CLASSIC SPICY MEATLOAF
This is my family's favorite meatloaf recipe. Onion may be substituted for green onions (scallions).

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
- Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

SWEET AND SPICY MEATLOAF
Steps:
- Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
- Preheat the oven to 350 degrees F.
- Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
- In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
- In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
- When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.

- In a large skillet, brown the ground beef and pork. Drain and set aside. Wipe skillet clean. (You can use a Dutch oven instead of a skillet.)
- Add oil to skillet and heat over medium heat. Sauté onions for about 8 minutes. Add garlic and continue to sauté for 2 minutes.
- Add remaining ingredients and return cooked meat to skillet. Stir everything together well and cook over low heat for 1 1/2 hours.

- Cook your pasta according to package instructions, reserving ½ cup of the starchy cooking water before draining.
- Sauté the onion in a large skillet over medium-high heat in the extra virgin olive oil.
- Add your garlic to the pan and continue to sauté, stirring frequently so that the garlic doesn't burn.
- Cook for 4-5 minutes, or until the onions have sweated out a bit and start to turn translucent, add ground beef.

SPAGHETTI AND SPICY MEAT SAUCE RECIPE

- Pour the oil into a large, deep saucepan and heat on medium temperature.
- Add garlic to the oil and saute for 1 minute.
- Add ground beef to the pan and use a flat, wooden spatula to break it apart. Cook for 2 to 3 minutes or until just brown.
- Pour crushed tomatoes into the pan, then add the remaining ingredients. Stir to combine. Bring to a boil, then turn the temperature down to medium-low. Allow your spicy meat sauce to cook for 15 to 20 minutes.
- Fill a medium stock pot with water. Place on the stove and heat on high to boil. Add spaghetti noodles to the water and return to boil. Turn temperature down to medium and continue to cook for the time allotted on the packaging.
- Drain spaghetti in a large colander and rinse with cool water to reduce stickiness.
- Use a spaghetti fork to place into individual serving bowls. Cover the spaghetti with a large scoop of Spicy Meat Sauce and serve hot.
- Serve with a garden salad and garlic bread.

- Heat 2 tbsp oil in wok to 275°F.
- Stir-fry ginger and scallion 1 minute.
- Turn up heat to 425F, and add the meat.
- Stir-fry 3 minutes.
- Add sherry and soy sauce.
- Cook 1 minute, and remove from wok.
- Heat 2 tbsp oil in wok to 275°F.
- Add bean sauce, hoisin sauce, and sugar.
- Stir-fry 2 minutes.

- Serve in individual bowls, adding 1 tsp soy sauce& 1 tsp sesame seed oil to each bowl.

- Heat oven to 400 degrees. Slice spaghetti squash in half lengthwise and scrape out the seeds. Rub 1/2 tablespoon olive oil onto the cut side of squash and season with salt and pepper. Place cut side down on a large, rimmed baking sheet and cook for 45 to 60 minutes, until tender all the way through.
- Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add onion and carrot and cook for 2 minutes. Add turkey and garlic and cook until turkey is cooked through, breaking into pieces with a wooden spoon. Season with salt and pepper and add Italian seasoning.

SPICY SALAMI MOZZARELLA STICKS WITH VODKA SAUCE

- Form the sticks: Place two slices of salami on a cutting board so that they are overlapping and slightly longer than the mozzarella stick. Wrap up the mozzarella stick so it is completely covered in the salami and transfer, seam side down, to a parchment-lined rimmed baking sheet. Repeat wrapping the remaining mozzarella sticks with the salami. Refrigerate for 30 minutes.
- While the mozzarella sticks are chilling, place the flour, egg mixture and breadcrumbs in separate wide shallow containers.
- Working with one at a time, roll the mozzarella sticks in the flour and shake off any excess. Roll the sticks in the egg mixture, then in the breadcrumbs. Double coat by rolling the sticks in the egg mixture and breadcrumbs a second time. Arrange on a single layer on a rimmed baking sheet. Repeat with all of the sticks and refrigerate for 30 minutes.
- Fry the sticks: Preheat the oven to 200 degrees F. Pour the oil into a deep, heavy-bottomed pot and heat over medium heat until it reaches 350 degrees F. Meanwhile, set a wire rack inside a rimmed baking sheet. Working in batches, carefully drop the sticks into the oil and gently "swirl" the oil so they fry more evenly on all sides. Fry until they are light to medium brown, 3 to 4 minutes. Remove the mozzarella sticks with a slotted spoon or spider and lay them out in a single layer on the wire rack. Repeat until all are cooked. Keep warm in the oven if needed.
- Serve: Serve the mozzarella sticks with warm vodka sauce for dunking.

SPICY MEAT SAUCE

- Heat the olive oil in a large pot over medium heat. Add the onions, ground pork, red pepper flakes, and salt and cook, stirring constantly, until the meat is thoroughly cooked and the onions are soft and beginning to brown, about 15 minutes.
- Add the tomato paste and continue cooking for 5 minutes. Add the tomatoes and stir constantly until the sauce begins to boil. Continue cooking for 35 minutes, stirring every 5 minutes or so to prevent the sauce on the bottom of the pot from burning. Taste and season with additional salt, if desired.
