1/4 cup sugar
1 teaspoon salt
4 cups flour
1 1/2 teaspoons bread machine yeast
1 egg

Steps:

  • Add ingredients in order listed, except for the egg and 1 T. water that is for the egg wash later.
  • Select dough/pasta setting when cycle is complete, remove dough from machine to a lightly floured surface.
  • Divide dough into 3 equal portions, divide each portion into 6 balls.
  • Turn balls in hands folding edge under to make a circle.
  • Press ball flat between hands.
  • Place on greased cookie sheet pressing to a 31/2 inch circle.
  • Let rise 30 minutes or until double in volume.
  • Combine 1 slightly beaten egg with 1 tblsp.
  • water and brush on buns.
  • Sprinkle with sesame seeds.
  • Perfect buns every time.
  • Bake at 350 for about 10 minutes or until lightly brown.

This recipe is easy and foolproof. It makes a soft and tasty bun with a slightly flaky crust. This is a combination of several recipes I've tried, but I've changed it to suit our tastes.

1 1/4 cups milk
1/4 cup white sugar
1 tablespoon fast rising yeast or 1 tablespoon bread machine yeast
1/4-1/3 cup olive oil
3 3/4 cups bread flour
1 teaspoon salt
1 egg, lightly beaten

Steps:

  • Place the ingredients in bread machine pan in the following order: milk, oil, sugar, salt, beaten egg, and flour.
  • Make a little well in the flour and add the yeast to flour.
  • For rolls, select Dough Setting and press start.
  • Shape dough into rolls when cycle is completed (my dough cycle is 2 hrs) and place dough rounds unto a lightly floured cookie sheet about 1 inch apart.
  • Cover and let rise for about 45 minutes in warm draft free area (I let mine rise in a slightly warmed oven with the light bulb on).
  • When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.
  • Cool on cooling rack for 20 minutes, and once cooled it can be stored in plastic bag.
  • for up to 1 week.
  • ********IF USING A KITCHEN AID STAND MIXER USE THE FOLLOWING STEPS:.
  • Dissolve 1 tblsp. sugar and the yeast in 1/4 cup warm water.
  • Scald 1 cup milk.
  • In large mixing bowl combine sugar, oil, salt and milk. Cool to luke warm.
  • Stir in eggs and yeast.
  • Gradually add enough flour to form a semi-stiff dough, beating well after each addition.
  • Once dough comes together in ball, take out dough and knead on a flat surface for about 5 to 10 minutes. The dough is ready when it feels soft like your earlobe.
  • Let rest for 5 minutes, and cover and let rise in a covered bowl (saran wrap) for 1 hours or until doubled in size.
  • After first rise, punch down dough and knead for an additional 2-5 minutes.
  • Form into desired shape and let rise again for 45 minutes to 1 hours.
  • When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.

1 cup warm water (110 degrees F/45 degrees C)

Steps:

  • Place the bread flour, sugar, salt, milk powder, water, butter, and yeast in the pan of the bread machine in the order recommended by the manufacturer. Set on Dough cycle; press Start.
  • Remove risen dough from the machine, deflate, and turn out onto a lightly floured surface. Divide the dough into twelve equal pieces, and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix together the egg white and 2 tablespoons water; brush lightly onto the rolls. Bake in the preheated oven for 15 minutes, or until the rolls are golden brown.

1 cup milk
½ cup water
¼ cup butter
4 ½ cups all-purpose flour
1 (.25 ounce) package instant yeast

Steps:

  • In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
  • In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
  • Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
  • Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
  • For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

1 (.25 ounce) package active dry yeast (such as Fleischmann's ActiveDry Yeast®)
1 pound all-purpose flour, or as needed - divided
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons butter, melted
3 tablespoons white sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
1 egg, beaten
1 tablespoon milk
1 teaspoon sesame seeds, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
  • Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
  • Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
  • Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

Steps:

  • Place all ingredients in bread pan, select Dough setting, and press Start. (Vital Wheat Gluten is optional but the bread will rise higher with it.).
  • When dough has risen enough, the machine will beep. Remove bread pan, and turn out dough onto a floured countertop. Gently roll and shape the dough into a 12-inch rope.
  • With a sharp knife, divide dough into 8 pieces for hamburger buns or 12 pieces for hot dog buns.
  • Grease a baking sheet. Roll pieces of dough into balls and flatten for hamburger buns or shape into 6-inch rolls for hot dog buns. Place on prepared baking sheet. Cover and let rise in warm oven 10 to 15 minutes until almost doubled.
  • Preheat oven to 400°F Bake 10 to 12 minutes until golden brown (be careful mine cook pretty fast). Remove from oven and cool on racks. When ready to use, split buns horizontally. These will keep in plastic bag in the freezer for 3 to 4 weeks.

