FIRE-ROASTED CORN SALSA
Fire-roasted corn and jalapenos come together with cilantro, tomatoes, and lime for a perfect summertime salsa. Serve with tortilla chips.

Steps:
- Combine tomatoes, onion, cilantro, lime juice, and cumin in a large bowl.
- Preheat an outdoor grill to medium heat and lightly oil the grate.
- Coat corn and jalapeno peppers with olive oil.
- Place corn and jalapenos on the preheated grill and cook, turning every 3 minutes, until corn is charred, about 15 minutes total. Transfer to a cutting board and let cool 5 minutes.
- Dice jalapenos and cut corn kernels from the cob. Add jalapenos and corn kernels to the bowl of tomato-onion mixture; stir until well combined. Season with salt and pepper.

ROASTED CORN SALSA
This is a "gotta try" recipe. You won't believe the flavors! It takes a little time to grill the corn, but it's well worth the extra effort. This is a perfert summer recipe when there's an abundance of tomatoes and corn is at its sweetest.

Steps:
- Peel back husks of corn but do not remove; only remove silk.
- Replace husks and tie with kitchen string.
- Place corn in a bowl and cover with water; soak for 20 minutes.
- Drain.
- Grill corn, covered, over medium-high heat for 20-25 minutes or until husks are blackened and corn is tender, turning several times.
- Cool.
- Remove corn from cobs and place in a bowl.
- Add tomatoes, onion, cilantro, limejuice, peppers, salt and pepper.
- Serve with tortilla chips.

AVOCADO AND CORN SALSA

- 1. Place the avocado in the bottom of a nonreactive mixing bowl and gently toss it with 2 tablespoons of the lime juice. Spoon the tomato on top of the avocado.
- 2. Cut the kernels off the corn. The easiest way to do this is to lay the cob flat on a cutting board and remove the kernels using lengthwise strokes of a chef's knife. Add the corn kernels to the mixing bowl. The salsa can be prepared to this stage up to 2 hours ahead. Refrigerate it, covered.
- 3. Just before serving, add the jalapeño(s) and cilantro to the mixing bowl and gently toss to mix. Taste for seasoning, adding more lime juice as necessary and season with salt and pepper to taste; the salsa should be highly seasoned.
ROASTED CORN AND BLACK BEAN SALSA
Roasted corn and fresh ingredients make this salsa a delicous snack with chips, or a great topper for any of your mexican/spanish dishes. I made it for some friends on "Fiesta Night", there were NO left overs- They were eating it by the spoonfuls! I hope you enjoy it just as much as we did. Also has a very light and fresh flavor.

Steps:
- Roast corn in oven for 1- 11/2 hours at 400 degrees F. Let cool before removing corn kernals from cob in a bowl.
- In a medium bowl place rinsed and drained black beans, roasted corn kernals, chopped onion, minced garlic, chopped cilantro, jalepeno, tomatoes, and salt.
- Cut lime in half and squeeze juice over ingredients.
- Use small hole strainer, pour salsa into strainer over mixture and press down to squeeze out all the juice you can. I throw away the rest, so do what suits your taste the best.
- Mix all ingredients thoroughly, add more lime juice or salt as needed for desired consistancy/ taste.
