The classic German Jägerschnitzel combines tender, crispy-fried breaded pork cutlets served with a deliciously rich bacon mushroom gravy! This is truly a hearty pork entree that the whole family will love any day of the week!

3 slices bacon ((thick-cut - chopped into small pieces))
2 Tbsp butter
1/2 cup onion ((diced, or use 1 tablespoon dried minced onion))
1 lb mushrooms ((cleaned, sliced - chanterelle, button mushrooms, or portabella))
1 Tbsp tomato paste
1 tsp Worcestershire sauce ((1-2 teaspoons, to taste))
1 Tbsp paprika
1/2 tsp each, salt & pepper ((to taste))
2 cups beef broth
oil for frying ((enough so that the bottom half of your pork is covered))
4 pork steaks ((or 2 thick cut pork chops cut into half-thickness, butterflied fully))
1/2 cup all-purpose flour
1/2 tsp each, salt & pepper
2 large eggs ((beaten))
3/4 cup plain breadcrumbs
parsley ((fresh, chopped - optional garnish))

Steps:

  • Fry the chopped bacon over medium-high heat until browning and the fat has been rendered.
  • Add 2 tablespoons of butter and melt with the bacon.
  • Add the diced onion and sliced mushrooms, saute for about 5 minutes or until the mushrooms are tender and the onion is translucent.
  • Add the tomato paste, seasoning (salt, pepper, paprika), Worcestershire sauce, and beef broth.
  • Whisk to combine and bring to a low boil. Reduce heat and simmer for 5-10 minutes.
  • The gravy should thicken while simmering. If it does not combine 1 tablespoon cornstarch with 1 tablespoon cold water to make a slurry. Whisk the cornstarch slurry into the gravy to thicken if needed. If your gravy is too thick, add 1 tablespoon of water at a time until your desired consistency is reached.
  • Using three shallow dishes, make a dredging station. Combine all-purpose flour with salt and pepper in the first, beat the large eggs in the second, and place plain breadcrumbs in the third.
  • Move each piece of pork individually through the dredging station steps. Start with coating the pork in flour, shaking off excess flour before moving to the next step.
  • Coat the flour-coated pork thoroughly with the beaten egg. Allow excess egg to drain off pork before moving to the next step.
  • Bread the egg-coated pork with the plain breadcrumbs. Press the breadcrumb into the pork gently, patting it onto the sides and all surfaces as needed.
  • Pan-fry the breaded pork in a deep skillet or frying pan over medium-high heat. Use enough oil so that the heated oil comes up a bit over halfway on the sides of the pork cuts. Cook for approximately 3 minutes per side.
  • Transfer the fried schnitzels to a paper towel-lined plate when done and repeat for each pork chop or pork steak. Schnitzels can be kept in a warmed oven while the remaining pork is fried.
  • Heat the gravy if needed before serving, then serve each schnitzel with a generous amount of gravy for a wonderful jagerschnitzel dinner.

Posted for World Tour 2006, this was always one of my favorites when I lived in Germany. Don't let the long ingredient list throw you; this is fairly easily put together and not difficult to make.

1 lb boneless pork or 1 lb veal cutlet
2 eggs (beaten)
1/2 cup breadcrumbs
1/4 cup flour
3 tablespoons oil
4 slices bacon (diced)
2/3 cup onion (chopped)
1/2 lb mushroom (sliced)
1 tablespoon tomato paste
1/2 cup water
1/2 cup dry wine
1 dash thyme
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon parsley
2 tablespoons sour cream

Steps:

  • Heat oil in a large skillet over medium high heat.
  • Pound cutlets with a meat tenderizer to flatten them; season cutlets with salt and pepper, dredge them in beaten eggs and then coat evenly with the bread crumbs that have been combined with the flour.
  • Place cutlets into skillet and fry until golden brown (1-2 minutes on each side); do NOT turn more than once as you will end up losing the coating if you turn too often.
  • Remove the meat from the skillet and drain on paper towels; keep the meat warm in the oven while you make the gravy.
  • Sauté bacon and onions until golden brown; add tomato paste and mushrooms, and sauté over a low heat until mushrooms are cooked; add wine, water and seasonings; let simmer for about 5 minutes.
  • Stir in the sour cream; pour gravy over Schnitzel just before serving.

Jagerschnitzel, or Hunter's Schnitzel, is as close to German comfort food as it gets. Pork cutlets served with a rich, creamy mushroom gravy, this recipe is as delicious as it is simple!

8 boneless pork chops
1/2 cup canola oil
1 cup flour
1 (8 ounce) can mushrooms
1 1/2 cups hot water
1 beef bouillon cube
1/2 cup sour cream
1 tablespoon cornstarch
2 slices bacon, chopped
1/2 medium onion, chopped
salt
pepper

Steps:

  • Heat oil in pan over medium-high heat.
  • Season pork chops with salt and pepper, to taste.
  • Dredge pork chops in flour, fry until golden brown.
  • Remove pork chops, keep warm.
  • After pork chops are done, reduce heat to medium and scrape bottom of the pan to get the good bits up.
  • Add bacon to the pan, cook for 3-4 minutes.
  • Add onion to pan, cook until translucent.
  • Add mushrooms (including water), cook for 5 minutes, stirring often.
  • Dissolve bullion cube in water, then add to pan.
  • Reduce heat, simmer uncovered for 20 minutes, stirring often. Mixture should reduce by half.
  • Combine cornstarch and sour cream, add to pan and mix well.
  • Heat gravy until warm, but do not boil.
  • Spoon gravy over pork chops, serve immediately.

