CHICKEN BACON RANCH POCKETS
Steps:
- Preheat oven to 350.
- On a parchment lined baking sheet (or grease the pan) flatten biscuits with your hands and fingers until almost double in size.
- Spoon a small amount of ranch dressing on one side of the biscuit. Top half with chicken, bacon and additional dressing.
- Fold in half and seal edges with a fork.
- Sprinkle with oregano.
- Bake for 12-15 minutes or until golden brown on bottom

- Preheat the oven to 425 degrees or a grill over medium high heat. In a small bowl whisk together the butter, ranch seasoning, and salt and pepper to taste.
- Coat 4 large squares of foil with cooking spray.
- Place the potatoes in a bowl and drizzle with 4 tablespoons of the ranch butter over the top. Toss to coat evenly.
- Place a chicken breast onto each of the foil squares and season with salt and pepper to taste. Divide the potatoes evenly among the 4 foil squares and arrange them around the chicken.
- Drizzle the remaining 2 tablespoons of butter over the chicken breasts. Fold the edges of the foil over the chicken and potatoes to make a packet.
- Bake for 45 minutes or grill for 30 minutes. Open the packets and sprinkle the cheese over the chicken and potatoes. Leave the packets open and return to the oven or grill for 2-3 minutes or until cheese melts. Sprinkle with bacon and parsley and serve.

- Preheat oven to 375 degrees.
- Warm cream cheese in the microwave for 20-30 seconds to soften. Place in a mixing bowl with Mozzarella cheese, chicken, bacon, and sun-dried tomatoes. Stir to combine and set aside.
- Lightly dust a work surface with flour and roll out crescent dough. Cut into 16 squares.
- Place about 2 teaspoons of cream cheese mixture onto each square.
- Press edges together until sealed.
- After stuffing and folding each pastry, place on a baking sheet. Whisk egg and water together and brush over the top of each pastry.
- Bake in preheated oven for 12-15 minutes or until puffed and golden brown. Cool 10 minutes before serving.

- Preheat the oven to 400˚F (200˚C). LIne a baking sheet with parchment paper.
- Use a knife or bench scraper to divide the dough into 4 equal pieces (about 4 ounces each). Lightly dust a clean surface with flour, then use a rolling pin to roll one portion of dough out to a roughly 7 x 10-inch rectangle (it doesn't need to be perfect) with a shorter end closest to you.
- Use a spoon to spread about 2 tablespoons of ranch dressing over the center of the dough rectangle, leaving a 2-inch border around the edges. Sprinkle ½ cup of mozzarella over the ranch dressing, followed by ¼ cup of bacon, then ½ cup chicken. Sprinkle another tablespoon of mozzarella and chives on top, if desired.
- Gently lift one of the longer sides of the dough up and over the filling, trying to wrap it as far over the filling as possible. Tuck a short end up and over the filling, as if rolling a burrito, and repeat with the other short end. Lift the other long side of dough up and over the filling as tightly as possible without tearing the dough, then lightly pinch and press the edges of the dough together to seal. Set the chicken bake seam-side down on the prepared baking sheet and repeat with the remaining ingredients to make 3 more chicken bakes.
- Use a pastry brush to generously brush the remaining ranch dressing over the tops of the chicken bakes, then sprinkle each with 1-2 tablespoons of mozzarella.
- Bake the chicken bakes until the tops are golden brown and bubbly and the dough has puffed up, 15-18 minutes. Let cool on the baking sheets for 5-10 minutes before serving.

CHICKEN BACON RANCH PITAS
I am a Full-Time college student and when I'm at school I sometimes get a Chicken Bacon Ranch Wrap so this recipe came from my love for those!

- 1. Spray a medium to large pan with non-stick cooking spray and then place over medium to medium-high heat.
- 2. While the pan is warming up, drain 2 cans of chicken adding to pan directly after draining.
- 3. Add real bacon bits and monterey chicken seasoning (I prefer McCormick's) into pan with the chicken.
- 4. After the chicken mixture is warmed through, transfer to a bowl and let cool for a couple of minutes.
- 5. With the chicken mixture still warm add in 4-6 ounces of colby jack cheese (if you don't like colby jack you can use shredded cheddar too) and mix together.
- 6. Then add in about 2/3 of a 16 ounce bottle of Ranch Dressing (which is about 10 ounces) to the chicken and cheese mix and stir.
- 7. Add 1 large spoonful, or as much you would like, of the chicken mix to a pita pocket and then a small handful of shredded lettuce onto the top.
- 8. Enjoy!
