12 red potatoes, thinly sliced
1 1/2 pounds bulk Italian sausage
1 onion, chopped
4 cups low-sodium chicken broth
3 cups whole milk
2 cups half-and-half
1/2 teaspoon fresh or dried oregano
1/2 teaspoon red pepper flakes, or more to taste
Salt and freshly ground black pepper
Splash of heavy cream
2 bunches kale, picked over, cleaned and torn into bite-size pieces

Steps:

  • Bring a medium pot of water to a boil. Add the potatoes and boil until they're just starting to soften, then drain and set aside.
  • In a large pot, crumble and brown the Italian sausage with the onions over medium heat, about 5 minutes. Drain as much of the fat as you can (blotting the surface with paper towels helps). Add the chicken broth, milk, half-and-half, oregano and red pepper flakes to the pot with the sausage and onions, bring to a simmer and simmer for 30 minutes. Give it a taste and adjust the seasoning as needed with salt, pepper and more red pepper flakes if needed.
  • Add the potatoes and a splash of heavy cream for richness, then stir in the kale. Cover and simmer for an additional 10 minutes, then serve.

2 pounds bulk sweet Italian sausage
1 cup jarred sliced roasted red peppers
2 tablespoons fresh oregano, chopped
1 tablespoon fresh rosemary, chopped
4 cloves garlic, minced
1 large onion, sliced
Kosher salt and freshly ground black pepper
8 cups low-sodium chicken broth
Two 15.5-ounce cans cannellini beans, drained
One 28-ounce can diced tomatoes
2 cups chopped kale
1 cup heavy cream
2 tablespoons apple cider vinegar
Fresh Parmesan cheese, for serving, optional

Steps:

  • Heat the olive oil in an 8-quart Dutch oven over medium-high heat. Brown the sausage, breaking it into bite-size chunks as it cooks, 8 to 10 minutes. Remove with a slotted spoon to a paper towel-lined plate to allow excess oil to drain off.
  • Add the peppers, oregano, rosemary, garlic and onions to the pot. Season with a pinch of salt and pepper and cook until the onions are tender, about 5 minutes. Pour in the chicken broth, beans and tomatoes. Return the sausage to the pot and bring to a boil. Reduce to a low simmer and cook, uncovered, for 20 minutes.
  • Stir in the kale, heavy cream and apple cider vinegar. Taste and adjust the seasoning as needed. Serve with grated Parmesan cheese if desired.
  • To freeze, transfer the soup to containers with airtight lids, leaving space at the top as it will expand as it freezes. Allow the soup to cool completely before placing the lids on and freezing. Reheat until hot before serving and garnish with Parmesan cheese if desired.

8 ounce bulk Italian sausage
2 onions, chopped (about 2 cups)
1 teaspoon dried oregano, crushed
1 teaspoon fennel seeds

2 Yukon Gold potatoes (1 lb), cut into 1-inch pieces
8 cup chicken stock from Whole Poached Chicken with Bonus Stock, or purchased chicken stock
1 bay leaf (optional)
1 15-16 ounce can cannellini beans, rinsed and drained
1 large bunch kale, stemmed and leaves torn (10 to 12 cups)
2 tablespoon red wine vinegar
Grated Parmesan cheese

Steps:

  • Heat oil in an 8-quart stock pot or Dutch oven over medium-high. Add sausage and break it up with a wooden spoon into bite-size pieces. Let sausage pieces cook without stirring until brown on the bottom, 2 to 3 minutes. Using tongs, flip sausage pieces over and leave them until cooked through and golden brown, 2 to 3 minutes more.
  • Transfer sausage to a plate lined with paper towels, leaving the fat and oil behind in the pan. Cover sausage with aluminum foil to keep in any moisture; set aside.
  • Return pot to medium and add onions, oregano, fennel seeds, 1 teaspoon salt, and 1 teaspoon pepper. Cook, stirring often, until the onions are translucent and soft, 10 to 12 minutes. Add potatoes, stock, and, if desired, bay leaf. Cover and bring to boiling over high heat, then reduce to a simmer and cook until potatoes are fork-tender, 8 to 10 minutes.
  • Stir in beans, kale, and reserved sausage. Cook until beans are heated through. Fish out bay leaf, stir in vinegar, and season with salt and pepper.
  • Serve with a pile of freshly grated cheese on top.

