CRUNCHY SUPERFOOD SLAW RECIPE

Number Of Ingredients 15

Ingredients

2 tbsp macadamia nut oil (or flaxseed oil)
1 tbsp sesame oil (not the toasted kind)
3 tablespoons raw honey
2 tablespoons rice wine vinegar (unflavored/unsweetened)
Juice of 2 limes (about 1 1/2 tablespoons)
2 tablespoons almond butter or natural peanut butter
1/2 tsp salt
A few dashes of hot sauce for heat (optional)
4 cups shredded cabbage
2 carrots, shredded
1 apple, peel on, cored and julienned
1 bunch green onions (about 8), finely chopped
1 handful cilantro, chopped
1/2 cup sliced almonds
1/3 cup hemp seeds

Steps:

Whisk all dressing ingredients in the bottom of a large bowl. Add all salad ingredients and toss well to coat.

Ingredients

6 tablespoons rice vinegar
6 tablespoons vegetable oil
5 tablespoons creamy peanut butter
3 tablespoons soy sauce
3 tablespoons (packed) golden brown sugar
2 tablespoons minced peeled fresh ginger
1 1/2 tablespoons minced garlic
5 cups thinly sliced green cabbage
2 cups thinly sliced red cabbage
2 large red or yellow bell peppers, cut into matchstick-size strips
2 medium carrots, peeled, cut into matchstick-size strips
8 large green onions, cut into matchstick-size strips
1/2 cup chopped fresh cilantro

Steps:

Whisk first 7 ingredients in small bowl to blend. (Dressing can be made 1 day ahead. Cover and chill. Let stand at room temperature 30 minutes before continuing.)
Combine remaining ingredients in large bowl. Add dressing and toss to coat. Season with salt and pepper and serve.

½ Savoy or white cabbage , quartered, cored and shredded
1 apple , cored and grated
2 carrots , cut into matchsticks
½ red onion , finely sliced
100g pot fat-free Greek yogurt
juice ½ lemon
2 tsp cider vinegar
2 tsp Dijon mustard

Steps:

Mix the cabbage, apple, carrots and onion in a large bowl. In a separate bowl, mix the yogurt, lemon juice, vinegar and mustard. Season, then pour over the vegetables. Give everything a good stir to coat in the dressing and eat immediately, or chill until you are ready to serve.
