Categories     main-dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

MINI MEATLOAF

Mini Meatloaf image

This easy Mini Meatloaf recipe can be made on a sheet pan or in muffin tins for a perfect portion-sized family dinner!

Provided by Stephanie

Categories     Main Course

Time 55m

Number Of Ingredients 17

1 Tablespoon butter
¼ cup yellow onion (diced)
¼ cup bell pepper (diced)
1 teaspoon minced garlic
1 egg
1/3 cup milk
1 teaspoon yellow mustard
1 teaspoon ketchup
1 teaspoon BBQ Sauce
½ Tablespoon Worcestershire sauce
½ teaspoon salt
1/4 teaspoon pepper
1/3 cup crushed Ritz (or Italian breadcrumbs)
½ cup cheddar cheese (shredded)
1 pound ground beef (85% lean)
½ cup ketchup (plus more for serving)
½ cup BBQ Sauce

Steps:

  • Preheat the oven to 350 degrees.
  • Sauté the vegetables: Melt the butter in a small saucepan over medium heat. Sauté the onions and peppers for 4 minutes. Add the garlic and sauté for 1 more minute. Remove and let cool.
  • Combine Wet ingredients: Whisk together the egg, milk, mustard, ketchup, BBQ Sauce, Worcestershire sauce, cheese, salt, and pepper in a large bowl.
  • Add remaining ingredients: Stir in the Ritz crackers, then add the cooled onions/peppers/garlic. Add the ground beef and gently mix until just combined. Don't overwork the meat or it will become tough.
  • Form into loaves: Divide the meat mixture into 4 equal parts and mold them into 5-inch loaves. Place on a parchment paper lined baking sheet (preferably a sheet that has raised edges to avoid overflow from drippings.) Combine the glaze ingredients and brush half of it over the meatloaf.
  • Bake Once/Remove Grease: Bake for 25 minutes and carefully remove it from the oven, there will be grease to remove. To do this, carefully transfer each meatloaf to a new parchment paper lined baking sheet using a spatula. OR, transfer to a plate and replace the original baking sheet with new parchment paper. (See PRO tips in notes section for an alternative method of handling the grease.)
  • Bake Twice: Brush remaining glaze on top of the meatloaf. Bake for 15 more minutes, the internal temperature should be 160 degrees.
  • Serve: I like to brush a little more ketchup on top prior to serving. Serve with mashed potatoes and roasted green beans or roasted carrots.

MINI MEATLOAF IN A MUFFIN TIN RECIPE

Mini Meatloaf in a Muffin Tin Recipe image

Meatloaf Muffins are a fabulous alternative to regular meatloaf. Kids just love them and mini meatloaf muffins cook much faster than traditional meatloaf.

Provided by Jamie Sanders

Categories     main dish

Time 35m

Number Of Ingredients 9

1 pound ground turkey or ground beef
1/3 cup breadcrumbs or oatmeal (Either works, but I now use oatmeal)
1/3 cup Parmesan cheese
1 egg
1 (8 ounce) can tomato sauce (Instead of the tomato sauce, I often substitute with around 1/4 cup of ketchup in the meat mixture and at least another 1/4 cup for the top. Personal choice to use the ketchup vs tomato sauce I do prefer the taste of ketchup - must be the added sugar.)
1/2 teaspoon garlic powder
Salt and pepper
several shakes of Worcestershire sauce (about a teaspoon)
A couple of handfuls of whatever other veggies you have on hand... (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils...)

Steps:

  • Preheat oven to 350 degrees.
  • Mix all the ingredients together in a bowl, but only use about ¼ of the tomato sauce/ketchup in the meat mixture. Reserve the rest for the tops of the meatloaf muffins.
  • Press the meat into the muffin cups (you should be able to get eight to 10 out of this amount of meat).
  • Top with a dollop of tomato sauce/ketchup on each one.
  • Cook for 30-35 minutes.
  • Serve two per person.

