REAL MINT SAUCE

Mint grows so freely that once you know the trick you never need buy mint sauce again.

Number Of Ingredients 5

bunch of mint
pinch salt
4 tbsp boiling water
4 tbsp white wine vinegar
1 level tbsp caster sugar

Steps:

  • Strip off the mint leaves, sprinkle with salt and chop finely.
  • Place into a jug, add the sugar and pour over the boiling water, stir and leave to cool.
  • Stir in the vinegar and taste.
  • Add more water or vinegar and adjust seasoning to suit your taste.

1 small bunch of mint , leaves picked and roughly chopped
½ small bunch of parsley , roughly chopped
1 tbsp capers
30ml extra virgin olive oil
1 tbsp light brown soft sugar
50ml sherry vinegar
1 lemon , zested

Steps:

  • Put the mint, parsley and capers in the small bowl of a food processor and blitz until finely chopped.
  • Add the oil, sugar, vinegar and lemon zest and blitz again until smooth. Season to taste and serve.

  • Whizz sugar and vinegar with mint until finely chopped. Tip into a serving bowl and set aside for 10 mins for the sugar to fully dissolve.