200ml whole milk , plus extra for brushing
50g unsalted butter
500g plain flour , plus extra for dusting
1 tbsp caster sugar
7g sachet fast-action dried yeast
1 egg , beaten
sesame seeds (optional)

Steps:

  • Put the milk, butter and 100ml water in a pan and gently heat until the butter is melted. Set aside to cool until just warm.
  • Tip the flour, sugar, yeast and 1 tsp salt into a large bowl and gradually work in the milk mixture, then the egg, until you have a smooth dough. Tip the dough onto a floured surface or into a stand mixer fitted with a dough hook and knead until elastic and shiny. Divide into 12 (about 80g each) pieces and roll into tight balls. Transfer to baking trays lined with baking parchment, leaving plenty of space between them, and put in a warm place to prove for 30-45 mins.
  • Heat oven to 200C/180C fan/gas 6. Press the rolls down gently using your hands, then brush over some milk and scatter over the sesame seeds, if you like (or, dust with some flour). 1 package dry active yeast (8g/0.28 oz.)
1 egg
3 tbsps melted butter
1 1/2 tsp salt
3 tbsps sugar
520-550g all-purpose flour (18.5-19.5 oz.)
1 egg
1 tbsp milk
(or 75g/2.65 oz. melted butter)
sesame seeds

Steps:

  • To prepare this homemade hamburger buns recipe, start by making the dough. Add in the mixer's bowl the yeast, the warm water and 50g flour (5 tbsps). Using a hand whisk, whisk all the ingredients to form a batter. Wrap the bowl with plastic wrap and set aside for 6-7 minutes, until the yeast rises and starts bubbling. Be careful not do add hot water, as it will kill the yeast, nor cold, as it will take forever for your hamburger buns to rise. The water should be at the same temperature as your finger, so check it out sticking one finger in; you should feel no difference in temperature.
  • In the meantime melt the butter. The key is to melt the butter at very low heat, so that the temperature doesn't kill the yeast. Remove the pan from the stove and check the temperature. The butter should be at the same temperature as your finger. If it is warmer, leave to cool down for a few minutes and check again.
  • Pour the butter in the yeast mixture and add the egg and sugar. Whisk to combine. Top with the flour and add the salt.
  • Using the dough hook mix at first at low speed, until the ingredients start to combine and then mix at medium-high speed for about 10 minutes, until the dough doesn't stick on the sides of the bowl. At this point the dough should be really soft and a little sticky. (Be careful not to add any more flour than this homemade hamburger buns recipe calls for, as the dough should be really soft and not firm).
  • Coat lightly the dough with oil and place in a large bowl. Cover with plastic wrap and let the dough rise in a warm place for about 2 hours or until doubled in size. If the environment is cold, preheat the oven at 30C, turn it off and place the bowl inside.
  • Gently deflate the dough and place on a lightly floured working surface. Dust your hands with flour and divide in 8 equal sized pieces (approx. 115 g./4 oz. each). Form each piece into a round shape, gently tucking ends underneath. Gently pat the dough rounds into flat disc shapes about 1.5 cm thick. Arrange the hamburger buns on a large baking tray lined with parchment paper and dust very lightly with flour. Drape some plastic wrap over the baking sheet and let rise for about 1 hour or until doubled in size.
  • Preheat the oven to 180C and beat the egg and milk in a small bowl. Lightly brush the top of each hamburger bun with the egg wash and sprinkle with sesame seeds. 2 1/4 tablespoons sugar
1 1/2 tablespoons instant mashed potatoes
1 1/8 teaspoons salt
1 1/2 teaspoons margarine
3 cups bread flour
1 (1/4 ounce) package fast rising yeast

Steps:

  • Add ingredients according to bread machine instructions and set on dough cycle.
  • When complete, shape into balls and flatten to about 3/4 inch thick.
  • Place on a lightly greased cookie sheet (or use a silicone mat and skip the grease).
  • Cover with a damp towel and place in a warm place to rise for about an hour.
  • Optional: Once they have risen, brush tops with melted butter/margarine or egg wash (1 egg white and 1 tablespoon water).
  • *important* Place them in a COLD oven. Set to 300 degrees. When the oven indicates that it's up to temperature, turn the oven up to 400 degrees. Set the timer for 15 min and watch closely. It's done in about 10 min in my oven. The buns should be JUST set.

Super soft bread machine buns - a sweet dinner roll recipe that's easy to make. The secret is in how you form them!