1/2 pound smoked, cooked garlic sausage like kielbasa
4 tablespoons extra virgin olive oil
1 medium onion, diced
3 cloves garlic, minced
1 pound small boiling potatoes, peeled and sliced 1/2-inch thick
Salt and freshly ground black pepper to taste
4 cups, packed, very finely shredded kale leaves (about 1 bunch)
2 cups cooked kidney beans (see note)

Steps:

  • Slice the sausage into rounds about 1/2-inch thick. Heat two tablespoons of the oil in a heavy 3- to 4-quart saucepan, add the sausage and saute over medium heat until the sausage is just beginning to brown. Remove the sausages from the pan, draining well.
  • Add the onion to the pan and saute over low heat until it is soft but not brown. Stir in the garlic. Add the potatoes and six cups of water. Bring to a boil and simmer about 15 minutes, until the potatoes are tender.
  • Drain the potatoes, leaving the cooking liquid in the saucepan, and roughly mash them. Stir the mashed potatoes back into the liquid. Season with salt and pepper.
  • Add the kale, sausage, beans and 2 tablespoons olive oil to the soup. Bring to a boil and simmer until the kale has wilted, 6 to 8 minutes. Check seasonings and serve

200g Kabanos Polish sausage , chopped
1 tsp paprika , sweet or smoked
85g brown basmati rice

2l strong-flavoured beef stock
3 carrots , thickly sliced
100g shredded kale

Steps:

  • Fry the onions in the oil for 5 mins. Add the garlic and sausage, fry for a few mins more, then stir in the paprika, rice and thyme.

1 yellow onion, chopped
1 lb. sweet Italian sausage
2 cloves garlic
2 large or 3 small sweet potatoes, cubed or sliced into thin half moons
Kosher salt and pepper
4 cups low sodium chicken broth
4 cups chopped kale leaves
1 1/2 cups heavy cream
Fat pinch red pepper flakes

Steps:

  • Heat a dutch oven or other heavy bottomed pot over medium heat. Add the bacon pieces and cook until crisped, about 5 minutes. Remove with a slotted spatula or spoon and place on a paper towel to drain.
  • Add the onion and sausage to the pot, using your spatula to crumble the sausage. Cook until no pink remains, then drain the excess fat from the pot. Stir in the garlic and sweet potatoes. Sprinkle lightly with Kosher salt and black pepper.
  • Pour the chicken broth into the pot, increase the heat to high, and bring the mixture to a boil. Cook until the sweet potatoes are softened, 4-5 minutes.

1 lb spicy bulk sausage
1 lb kale, cleaned and ready to use
1 cup onion, diced
3 garlic cloves, minced
1 Thai red chili pepper, minced
8 cups chicken stock, preferably homemade
1 baking potato, diced
2 (15 ounce) cans navy beans, drained and rinsed
1 (15 ounce) can Rotel tomatoes & chilies
3 bay leaves
1 teaspoon dried thyme
1/2 teaspoon saffron (adds great flavor) (optional)

Steps:

  • Crumble sausage in a large soup pot or dutch oven, cast iron if you have it, and cook over medium heat until no longer pink. Stir in onion, garlic and chili pepper and cook until translucent taking care not to let them brown. Depending on your sausage, you may need to add a bit of extra virgin olive oil.
  • Add the kale and chicken stock- it will cook down rapidly so don't panic if it overwhelms your pot at first. Just give it a few minutes.
  • When the kale has cooked down a bit, add the tomatoes, potato, bay leaves, thyme and saffron. Let the soup simmer for about 30 minutes or until the potato is tender and the kale is cooked to the consistency you like.
  • Ladle into soup bowls and enjoy with crusty bread.

1 lb Raw Johnsonville brats Original Sausages (sliced into 1/2" thick rings)
1 medium onion (finely chopped)
1 large or 2 medium ripe tomatos (diced)

1 large garlic clove (minced)
1 can (15 oz white beans with their juice (or make your own))
8 cups low sodium chicken broth/stock
4 medium kale leaves (ribs removed and coarsely chopped)
Salt and Pepper to Taste
Grated parmesan to garnish and serve

Steps:

  • Heat a large heavy bottomed pot over med/high heat and add 2 Tbsp olive oil. Slice sausages and add to hot oil and saute 5 minutes or until golden brown.
  • Add diced onions and sauté another 3 minutes. Add carrots and tomatoes and sauté another 5 minutes until softened.
  • Add garlic and stir until fragrant (1 min) then add 8 cups chicken broth and bring to a boil.
  • Toss in beans and kale and cook until kale is tender (5 min). Season to taste with salt and pepper (I added 1 1/2 tsp salt and 1/4 tsp pepper) then remove from heat. Serve garnished with parmesan cheese.
