This soup is a little spicy, elegant enough for a dinner party, super cheap to make and very tasty... Don't be put off by the lentils - trust me you won't know they are there (and secretly they are so good for you).

5 cups chicken stock or 5 cups water
1 cup red lentil
3 medium onions
750 g sweet potatoes
5 garlic cloves
2 teaspoons ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon cayenne
1/2 cup coriander, chopped (or less to your taste)
1 lemon
salt and black pepper

Steps:

  • Peel and roughly chop the onions and sweet potatoes - can be chunky.
  • Combine with the stock or water, lentils, garlic, cumin, cayenne and turmeric in a pot.
  • Cover and bring to the boil. Simmer until the potatoes and lentils are cooked - about 20-30 minutes.
  • Puree the soup, adding in the coriander and the juice of the lemon. Add salt and pepper to taste (lots of pepper for me).

1 large sweet potato, peeled and diced
3 medium carrots, cut into 1/2-inch pieces
3 stalks celery, cut into 1/2-inch pieces
2 leeks, halved lengthwise and cut into 1/2-inch pieces (white and light green parts only)
3/4 cup dried yellow or red lentils
1 4-inch piece ginger, peeled and finely grated
1 teaspoon curry powder
Kosher salt
1 tablespoon unsalted butter
2 cloves garlic, thinly sliced
Juice of 1/2 lemon, plus lemon wedges for serving (optional)
1/2 cup chopped fresh cilantro

Steps:

  • Combine the sweet potato, carrots, celery, leeks, lentils, ginger, 3/4 teaspoon curry powder and 1 teaspoon salt in a 4-to-6-quart slow cooker. Add 6 cups water and stir, then cover and cook on low, undisturbed, 8 hours.
  • Stir the soup vigorously with a whisk to make a rough puree. Thin with hot water, if desired.
  • Melt the butter in a small skillet over medium-high heat. Add the garlic and the remaining 1/4 teaspoon curry powder and cook until the curry powder is slightly toasted, about 1 minute. Stir the curry mixture into the soup and add the lemon juice, cilantro, and salt to taste. Serve with lemon wedges.

Satisfying and simple to make, homemade soup is a great supper or take-to-work lunch.

2 tsp medium curry powder
3 tbsp olive oil
2 onions, grated
1 eating apple, peeled, cored and grated
3 garlic cloves, crushed
20g pack coriander, stalks chopped
thumb-size piece fresh root ginger, grated
800g sweet potatoes
1.2l low-sodium vegetable stock
100g red lentils
300ml milk
juice 1 lime

Steps:

  • Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often.
  • Meanwhile, peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.

From many trial and errors and several retakes and revisions, here is the final recipe for my Slow Cook Lentil-Sweet Potato Soup. It is hardy, thick, and savory, with a reddish, slightly sweet broth. 2 cups lentils
1 cup water
4 cups vegetable broth or 4 cups vegetable stock
1 medium onion, diced
1 -1 1/2 tablespoon granulated onion powder
2 carrots, chopped chopped or minced
2 -3 garlic cloves, minced
1 -1 1/2 tablespoon granulated garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano
1 (14 ounce) can diced tomatoes
1/2-1 cup sweet potato puree

Steps:

  • Clean and presoak the lentils for a few hours, two to three is sufficient, over night works well also. The lentils will easily drink up two cups of water.
  • Strain them, and dump them and all of the other ingredients into a 6 quart or larger slow cooker. (A 5 quart might work, but it would be a tight fit.)
  • Cook on low for 10 hours or high for 5 hours. I usually do a combination of the two settings (e.g., 6 hours on low and then 2 hours on high).
  • NOTE: Three medium (baseball sized) sweet potatoes, chopped, can be substituted for the sweet potato purée, but the later seems to sweeten and thicken the overall soup significantly. The same with the carrots, where mincing them does seem to impact the color, flavor, and texture a bit.
  • NOTE: I have yet to try red lentils, so, if some brave individual does, I've appreciate hearing about how it turns out and what adjustments are required.

1 tablespoon olive oil
1 large onion, minced
6 cloves garlic, minced
2 pinches red pepper flakes
½ teaspoon ground turmeric
1 ½ teaspoons garam masala
1 cup lentils
4 cups vegetable broth
2 sweet potatoes, peeled and cut into 1/2-inch cubes
4 cups chopped fresh spinach
1 pinch salt to taste

Steps:

  • Heat olive oil in a pot over medium heat. Cook and stir onion and garlic in the hot oil until fragrant, 2 to 4 minutes. Cook and stir red pepper flakes, turmeric, and garam masala into onion mixture until coated, about 2 more minutes.
  • Stir lentils and broth into onion mixture; bring mixture to a boil, reduce heat to low, cover, and cook until lentils are softened but firm to the bite, about 15 minutes.
  • Stir sweet potatoes into lentil mixture; bring to a boil, reduce heat to low, cover, and simmer until sweet potatoes are tender and lentils are fully cooked, about 10 more minutes. Add spinach; cook until wilted, 3 to 5 minutes. Season with salt.

3/4 ounce fresh coriander
2 teaspoons curry powder
3 tablespoons olive oil
2 onions, grated
1 apple, peeled, cored and grated
3 garlic cloves, crushed
1 piece fresh ginger, grated (thumb-sized, about 2 Tbsp)
1 3/4 lbs sweet potatoes (about 6 medium)
5 cups vegetable broth
1/2 cup red lentil
1 1/4 cups milk
1 lime, juice of

Steps:

  • Separate the coriander leaves from the stalks. Reserve the leaves for garnish, and chop the stalks finely; set aside.
  • Add curry powder to a dry saucepan and toast over medium heat for 2 minutes. Add oil and stir; powder will sizzle. Add onion, apple, garlic, ginger and coriander stalks. Season with salt and pepper, and cook gently 5 minutes.
  • Peel and grate the sweet potatoes. Add to sauce pan with broth, lentils and milk. Simmer, covered, 20 minutes or until lentils and sweet potatoes are tender. Blend smooth with an immersion (stick) blender.
  • Stir in lime juice, adjust salt and pepper and serve, garnished with reserved coriander leaves.
