CAMPFIRE TACO SALAD



Campfire Taco Salad image

Served in a corn chip bag, this easy outdoor meal from Jean Komlos of Plymouth, Michigan is flavorful and fun. "My neighbor entertained Girl Scouts with this clever recipe," she says.

Number Of Ingredients 6

6 packages (1 ounce each) corn chips
1 can (15 ounces) chili without beans
3 cups shredded cheddar cheese
3/4 cup sour cream
1 jar (8 ounces) mild salsa
1/2 medium head iceberg lettuce, shredded

Steps:

  • Cut the top off each bag of chips; set aside. Place chili in a saucepan; cook on a grill over medium heat for 10 minutes or until heated through, stirring occasionally. Spoon about 2 tablespoons of chili into each bag of chips. Top with cheese, sour cream, salsa and lettuce.

I haven't tried this yet, but I found this recipe in a TOH mag from last summer and thought it looked like a novel way to serve salad to kids (or husbands!) while camping.

6 (1 1/4 ounce) bags snack-size corn chips
1 (15 ounce) can mild chili
shredded cheddar cheese
sour cream
salsa
iceberg lettuce, shredded

Steps:

  • Cut tops off each bag of chips; set aside.
  • Heat chili in saucepan until completely heated through, stirring occasionally. (or heat in microwave).
  • Spoon about 2 tablespoons chili into each bag of chips.
  • Top with cheese, sour cream, salsa and lettuce.

1 pound ground beef
1 envelope reduced-sodium chili seasoning mix
1/4 teaspoon pepper
1 can (10 ounces) diced tomatoes and green chiles
1 can (15 ounces) Ranch Style beans (pinto beans in seasoned tomato sauce)
5 packages (1 ounce each) corn chips
Toppings: Shredded cheddar cheese, sour cream and sliced green onions

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, breaking into crumbles, 6-8 minutes; drain. Stir in chili seasoning mix, pepper, tomatoes and beans; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 20-25 minutes, stirring occasionally., Just before serving, cut open corn chip bags. Add beef mixture and toppings.

  • In a medium foil pan, place the thawed hamburger and place over the fire. Once it begins to cook, using a metal spatula stir the meat to separate into smaller chunks and continue to stir every couple minutes until the meat is browned.
  • Because the meat is cooking over a campfire there shouldn't be excess grease but if there is, drain off that grease into a styrofoam cup or onto a paper plate to discard into the trash. See campfire cooking safety tips.
  • Place hamburger back over the fire sprinkling the taco seasoning and 3/4 cup water and mix until coated. Cook, stirring occasionally, for approximately 5 minutes longer or until the seasoning has thickened and the water has nearly evaporated.
