Steps:
- Place half of rosemary sprigs in a single layer in the center of a baking pan.
- Place sliced red onion ontop of the rosemary.
- Place salmon filet on top of the onion with skin side down.
- Sprinkle salmon with salt and pepper.
- Cover salmon with remainder of rosemary sprigs.
- Place lemon slices over rosemary.
- Drizzle olive oil over filet.
- Sprinkle with salt.
- In a preheated 500 degree oven, roast salmon for about 20 minutes or until cooked through.
- Serve salmon with onion and lemon.
FRESH ROSEMARY LANGOSTINO SALAD
This is a refreshing, light dish that can be used as a main protein for a summer meal or as an appetizer for a dinner with guests. If you have trouble finding langostinos you can always substitute shrimp. This is a gluten-free and dairy-free dish, so can be good when you are dealing with potential food allergies.

- Combine langostinos, red bell pepper, rosemary, sea salt, red pepper flakes, white wine, and balsamic vinegar, in respective order, in a large bowl. Toss until langostinos are evenly coated. Cover bowl with plastic wrap and refrigerate until flavors blend, 4 hours to overnight.

- To make the dressing: combine the garlic, balsamic vinegar, salt and pepper in a small bowl. Whisk to mix well, then add the olive oil and whisk until thoroughly mixed and emulsified. Taste the dressing for seasoning and set aside. In a medium bowl, combine the langostino, avocado, tomatoes and onion. Drizzle the lemon juice over and stir gently to thoroughly mix the ingredients. Stack a few of the lettuce leaves on a chopping board and loosely roll them up. Cut across the leaves to form strips. Repeat with the remaining lettuce. Arrange the lettuce on individual plates. Whisk the dressing to remix and pour it over the langostino salad. Stir to evenly coat the ingredients in dressing. Spoon the langostino salad over the lettuce and serve.
