1 ½ cups water
¾ cup dry lentils
½ cup grated carrots
⅓ cup finely chopped onion
½ jalapeno pepper, finely chopped
2 cloves garlic, finely chopped
1 ½ cups panko bread crumbs
3 eggs, lightly beaten
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon Italian seasoning

Steps:

  • Combine water and lentils in a saucepan; bring to a boil. Reduce heat, cover saucepan, and simmer for 15 minutes. Add carrots, onion, jalapeno pepper, and garlic to lentils; cook until lentils are tender, about 15 minutes more. Remove saucepan from heat and slightly cool lentil mixture.
  • Preheat oven to 400 degrees F (200 degrees C). Grease an oven-proof wire rack.
  • Mix bread crumbs, eggs, olive oil, salt, and Italian seasoning in a bowl; add lentil mixture and stir until well combined. Form mixture into 6 to 8 patties and place on the prepared wire rack; refrigerate for 15 minutes.
  • Place wire rack with patties onto a baking sheet.
  • Bake in the preheated oven until burgers are firm, about 20 minutes.

These are very spicy but so good. If you want less spicy, you can use a less spicy pepper - like a poblano. These are great on the grill or any other way you cook a burger!!

2 jalapenos
1 lb ground beef
1 egg
2 tablespoons ketchup
1 teaspoon seasoning salt
2 garlic cloves, minced
1/4 cup onion, finely diced
4 slices monterey jack pepper cheese

Steps:

  • On the grill or under the broiler, roast the jalapeno peppers whole, until they start to turn black. Once they are black on all sides, put into a brown paper bag, close and let sit 5 minutes. Remove from bag and peel off skin.
  • Using a knife, slit open jalapenos, and take the seeds out and remove the stem. Cut jalapenos in half so you have 4 total slices of jalapeno. Set aside.
  • In a bowl combine ground beef, 1 egg, ketchup, salt, garlic, and onions. You may also use any other seasonings you like in your hamburger mixture. Mix well.
  • Form 8 thin patties. Take one slice of jalapeno and one slice of pepper jack cheese and place on 4 of the patties. Top each patty with remaining four patties and seal the edges together so the cheese doesn't leak out.
  • Grill burgers or cook as usual until done. Your burgers will have a spicy, cheesey surprise in the middle of each one. Delicious!

2 cups canned sliced jalapenos (with the juice)
1/2 cup sugar
1/4 cup orange marmalade
2 1/2 pounds ground turkey
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil
6 tablespoons unsalted butter
6 brioche buns
6 leaves green leaf lettuce
6 slices beefsteak tomato
6 slices red onion
12 slices Hass avocado

Steps:

  • For the jalapeno jam: In a small saucepot, combine the jalapenos, sugar and marmalade and bring to a simmer over low heat. Simmer until the liquid reduces to a glaze, about 1 hour.
  • For the turkey burgers: In a bowl, combine the ground turkey, salt and pepper and mix well. Form the mixture into 6 patties.
  • Heat a cast-iron skillet over high heat until it begins to smoke. Add 1 tablespoon of the grapeseed oil to the pan and reduce the heat to medium. Add 3 of the patties to the pan and cook until the first sides are seared, 3 to 5 minutes. Flip and cook until the burgers are cooked completely through, about 5 minutes. Repeat with the remaining tablespoon grapeseed oil and the other 3 burgers.
  • Butter each of the buns on both sides and toast them in the hot skillet until golden brown.
  • Dress each of the bottom halves of the buns with lettuce, tomato, red onion and avocado. Place a burger on top of each dressed bun and top with 2 tablespoons of the jalapeno jam. Finish with a bun top.

1 1/2 pounds lean ground beef (97 percent meat, 3 percent fat)
1 1/2 teaspoons kosher salt
1 teaspoon salt-free Southwestern seasoning blend
Freshly ground black pepper
4 jalapenos
4 slices American cheese
4 whole wheat burger buns, warmed
1 medium red onion, thinly sliced
2 cups thinly shredded iceberg lettuce
Yellow mustard (optional)

Steps:

