BAILEYS IRISH CREAM MOUSSE PIE

Steps:
- 1. Beat egg yolks thoroughly. Add salt and Baileys, stir
- 2. Cook in top of double boiler until yolk mixture thickens. Cool. Beat egg whites until stiff.
- 3. Combine egg/Baileys mixture, egg whites, and 2/3 of Cool-Whip, using a folding motion. Fold in 3/4 cup of the chopped nuts. Scrape into a baked pie shell. Cover with remaining Cool-Whip. Sprinkle with remaining chopped nuts and chocolate shavings.
- 4. Chill for at least 4 hours before serving.

Steps:
- preheat oven to 350 degrees.
- combine cookie crumbs, butter and 3 tablespoons bailey's in a medium bowl.
- press evenly on bottom and up sides of 9 inch pie plate.
- bake 3 minutes.
- beat cream cheese, milk and remaining bailey's in a large bowl.
- add pudding mix beat until well blended and then add cool whip.
- spoon unto prepared crust and chill for 1-2 hours or until firm.
- just before serving garnish with additional whipped topping that is tinted green with food coloring and/ or chocalote curls.

You must try this! My family waits all year for me to make this for St. Pattie's Day. It's Oh So Rich and yummy. I use Bailey's because I think it's the best, but I imagine it would work with other Irish Creams as well.

Steps:
- In saucepan, sprinkle gelatine over milk. Let stand about 1 minute, then stir over low heat until gelatine is dissolved, about 5 minutes.
- Add chocolate and continue cooking, stirring constantly until chocolate is melted, then stir in vanilla.
- Remove from heat and stir occasionally, adding Bailey's about 5 minutes after removal from heat.
- When mixture forms mounds when dropped from a spoon, fold in whipped topping and turn into crust.
- Garnish with whipped topping and shaved chocolate curls if desired. Chill at least 4 hours before serving.

- In saucepan, sprinkle unflavored gelatine over milk. Let stand about 1 minute. Stir over low heat until gelatine is dissolved, about 5 minutes.
- Add chocolate and continue cooking, stirring constantly until chocolate is melted: stir in vanilla.
- Remove from heat and stir occasionally, adding Bailey's about five minutes after removal from heat. When mixture forms mounds when dropped from spoon (this may take quite awhile to happen- don't give up), fold in whipped topping.
- Turn into crust. Garnish with more whipped topping (or real whipped cream, later, by preference) and strawberries (if desired). Chill at least 4 hours before serving.

- Mix together the cookie crumbs and melted butter and press down in a lightly buttered 9 inch (23 cm) pie dish. Place in the refrigerator while you make the Mousse.
- In a medium pot whisk together the sugar and flour, then slowly add the milk, whisking as you add with the heat on low / medium until the mixture has become very thick, stirring constantly. Cover with plastic and set aside to cool.
- In a small pot mix the gelatine and whipping cream, let sit for 5 minutes. Then heat on medium / low and stir just until the gelatine dissolves, do not boil. Add a couple of tablespoons of the Baileys Mousse and stir to combine. Then fold into the remaining bowl of Baileys Mousse until combined.
- Just before serving beat the whole cream and powdered sugar, and decorate the set Mousse Pie*. Drizzle with melted chocolate if desired. Enjoy!

- Preheat oven to 350°F. In the bowl of a food processor, pulse the cookies until crumbled. Add the almonds and pulse 4-5 times in quick bursts. Pour in the melted butter and pulse just until combined.
- In a small microwave safe bowl, heat the Irish cream and espresso powder in the microwave on high power for 30-seconds. Repeat for 15-second intervals until the Irish cream is steaming, but not boiling. Add the chopped white chocolate to the hot Irish cream and set aside, stirring occasionally, until all chocolate is melted and the mixture is cooled.
- Whip the cream until foamy. Add the powdered sugar and vanilla and beat on high until firm peaks form. Spoon into a pastry bag and pipe onto the pie or dollop in a mound. Garnish with white chocolate curls, if desired.