In 1960's I recently returned from 2 weeks in the Bavarian region of Germany. I discovered Jagerschnitzel the first day and was hooked. I ate it at 4 different restaurants (from a five star restaurant down to a truck stop). It was different each time. This is an excellent version, I got from a Chef. He may add a little additional seasoning to the gravy to make it absolutely perfect. This is a delicious dish I ordered again and again. It is best served with French fries to clean up the remaining gravy and a nice garden salad Pork cutlets are pounded thin, breaded, and fried, then topped with a sour cream mushroom gravy.

1 cup breadcrumbs
1 tablespoon all-purpose flour
salt and pepper
2 tablespoons vegetable oil
4 pork cutlets (or pork steaks pounded thin)
1 egg, beaten
1 medium onion, diced
1 (8 ounce) can sliced mushrooms
1 1/2 cups water
1 beef bouillon cube
1 tablespoon cornstarch
1/2 cup sour cream

Steps:

  • In a shallow dish, mix together the bread crumbs and flour. Season with salt and pepper. Place the egg in a separate dish. Heat oil in a large skillet over medium-high heat. Dip pork steaks in egg, then coat with the bread crumb mixture. Fry in the hot oil until browned on both sides and cooked through, about 5 minutes per side.
  • Remove the pork to a platter and keep warm. Add onion and mushrooms to the skillet and cook until lightly browned. Pour in water and dissolve the bouillon cube. Simmer for about 20 minutes. Stir together the cornstarch and sour cream; stir into the skillet. Cook over low heat until thickened but do not boil. Spoon over the pork cutlets and serve immediately.
  • My Note: This is very close to the authentic one. I would not recommend using any type of seasoned bread crumbs because it will really change the way it should taste with the sauce. BUT I DO Play with me food, and the only changes I would make is the cornstarch. Try only 1/2 T. The Germans do have a thinner sauce. I loved this dish. It most authentically should be served with a cucumber/yogurt dressing salad and pommes frites (french fries) or spaetzle. And served with spatzee which is orange crush and coke. You'll feel like you're at a German fest. I've also made this with turkey or chicken breasts (pounded real thin). But My D/W have to admit she added a bit of onion powder and garlic powder to my flour/bread crumb mixture, and instead of using a can of mushrooms, She fried up fresh mushrooms in butter with the onions till soft, then added the cornstarch and followed with the water, bouillion and sour creme. My family of 9 loved this! SOOOOO much flavor. She also went all out German and served a German Spaetzle Dumplings (she got from this site) along side this Jagerschnitzel. The two dishes went together beautifully. This is easy to prepare, smells and tastes wonderful cooking-a winner of a recipe She like to do!

This is a delicious pork dish that my family enjoys. Makes about six good-sized servings. Serve with sides of apple sauce and red cabbage for a great German meal.

3 -5 lbs pork roast, cut into 3/4-inch-thick cutlets, about 6 cutlets
1 1/4 cups flour
1 tablespoon salt
1 tablespoon pepper
1/2 cup canola oil
1/2 piece chopped bacon
1 finely chopped onion
1/2 lb chopped mushroom
1/2 cup dry white wine or 1/2 cup water

Steps:

  • Pound the pork cutlets with a mallet until they are 1/4-inch thin. Combine 1 cup flour, salt and pepper in a large dish and dredge the cutlets in the flour mixture. Meanwhile, preheat the oven to 350°F.
  • In a large frying pan, place the thin cutlets in hot oil, and brown approximately five minutes on each side. Drain and place the browned cutlets in a casserole dish.
  • Add bacon, onion and mushrooms to hot oil in the frying pan, and simmer for approximately 10 minutes until the bacon,chopped onions and mushrooms are cooked. Add remaining 1/4 cup flour and 1/4 white wine to the pan to make gravy. Add remaining 1/4 cup liquid if necessary and cook over low heat until gravy is thickened.
  • Pour the bacon and onion/mushroom gravy over the cutlets in the casserole dish. Tightly cover the casserole dish and place in the preheated oven and cook for 30 to 35 minutes until tender.

  • Pound the pork chops between two sheets of plastic wrap with the flat side of a meat tenderizer until 1/4 inch thick. Lightly sprinkle both sides with salt and freshly ground black pepper.
  • Place the flour mixture, egg, and breadcrumbs in 3 separate shallow bowls. Dredge the pork chops in the flour, the egg, and the breadcrumbs, coating both sides and all edges at each stage. Be careful not to press the breadcrumbs into the meat. Gently shake off the excess crumbs. (Note: Don't let the schnitzel sit in the coating or they will not be as crispy once fried - fry immediately.) Note: Some regions of Germany make Jägerschnitzel without the breading. Simply pound the pork chops, salt and pepper them, fry them and serve them with the gravy.
  • Heat the oil to 330 degrees F (not hotter or the Schnitzel will burn before the meat is done, not lower or the Schnitzel will absorb the oil and be greasy). Use just enough oil so that the Schnitzels "swim" in it. Fry the Schnitzel for about 2-3 minutes on both sides until a deep golden brown. Transfer briefly to a plate lined with paper towels.
  • Serve immediately topped with Homemade Brown Mushroom Gravy and garnished with chopped fresh parsley. Avoid completely drenching the Schnitzel with gravy so that much of the Schnitzel remains crispy. Serve with Homemade German Spaetzle, French fries, or Homemade Swabian Potato Salad, and with a fresh leafy green salad or German Cucumber Salad.
