- Heat 1/4 cup of the broth in a saucepan over medium high heat. Add the garlic and onion and saute for 5 minutes. Add the carrots and saute for 5 minutes.
- Add the remaining broth and bring to a boil. Add the barley, lower the heat, cover, and simmer until the liquid is almost absorbed, about 50 minutes.
- Add the zucchini, parsley, oil, and lemon juice. Simmer for 5 more minutes; season with salt and pepper.

- Mince garlic with salt. Heat oil in a wok and fry garlic until fragrant and beginning to colour. Crack in the egg, allowing the white to firm before scrambling. Add rice and turn down the heat. Fry gently, mixing and tossing. Season with pepper, sugar and light soy sauce: the rice should be well seasoned, but not too salty. Add spring onions and, after a moment, the crabmeat, reserving a little to sprinkle over the finished dish, along with coriander.

CHICKEN AND RICE PRIMAVERA
This is a tasty skillet meal that is very quick to put together. You can substitute vegetables, if you like. I always use broccoli. I sometimes substitute the peas for a corn, carrot and asparagus mixture I find in the frozen food section. I love those bags that you just steam partially and then add to the skillet to cook until crisp-tender. I like to brown my chicken in butter so it's very flavorful.

- Heat butter in large skillet; add chicken; cook and stir until nicely browned; add salt, pepper and basil.
- Add broccoli, peas, carrots and onions; cook and stir until vegetables are tender-crisp.

- Prepare Spanish rice mix per the package instructions omitting the tomatoes.
- While rice cooks, sauté onions and bell peppers in a small amount of olive oil until soft and lightly caramelized.
- Add imitation crab, shrimp, and salad shrimp.
- Cook just until raw shrimp becomes opaque.
- Sprinkle mixture with half a teaspoon or so of Old Bay Seasoning.
- Combine cooked rice and seafood mixture.
- Add more Old Bay Seasoning, salt and pepper to taste.
- Enjoy!