1 c milk
1 egg
2 tbsp. butter (sliced)
3 c all-purpose flour
1/4 c granulated sugar
1 tsp. salt
1 1/2 tsp. active dry yeast

Steps:

  • Make sure to add all of the ingredients in order to your bread machine pan.
  • Measure 1 cup of milk and add the egg. Warm both in the microwave until luke-warm (about 30 seconds). Add to your bread machine pan.
  • Next add the 2 tablespoons of butter - cutting it into pieces.
  • Then add all of the dry ingredients in order: 3 cups flour, ¼ cup sugar, 1 tsp salt and 1 ½ teaspoons of active dry yeast (room temperature).
  • Set the bread machine on the dough/pizza dough setting and press start. (This cycle is about 1 hour and 40 minutes.)
  • Once the bread machine is done, let the dough rise to the top of the bread machine pan.
  • Prepare a baking sheet by greasing it with shortening.
  • Now on to the fun part - forming the buns. Grease your hands with shortening. Take a little more than a golf ball size piece of dough, pinching it off the rest of the dough. Then work the edges and push up in the middle at the same time to make a bump. The center should be smooth. Gather the outer edges in one hand. Squeeze the dough at the bottom with your opposite hand, pinching off the very end.
  • Put it on the pan and flatten it with your hand.
  • Place about 5 or 6 to a pan, depending on the size of the pan.

1 cup water
3 tablespoons milk
1 Tablespoon active dry yeast
2½ tablespoons sugar
1 large egg
3 cups bread flour
1/3 cup white whole wheat flour
1 teaspoon salt
2½ Tablespoons butter, softened

Steps:

  • Put all the ingredients in your bread machine and set it on the dough setting.
  • When the dough is ready, pull it out and cut into 16 pieces (or 8 if you want BIG burger buns). Preheat the oven to 170 F, then turn it off. This provides the perfect warmth for rising the dough. Spray two baking sheets with cooking spray.
  • Shape each piece of dough into a ball, then pull the dough down from the top of the ball, pinching it together on the bottom to smooth out the surface. Set the ball on the baking sheet, leaving 2 - 3 inches of space between them to allow room for rising. Repeat until all 16 buns are shaped.
  • Spray the buns with cooking spray (or lightly brush with melted butter or oil), then cover loosely with a clean towel and set them in the warmed oven. Let rise for about 40 minutes or until they are nice and puffy.
  • Set a shallow baking pan in the bottom of the oven and pour about 1/2 cup of water in. Gently remove the towel from the top of the buns and turn the oven to 400 F. Bake for 15 - 20 minutes or until the tops of the buns are a deep golden brown. I set them on a rack to cool. Brush the tops of the buns lightly with butter or olive oil - or spray lightly with cooking spray - to soften the tops of the buns.

Steps:

  • This recipe is for a two-pound machine. Use the dough setting.
  • Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first. For my machine, I add the liquids first.
  • Use the dough setting.
  • When the dough is done put it on a lightly floured board and divide into three equal sections. Then divide each of those into three sections.
  • The goal is to get 9 hamburger buns of appropriate size and shape.
  • When you've got the buns the right size and shape put them on a cookie sheet that's been greased or lined with parchment paper.
  • Cover the buns with a clean, lightweight kitchen towel and let the buns rise for half an hour.
  • Remove the towel and put the buns in a 400 degree oven for 10 to 15 minutes.
  • Move the cooked buns to a rack to cool.

1 1/3 cups water
2 tablespoons nonfat milk powder
4 cups all-purpose flour (plus more for kneading)
2 tablespoons shortening
2 1/2 to 3 tablespoons sugar
2 teaspoons salt
1 packet active dry yeast (about 2 1/2 teaspoons)
Cornmeal
1 egg white (whisked with 1 tablespoon of water)
Optional: 2 tablespoons sesame seeds (or poppy seeds)

Steps:

  • Gather the ingredients.
  • Add the water and nonfat milk powder to the bread machine followed by the flour. Add the shortening followed by the sugar, salt, and yeast. Set to the "dough" cycle.
  • When the dough cycle finishes, turn the dough out onto a floured board and punch it down. Knead 4 or 5 times; add a little more flour as you knead if necessary to keep the dough from sticking to your hands or the board.
  • Cover the dough with a clean dishcloth and let it rest for about 30 minutes in a draft-free place.
  • Lightly grease a large baking sheet; sprinkle with cornmeal. Alternatively, line the baking sheet with parchment paper and sprinkle with cornmeal.
  • Pat the dough into a circle and cut into 8 even wedges. Form each wedge into a ball, then flatten each one into a smooth and fairly even circle, slightly bigger than a burger.
  • Arrange the dough pieces on the baking sheet about 2 inches apart and let rest for about 20 minutes.
  • Preheat the oven to 375 F.
  • Brush the buns lightly with the egg wash (egg and water mixture). If desired, sprinkle with sesame seeds or poppy seeds.
  • Bake for about 18 minutes or until the buns are nicely browned.
  • Let cool before serving.
