Bean, Corn, and Tortilla Salad image

This dinner salad with warmed beans, corn, and salsa is a snap to put together.

1 can (15.5 ounces) pinto beans, drained and rinsed
1 package (10 ounces) frozen corn kernels (2 cups)
1/4 cup prepared medium tomato salsa, plus more for serving
1 bunch scallions, thinly sliced (1 cup)
1 ripe avocado, peeled, pitted, and cubed
3 plum tomatoes, thickly sliced
Coarse salt and ground pepper
1 bag (12 ounces) romaine hearts, cut into bite-size pieces
3 cups (3 ounces) broken baked tortilla chips
3/4 cup coarsely grated pepper Jack cheese

Steps:

  • In a medium microwave-safe bowl, combine beans, corn, and salsa. Microwave just until warmed through, 1 minute. Stir in scallions, avocado, and tomatoes; season with salt and pepper. Set bean mixture aside.
  • In a large bowl, toss lettuce and chips together. Divide evenly among plates; top with bean mixture and cheese. Serve immediately, topped with additional salsa, if desired.

1 cup chopped onion
1 tablespoon olive oil
1 cup chopped tomato
1 1/2 cups fresh corn or 1 1/2 cups frozen corn kernels
1 1/2 cups cooked black beans (15 ounce can, drained)
2 tablespoons fresh lime juice
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cups rinsed stemmed and chopped swiss chard or 2 cups spinach
2 cups crushed baked corn tortilla chips
8 ounces grated sharp cheddar cheese
2 cups prepared mexican-style salsa

Steps:

  • Preheat the oven to 350°F.
  • Sauté the onions in the oil for about 8 minutes, until translucent.
  • Stir in the tomatoes, corn, black beans, lime juice, salt, and pepper and continue to sauté for another 5 to 10 minutes, until just heated through.
  • Meanwhile, in another saucepan, blanch the greens in boiling water to cover for 1 to 3 minutes, until just wilted but still bright green.
  • Drain immediately and set aside.
  • Prepare an 8x8-inch casserole dish or baking pan with a very light coating of oil or cooking spray.
  • Spread half of the crushed tortilla chips on the bottom.
  • Spoon the sautéed vegetables over the tortilla chips and sprinkle on about two-thirds of the grated cheddar.
  • Arrange the greens evenly over the cheese and spoon on half of the salsa.
  • Finish with the rest of the tortilla chips and top with the remaining salsa and cheddar.
  • Bake for about 35 to 40 minutes, until the cheese is bubbling and beginning to brown.
  • Serves 4 to 6.
  • Try serving this with a simple tossed salad, perhaps with avocado.
  • Try Pineapple Buttermilk Sherbet for dessert.

  • add all beans together.
  • add red and green bell pepper.
  • add red onion.
  • add all ingridents after cilantro in bowl and whisk.
  • toss dressing with beans and veggies.
  • add cilantro.

This is a really good lower fat version of a black bean salad I found in a magazine. It is really easy to make!

1 tablespoon olive oil
3 tablespoons red wine vinegar
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried basil
2 (16 ounce) cans black beans, rinsed and drained
4 green onions, sliced thinly
2 roma tomatoes, chopped
1 cup frozen green beans, thawed

Steps:

  • Make the dressing first, and let it sit while you are rinsing the beans, chopping the tomatoes etc.
  • Once all the veggies are combined, drizzle the dressing over it.
  • Cover and refrigerate for one hour.
