SMOKED JALAPENO POPPERS RECIPE WITH BRISKET AND CREAM CHEESE
When asking my 14-year-old son what he thought of the smoke jalapeno peppers, he described them in a way I had never thought of. He kept talking about the textures, layers of tastes and the heat. These Keto jalapeno poppers include so many different flavors but work oh so well together! These smoked jalapeno peppers include brisket. That's right, BRISKET! Get that protein in and enjoy the savory taste of brisket mixed with cheeses and spices, wrapped in heat than wrapped in crunchy bacon! These cream cheese jalapeno poppers make awesome appetizers for parties, but I like to just eat them for dinner. Make extras and eat them the next day for lunch (that's what I did today!) I am shutting up now and showing you how to make jalapeno poppers, filled with brisket, cream cheese and smoked with bacon.

Steps:
- Pre-heat your smoker to 180 degrees
- Prep and clean your jalapenos. Wash, cut in half and scrape pepper insides with a fork. Read our tips, these will help in determining the spicy heat level of your smoked jalapeno peppers!
- Lay peppers onto a baking sheet
- Salt and pepper the empty jalapeno peppers
- In a bowl, mix together garlic, the remaining salt and pepper with thawed cream cheese and cheddar cheese
- Spoon the cheese mixture into each of the jalapeno peppers - when smoking jalapenos - I like to use the entire pepper!
- Place a few pieces of your smoked brisket onto the jalapeno
- Wrap each whole pepper with a slice of bacon
- Place poppers into the smoker for 30 minutes at 180 degrees
- After 30 minutes, increase the temperature to 375 degree and cook for another 30 minutes
- Bacon will be crispy when your smoked peppers are done.

- Preheat the oven to 400˚F. Halve the jalapenos lengthwise. Remove and discard the seeds and membranes from the jalapenos.
- In a large bowl, combine the cream cheese, garlic, salt, pepper, green onion, shredded cheese, and cooked bacon for the filling.
- Fill the jalapeno halves with the mixture. Placed stuffed jalapenos on a baking sheet and bake at 400˚F for 18-20 minutes, or until the cheese melts golden in color. Sprinkle Parmesan cheese over the poppers and serve.

- Prepare grill fire to about 300°.
- Remove stems from jalapeños.
- Slice longwise and remove seeds and membrane.
- Place in a grill pan or iron skillet and cook over indirect heat for 10 minutes.
- Remove from grill and place jalapeños into a bowl of ice water and let set 5 minutes.
- Drain and pat dry.
- Mix cream cheese, shredded cheddar cheese, garlic and salt together.
- Spoon into jalapeño halves.
- Top with chopped brisket and bacon, pressing lightly.
- Drizzle with barbecue sauce.
- Grill for 15 minutes.
- Remove from grill and allow to cool 5 minutes before serving.

BACON-WRAPPED JALAPENO POPPERS
Steps:
- Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick spray.
- In a medium bowl, mix together the cream cheese, Cheddar, cilantro, salt, pepper and green onions.
- Fill each jalapeno half with a heaping teaspoon of the cream cheese mixture. Wrap the bacon tightly around the jalapenos, overlapping slightly.
- Place the wrapped jalapenos, cheese-side up and spaced 1-inch apart, on the prepared baking sheet. Refrigerate for 30 minutes.
- Transfer to the oven and bake until the bacon is crisp, about 25 minutes.
CAJUN JALAPENO POPPERS
This recipe came from taste testing poppers all over. I combined what I liked and discarded the rest. You can use fresh peppers or prepackaged peppers (not recommended,to soft). If I use fresh, I sometimes like to slice them in half, leaving the stem, de-vein and seed them and saute' them in my favorite beer to soften them up just a little (2-4 minutes). Another tip is to always use protective cooking gloves when dealing with peppers.

- Halve the jalapenos leaving the stem attached, de-vein and seed them.
- Setting the halved jalapenos and bread crumbs aside, mix all of the other ingredients together.
- Take your mixture and completely fill the jalepeno cavities to their brim and set aside.
- Put bread crumbs on a flat plate.
- Take jalapeno halves, one at a time, and roll cheese side only in bread crumbs and place cheese/crumb side up on a baking pan Once completed if you like a thick crumb layer, you can repeat this step.
- If you do not intend to bake finished product skip the rolling part and just lightly sprinkle the top of the jalepenos with the bread crumbs.
- Bake at 350 for 15 minutes or until mixture starts to bubble.
- I like to refrigerate at least 1 hour prior to baking Sometimes I prepare the day before, cover and refrigerate.
- Serve warm, room temperature or chilled with any or all of the recommended sauces.

- Cut stems off of peppers and cut them all in half longways.
- Remove seeds from peppers.
- Fill each pepper with cream cheese and sprinkle cheddar cheese on top.
- Wrap 1/2 slice of bacon around each pepper half.

CHARRED JALAPENO POPPERS
Roast jalapeno peppers stuffed with cream cheese and wrapped in bacon. These are a little time consuming, but the results are delicious. Prep time includes time to grill the peppers. You can let your imagination go wild and adjust the recipe by adding anything you think sounds good. Cream cheese measurement is an estimate because of the difference in pepper sizes.
