Brown-Rice and Mushroom Soup image

Uncooked grains of brown rice are lightly toasted, finely ground, and then added to this cremini-and-shiitake mushroom soup, giving it its thick consistency.

3/4 pound cremini mushrooms
3/4 pound shiitake mushrooms
6 cups low-sodium canned or Homemade Chicken Stock, skimmed of fat
3/4 cup uncooked brown rice
3 large shallots, peeled and finely diced
1 tablespoon tomato paste
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon freshly ground pepper
3 tablespoons finely chopped flat-leaf parsley
Olive-oil cooking spray

Steps:

  • Remove stems from mushrooms, and place in a medium saucepan; reserve caps. Add stock; bring to a boil over medium-high heat. Reduce to a simmer, and cook, covered, 15 minutes. Remove pan from heat; set aside. Cut cremini caps into small wedges and shiitake caps into 1/4-inch-thick strips; reserve.
  • Cook 1/2 cup brown rice according to the package directions, and set the rice aside.
  • Place remaining 1/4 cup brown rice in a saute pan over medium-high heat; cook until grains are lightly toasted and begin to pop, 3 to 5 minutes. Transfer rice to a spice grinder; grind until fine and powdery, and set aside.
  • Coat a low-sided 6-quart saucepan with cooking spray, and set over medium heat. Add shallots, and cook, stirring, until translucent. Add tomato paste; stir to combine. Add reserved mushroom caps; saute until tender and mushrooms release some liquid.
  • Strain reserved stock into mushroom mixture, and discard solids. Raise heat to medium high; add ground rice and the nutmeg. Cook, stirring occasionally, until soup has slightly thickened, about 15 minutes. Add reserved cooked rice, and stir to combine. Add the pepper; garnish with parsley. Serve hot, or store in an airtight container, refrigerated, up to 3 days; reheat before serving.

Vegetable broth, garlic, mushrooms, and a bit of scallion make this brown rice side dish a treat in its own right, and not just a bed of grain for other dishes.

1 tablespoon olive oil
3 to 4 cloves garlic (minced)
1 1/2 cups brown rice (see Note following recipe box, rinsed)
32- ounce carton low-sodium vegetable broth
8 ounces brown mushrooms (baby bella - aka cremini or shiitake, or a combination)
2 to 3 cloves scallions (thinly sliced)
Salt and freshly ground pepper to taste (optional)

Steps:

  • Heat the oil in a large saucepan. Add the garlic and sauté over low heat until golden, about 2 minutes.
  • Add the rice and broth. Bring to a slow boil.
  • Stir in the mushrooms, then lower the heat and simmer gently until the broth is absorbed, about 30 minutes. If the rice isn't tender to your liking, add 1/2 cup water and simmer until absorbed.
  • Stir in the scallions and season gently with salt and pepper (or omit). Let the rice stand off the heat, covered for 10 minutes or so before serving.
  • Note: Try fragrant brown Basmati, which makes it extra tasty. Though any long- or medium grain variety, or even an exotic rice blend, work well.

Steps:

  • In large Dutch oven, melt butter over medium-high heat.

1 1/2 cups lentils, picked over and rinsed
1 cup brown rice
1 (2 lb) can tomatoes, drained,reserving juice,and chopped

1 onion, chopped
1 stalk celery, chopped
3 cloves garlic, minced
1/2 teaspoon crumbled dried basil
1/2 teaspoon crumbled oregano
1/4 teaspoon crumbled dried thyme
1 bay leaf
1/2 cup minced fresh parsley
2 tablespoons cider vinegar
1 lb smoked sausage (optional)

Steps:

  • Combine broth, 3 cups water, lentils, rice, tomatoes with reserved juice, carrots, onion, celery, herbs and sausage and bring to boil (do not add parsley and vinegar).

1 8-ounce russet potato, peeled, diced

Steps:

  • Combine chicken broth and rice in small saucepan. Cover and simmer over medium-low heat until rice is tender and liquid is absorbed, about 50 minutes.
  • Meanwhile, soak mushrooms in 1 1/2 cups hot water until soft, about 20 minutes. Drain mushrooms, reserving soaking liquid. Cut off mushroom stems and discard. Thinly slice mushrooms.
  • Melt 1 tablespoon butter in heavy large saucepan over medium-high heat. Add mushrooms and sauté until tender and golden brown, about 5 minutes. Transfer to small bowl. Melt remaining 1 tablespoon butter in same pan. Add onion, garlic, rosemary and thyme and sauté until onion is very tender, about 10 minutes. Mix in potato, beef stock and reserved mushroom soaking liquid. Cover and simmer until potato is very tender, about 15 minutes.
  • Transfer soup to blender in batches and puree until smooth. Return to saucepan. Stir in wild rice, mushrooms, 3/4 cup milk and Madeira. Cover and simmer 15 minutes to blend flavors. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Return soup to simmer.) Thin with additional milk if desired.

3 Tbsp. unsalted butter
1-1/2 cups sliced cremini mushrooms
1 lb. fresh asparagus, trimmed and cut into 1/2-inch pieces
32 oz. low-sodium chicken broth
1 cup water
1 tsp. kosher salt
1/2 tsp. freshly cracked black pepper
2 cups cooked brown rice

Steps:

  • In a large saucepan sauté the yellow onions and green onions in the butter until softened. About 5 minutes. Then add the mushrooms and cook until tender. About 5 minutes. Add the asparagus, broth, water, salt, and pepper and simmer covered for about 20 minutes.
  • REMOVE the lid and puree the soup with a hand blender until it is a nearly perfectly smooth consistency. Then, add the rice and bring the soup to a boil for 2 minutes. Remove the soup from the heat and allow to cool for 5 minutes. Serve hot.
