MEATLOAF
There's nothing more comforting than a gorgeous meatloaf made with top-quality meat, lightened up with festive flavours. It's a delicious, easy way to feed a big group of people. And when it comes out in a big tray it looks amazing, too.

Steps:
- Preheat the oven to 180ºC/350ºF/gas 4.
- Trim each fennel bulb and chop into eight wedges, then place in a large roasting tray, drizzle with oil, season with sea salt and black pepper and roast for 30 minutes.
- Meanwhile, peel and dice the onions and carrots, place in a large pan with 1 tablespoon of oil on a medium-low heat and cook for 20 minutes, stirring occasionally.
- Pick the herb leaves, finely chop half of them and add to the veg pan, saving the rest for later.
- Leave the veg to cool completely, then tear in the mozzarella and add the breadcrumbs, minced meat, mustard, eggs, and a good pinch of sea salt and black pepper. Scrunch and mix well, then shape into a loaf.
- Make a space in the middle of the fennel tray and sit the meatloaf in the centre. Criss-cross the smoky bacon over the meatloaf, drizzle with a little oil, then cover the tray with tin foil.
- Roast for 30 minutes, then remove from the oven and discard the foil.
- Mix the chicken stock, jam and tomato purée together in a jug until smooth, then pour into the tray. Toss the reserved herbs with a little oil and scatter into the tray, then return to the oven for a final 45 minutes, or until cooked through.
- If the juices need thickening at this stage, simply put the tray on the hob to reduce for a few minutes, until they're the consistency of your liking, skimming away any fat from the surface, if needed.
- Serve the meatloaf, sweet fennel and juices with mash and seasonal greens.

JAMIE'S MEAT LOAF
I wanted something different tonight so I made this recipe up for our Meat loaf. I am sure no one has it cause I did not see it in a book or on the internet just thought of the things I like that are good and put it together. Hope you agree it is moist, juicy and good tasting.

Steps:
- 1. In large mixing bowl mix together the ground beef and the sausage well.
- 2. Make a well in the center. Beat the two egg and pour in the well.
- 3. mix the ro tel, tomatoe sauce and enchilada sauce together and pour in.
- 4. Add all the remaining ingredients and mix well. Bake in a deep baking dish or loaf pan. 1hr and 10 min or until done on 350 degrees in oven. At the end spoon some enchilada sauce on top and heat about 5 minutes longer.
BOB JAMIESON'S MEAT LOAF

- Allow the beef, veal and pork to come to room temperature. Combine with Worcestershire sauce.
- Saute the onion in the butter until quite soft and golden. Add to the meat with eggs, mustard, ketchup, cracker crumbs and salt and pepper.
- Spoon into a 9-by-5-inch loaf pan and pat gently. Spread remaining ketchup on top and lay bacon slices across the loaf, if desired.
- Bake at 350 degrees for 60 minutes. Remove from oven; remove bacon and drain off fat. Slice and serve.

JAMES BEARD'S OLD-FASHIONED MEAT LOAF
A meatloaf is capable of infinite variations with spices and ingredients. The combination of meats in this version makes this dish more delicious and firm. Bake it free form on a baking sheet or shallow pan, not in a loaf pan, or it will be mushy. It goes great with mashed potatoes or rice. This satisfying dish is adapted from The New James Beard (1981).

Steps:
- In a large mixing bowl, combine the ground meats, onions, carrots, and spices. Mix well.
- Add in the eggs, milk, bread crumbs, and mix well.
- Place half of the mixture on a greased, shallow baking pan. Place hard boiled eggs (without shells, of course) end-to-end in a line through the loaf. Place remaining amount of mixture on top and form into a loaf with your hands.
- Place strips of bacon atop loaf in an attractive criss-cross pattern.
- Bake at 350 F for 90-120 minutes, depending upon how thick you have formed the loaf.
