Steps:
- Halve 2 large skinless chicken breasts through the middle then place the 4 pieces between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin.
- Dip in 2 beaten eggs, then 75g breadcrumbs, mixed with half of the 75g grated parmesan. Set aside on a plate in the fridge while you make the sauce.
- Heat 1 tbsp olive oil and cook 2 crushed garlic cloves for 1 min, then tip in half a 690ml jar passata, 1 tsp caster sugar and 1 tsp dried oregano. Season and simmer for 5-10 mins.
- Heat grill to High and cook the chicken for 5 mins each side, then remove.
- Pour the tomato sauce into a shallow ovenproof dish and top with the chicken.
- Scatter over torn pieces of half a 125g ball light mozzarella, and the remaining grated parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling.
- Serve with vegetables or salad and some pasta or potatoes, if you like.

- Place the chicken breasts between cling film sheets and lightly bat, until about half to one centimetre/quarter to half an inch thick. Season with salt and freshly ground black pepper. Dust in flour to coat thoroughly, tapping away any excess.
- Mix together the breadcrumbs and parmesan.
- Dip the flattened chicken breasts (escalopes) in the beaten egg, followed by the Parmesan breadcrumbs.

- Preheat oven to 450 degrees F and line large baking sheet with unbleached parchment paper or silicone baking mat. Cut each chicken breast in half lengthwise. You should end up with 8 thin chicken cutlets that do not require pounding.
- In a large shallow bowl, combine almond flour, Parmesan cheese, oregano, garlic powder, salt and pepper. Stir with a fork.
- Dip each cutlet into breading on both sides by pressing on it and repeating one more time (so breading sticks better). Place on a baking sheet. Spray with cooking spray and bake for 25 minutes. Then broil at 500 degrees F until golden brown, about 5 minutes.

- Preheat the oven to 450 degrees F. Mix the mustard, thyme, 1/2 teaspoon salt and the cayenne in a medium bowl. Add the chicken breasts and turn to coat completely; set aside. In a medium shallow bowl, combine the parmesan and panko. Dredge the chicken pieces in the panko mixture, coating evenly and heavily, and pressing the coating into the meat. Put the chicken on a rack set over a baking sheet, spray with a quick burst of cooking spray and put the sheet in the middle of the oven. Bake until the chicken is golden and cooked through, 15 to 20 minutes. Let rest 5 minutes before cutting or serving.

- Heat oven to 375°F.
- Combine bread crumbs, cheese and parsley in shallow dish. Mix dressing and pepper in separate shallow dish. Dip chicken, 1 breast at a time, in dressing mixture, then in crumb mixture, turning to evenly coat both sides of each breast with each ingredient.
- Heat oil in large ovenproof skillet on medium-high heat. Add chicken; cook 2 min. on each side or until lightly browned on both sides. Place skillet in oven.
- Bake 20 min. or until chicken is done (165°F).
PARMESAN BAKED CHICKEN
Steps:
- Heat oven to 350 degrees.
- Whisk egg together and pour into shallow dish. Mix parmesan cheese, thyme and oregano together in a separate shallow dish. Working one at a time, coat chicken breast in egg and then cheese mixture. Put coated chicken breast in a casserole dish.
- Spoon marinara sauce over each chicken breast. Top with shredded mozzarella.
- Bake for 20 minutes or until chicken is cooked through and cheese is melted.

- Preheat oven to 400 degrees F.
- Season chicken on both sides with salt and pepper. Dredge each breast in the flour and tap off excess, then dip in the egg and let excess drip off, then dredge on both sides in the bread crumbs.
- Divide the oil between 2 large saute pans and heat over high heat until almost smoking. Add 2 chicken breasts to each pan and cook until golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and top each breast with some Tomato Sauce, a few slices of the mozzarella, salt and pepper, and a tablespoon of Parmesan. Bake in the oven until the chicken is cooked through and the cheese is melted, about 5 to 7 minutes. Remove from the oven and garnish with basil or parsley leaves.
- Heat olive oil in a medium saucepan over medium heat. Add onions and garlic and cook until soft. Add pureed tomatoes with their juices, crushed tomatoes, tomato paste, 1 cup water, bay leaf, parsley, Cubano pepper, and bring to a boil. Season, to taste, with salt and pepper. Reduce heat and cook until slightly thickened, about 30 minutes.
CHICKEN PARMESAN

- Mix together the eggs, salt, garlic, and 1 tablespoon parsley. Place the 4 chicken breasts in a gallon-sized plastic storage bag. Pour the egg mixture over the chicken breasts and coat well. Allow the chicken to marinate for 15 minutes.
- Mix together panko, flour, and 2 tablespoons parsley. Remove the chicken from the bag and coat in the panko mixture.
- In a large skillet, pour vegetable oil deep enough to cover the chicken breasts. Heat the oil on medium heat until hot. Test the oil by dropping a spritz of water onto the oil. If the water sizzles, the oil is ready to use. Add the chicken breasts to the oil, cooking the chicken 4 to 5 minutes per side, until golden.
- Preheat oven to 350˚.
- While chicken is cooking, add marinara sauce to an oven-proof skillet. Once the chicken is cooked, place each piece on top of the marinara sauce. Top each breast with 2 slices of fresh mozzarella and freshly grated parmesan cheese.
- Place chicken in the oven and bake for 15 minutes. After 15 minutes, top with shredded mozzarella and allow to melt.
- Serve warm over cooked pasta.