EASY MINI MEATLOAF MUFFINS

Easy Mini Meatloaf Muffins image

Homemade meatloaf with a yummy sweet twist. I didn't have any breadcrumbs for the traditional meatloaf, so I searched my cabinets and came up with this meatloaf. It was a huge hit with the kids. It's sweet but still a meatloaf. The cornmeal and brown sugar just made it out of this world! Also, once cooked, they are very easy to store and pack up for leftovers. Serve with some smashed potatoes and green beans.

SHEET PAN MINI MEATLOAF WITH VEGETABLES

Sheet Pan Mini Meatloaf with Vegetables image

Provided by Jessica Beacom

Time 50m

Number Of Ingredients 13

1 lb. lean ground beef
⅓ cup BBQ sauce, divided
½ tsp. garlic powder
½ tsp. onion powder
¼ tsp. dried thyme
½ tsp. salt
1 Pinch black pepper
1 lb. Brussels sprouts, trimmed (halved if large, quartered if really large)
1 large sweet potato, cut into ½-inch pieces (peeled, if desired)
2 cloves garlic, minced
2 Tbsp. olive oil
Salt and pepper
Optional: fresh parsley, chopped

Steps:

  • Preheat the oven to 400℉.
  • Line a large baking sheet with parchment paper or a silicone baking mat. Place the sweet potato cubes, Brussels sprouts, and minced garlic on the baking sheet. Drizzle oil over vegetables then gently toss to coat and sprinkle with salt and pepper before spreading them out so that they're in a single layer.
  • Place the baking sheet in the oven and roast the vegetables for 15 minutes.

  • Place the meatloaves on the pan and spread the remaining BBQ sauce over each one.
  • Return the baking sheet to the oven and bake for an additional 12-15 minutes or until an instant-read thermometer inserted into the thickest part of the meatloaves registers 165℉.

  • In a large bowl, add the grated onion, quick oats (1 cup), milk (1/2 cup), 2 eggs, kosher salt (1 teaspoon), black pepper (1/2 teaspoon), and soy sauce (2 teaspoons) and mix until well combined. Allow to sit for 3-5 minutes while the oats absorb some of the moisture.
  • Divide the mixture into eight parts and form them into loaf shapes. (I like to flatten the mixture in the bowl and use a knife to portion it out into 8 "wedges," kind of like slicing a cake, to get even amounts).

  • Adjust an oven rack to the middle position and heat the oven to 425 degrees. Stir cracker crumbs, milk, parsley, Worcestershire sauce, egg, mustard, onion powder, garlic powder, 1 teaspoon salt, and 1/2 teaspoon pepper together in a large bowl. Add ground meat and combine until uniform. Shape mixture into oval loaves (I doubled the recipe and got 10 mini loaves, so when I make the recipe without doubling it, I plan to shape into at least 5 loaves – they were definitely big enough to be perfectly filling!).
  • Heat oil in 12-inch nonstick skillet over medium heat until the oil is rippling. Add meatloaves (without letting them touch sides) and brown well on one side, 3-5 minutes. Carefully flip loaves over and tidy up edges using a spatula (I didn’t need to do this – my meatloaves managed to hold their shape really well). Brown on this side for another 2-3 minutes.
  • Meanwhile, mix glaze ingredients together until smooth. Transfer mini meatloaves to a foil-lined baking pan and spoon the glaze over the top of each meatloaf. Bake for 18-20 minutes, until the center of the loaf registers 160 degrees on an instant-read thermometer (or do like I do and cut one of the little babies open and if it looks done – pull ‘em out of the oven!).

SHEET PAN MINI MEATLOAVES WITH CRISPY BROCCOLI AND MUSTARD ...
The Best Ground Beef to Use for Meatloaf . I always choose 85/15 ground beef, which means the meat contains 85% lean meat and 15% fat, for making meatloaf. The fat content in 85/15 beef helps keep the meatloaf soft and juicy. Since meatloaf bakes in the oven, it can easily dry out with a leaner mixture, such as 5% or 10% fat content.
