1 large package of frozen hash brown potatoes
2 cans cream of chicken soup
1, 8 ounce container of sour cream
2 cups of grated Cheddar cheese
Salt and pepper
4-6 chopped green onions
1 cup of crushed corn flakes

Steps:

  • Thaw potatoes in large bowl. Combine soup, sour cream, and 1 1/2 cups grated cheese; mix together, then add to potatoes. Mix well. Pour in buttered oblong dish. Bake at 350 degrees for 45 minutes. Then add rest of cheese on top with crushed corn flakes. Return to oven until cheese melts, about 10 minutes.

4 small baking potatoes, peeled
1 tablespoon margarine, melted
1 teaspoon olive oil
1 teaspoon dried basil
3 tablespoons fresh breadcrumbs
3 tablespoons grated parmesan cheese
1 1/2 teaspoons water

Steps:

  • Preheat the oven to 400*.
  • Spray a baking sheet with vegetable cooking spray.
  • Set aside.
  • Cut each potato in half lengthwise.
  • Cut each half diagonally into 1/4 inch thick slices, keeping slices together.
  • Using a wide spatula, place each potato half on prepared baking sheet.
  • Press with fingers to fan slices.
  • In a cup, combine the margarine, oil and basil.
  • Mix well.
  • Brush evenly over potatoes.
  • Bake for 30 minutes.
  • In another cup combine bread crumbs, parmesan and water.
  • Mix well.
  • Sprinkle evenly over potatoes.
  • Bake until browned and tender, about 10 to 15 minutes.
  • Serve immediately.
