soup. There's another recipe on the web, which was the basis of this recipe, however, I have changed it to use less cream. Still tastes good! I did end up using a little cornstarch to thicken. I guess you could sub heavy cream for the half-and-half to make it a little thicker without using cornstarch. The gnocchi is usually in the spaghetti section of the grocery store.

4 cups chicken stock
2 cups half-and-half
1 stalk celery, diced
1 garlic clove, chopped
1/2 carrot, shredded
1/2 onion, diced

Steps:

  • Saute the onion, celery, garlic, carrot in oil over medium heat until onion is translucent.
  • Add chicken, chicken stock, half and half, salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes.
  • Add spinach and cook for another 1-2 minutes until spinach is wilted.
  • (Heat to boiling and add cornstarch dissolved in 1-2 Tbsp water at this point if you want a thicker soup.).
  • Ladle into bowls and serve!

4 tablespoons flour
1 quart half-and-half
1 (14 ounce) can chicken broth

Steps:

  • Saute the onion, celery, and garlic in the butter and olive oil over medium heat until the onion becomes translucent. Add the flour and make a roux. Let the butter and flour mixture cook for about a minute before adding 1 quart of half and half.
  • Cook gnocchi according to package directions.
  • Into the roux, add in the carrots and chicken. Once the mixture becomes thick, add the chicken broth. Once the mixture thickens again, add the cooked gnocchi, spinach, and seasoning;, simmer until soup is heated through.
