JOE'S " KALE AND SPINACH" SOUP
This is a soup designed to warm the heart, and quickly feed the family. I was in the kitchen one day and threw together this soup.

Steps:
- Chop up the 1/2 pound of bacon and add to a 5 quart dutch oven and cook. After bacon is crispy, drain off the excess bacon grease.
- Chop up the two onions and add to the pot over a medium heat. Also add the garlic, salt and pepper at this time.
- After the onions and bacon have started sizzling, add the mushrooms and carrot and allow to infuse the flavors of the onions and bacon.
- Then add the kale and spinach, the 3 cans of chicken broth, and allow to boil for about 20 minutes. Make sure the kale and spinach have cooked down enough before adding the cream of chicken soup.
- You may if you wish add a little water to extend the amount of soup desired.
- Add salt and pepper to taste.

Steps:
- Sauté onions, carrots, and celery in olive oil for 5-10 minutes until slightly tender.
- add kale and spinach and cool until wilted.
- Add everything else and bring to a boil, stirring occasionally.
- turn heat to low and summer for 15-30 minutes or until all veggies are fully cooked.

Steps:
- Crack the eggs into a small bowl and add the Tabasco, salt, basil, and pepper. Whisk just enough to combine; you should still see large bubbles. Set aside.
- Warm the oil and butter in a large skillet over medium heat until the butter melts. Add the onion and sauté until soft but not beginning to brown, about 4 minutes. Add the ground beef and continue cooking until uniformly brown, breaking the meat into small pieces as it cooks. Cover with the spinach, place a lid over the mixture, and cook for about 3 minutes, just until the spinach wilts. (If using frozen spinach, cook, covered, for 1 minute, just to take off its raw edge.)
- Stir the spinach into the meat, cooking briefly to eliminate excess liquid if the mixture seems watery. Pour the egg mixture over all, stirring with a spatula from the bottom until the eggs begin to set. Remove from the heat and stir a few more times, as the eggs cook through from the residual heat. Serve immediately.
ONE-POT SPINACH BEEF SOUP
Steps:
- In a 6-qt. stockpot, cook beef and garlic over medium heat until beef is no longer pink, breaking up beef into crumbles, 6-8 minutes; drain. Stir in broth, tomatoes and seasonings; bring to a boil. Stir in pasta; return to a boil. Cook, uncovered, until pasta is tender, 7-9 minutes., Stir in spinach until wilted. Sprinkle servings with cheese.

- 1. In a large pot, over medium-high heat, warm the olive oil. Add the onions and garlic and sauté until transparent.
- 2. Add 1/2 of the kale, spinach and arugula and cook until the leaves begin to wilt. Add the remainder of the greens to those already in the pot and continue to cook until all the greens have wilted and reduced in volume (take care not to overcook the greens you only want to wilt them. Overcooking will reduce the nutritive value of this soup).
- 3. Add both cans of the coconut milk, stirring to incorporate it in the greens. Let cook 2-3 minutes.
- 4. Working in batches, transfer some of the greens and coconut milk mixture to a blender. Begin to blend on low and gradually increase the power. Through the feeder add vegetable broth and continue to blend until completely smooth. Feel free to use more or less, depending on whether you want a thick or thin bisque. Transfer the blended mixture into a large container.