  • For the grill: Preheat the grill to 400 degrees F or a cast-iron pan over medium-high heat.
  • Crumble the beef into a large bowl. Add the salt, seasoning blend and some pepper. Mix the beef mixture gently with your hands so as to not overmix. Just fold the ground beef, don't mush or squeeze the ingredients into the beef. Form 4 patties.
  • Place the patties and the jalapenos over the direct heat of the grill or into the cast-iron pan. Cook the patties on one side until the meat is seared and releases easily from the grill grates or pan, 3 to 4 minutes. Flip the patties and rotate the jalapenos to get them charred on both sides. Cook until desired doneness on the beef, 3 to 4 more minutes for medium-rare to medium.
  • For the toppings: Top the burgers with the cheese and transfer to a plate or sheet pan. Cover with aluminum foil for about 5 minutes. Meanwhile, remove the charred jalapenos and chop. Spread over the cheese on the burgers.
  • Squeeze mustard on both the top and bottom buns if desired. Build the burgers by topping the bottom buns with the cheeseburgers, jalapenos, a pile of red onions, a pile of lettuce and the top buns. Serve.

3/4 pound ground sirloin
3/4 pound ground chuck
1/2 pound raw chorizo, casings removed and crumbled
1 tablespoon adobo seasoning
1 large onion, grated
1/2 cup dry bread crumbs
2 tablespoons olive oil
2 large yellow onions, finely sliced
Kosher salt and freshly ground pepper
1/2 cup bottled and sliced jalapeno chiles, drained
1/2 cup dark brown sugar
2 medium jarred roasted red bell peppers, drained
3/4 cup mayonnaise
6 slices Oaxaca cheese or mozzarella
6 hamburger rolls

Steps:

  • In a large bowl, mix thoroughly by hand the ground beef, the chorizo, the adobo seasoning, the grated onion and the bread crumbs. Form the burgers into 6 patties without pressing them too much or they can become tough. Line a baking pan with waxed paper and put the burgers side-by-side in a single layer. Cover and refrigerate for at least 30 minutes. This will help the burgers hold together. If you make more than you need just separate with waxed paper and insert into a storage freezer bag for future use.;
  • Heat the olive oil in a heavy skillet over medium-low heat. Add the onions and season with salt and pepper. Add the jalapeno chiles and the brown sugar. Saute for 15 minutes or until the onion and the chiles are caramelized and soft. Set aside.;
  • Drain the roasted red peppers and put them in a blender or food processor. Add the mayonnaise, and season with salt and pepper. Puree the mayonnaise and roasted red peppers until well combined and the mixture is smooth. NOTE: This may be done up to 2 days ahead of time, and in fact the flavor will be more complete with an overnight chilling.;
  • Preheat an outdoor grill or grill pan on the stove top over medium-high heat. Place the burgers on the hot grill or pan until cooked to desired doneness. Due to the raw chorizo in the recipe, at least medium-well is recommended, approximately 10 minutes on each side. In the last 5 minutes of cooking, top the burgers with the slices of cheese so it can melt. If your grill has a lid, putting it on briefly will help the cheese melt quickly and evenly.
  • To serve: Spread about 1 tablespoon of the red pepper mayonnaise on both sides of the rolls. Lay a burger on the bottom halves, and top with a couple of spoonfuls of the caramelized onion and jalapeno relish.

JALAPENO SHARK BURGERS

I came up with this when I had bought some shark steaks and had no idea what to do with them. My mom mentioned that shark is a meaty fish, but a bit bland, so I decided to throw it in the food processor and make burgers. Try to trim off as much of the skin and fatty stuff as you can. This is a very simple recipe, but has good spicy flavour if using my Habanero Barbecue Sauce (Rz#368097).

4 -5 ounces shark steaks
1 -2 tablespoon barbecue sauce (I recommend my Habanero barbecue sauce Rz#368097, but any flavour you like should work)
1 hamburger bun (I use rosemary focaccia buns for the extra flavour)

pepper

Steps:

  • Ground the shark steak in a food processor until broken up, but not too mushy.
  • Mix the steak with the barbecue sauce, salt and pepper in a bowl. Adjust the amount of sauce to your taste, as it can be quite spicy, but make sure not to make the mixture too runny. It should be about the same texture as regular beef burgers.
  • Shape into burger patty. I try to make them as round as possible, then press down in the middle with the back of a teaspoon to make a small indent. This will compensate for them rising on the grill as they cook.
  • Grill on medium-high heat for about 4-5 minutes per side, turning once. Serve immediatley with your choice of cheese and burger toppings on your choice of roll.

I appreciate a salmon patty sans bread for this time of year as well. I skipped the pita & served with some slowly simmered spicy black beans & a fast canned tomato salsa. High protein, great taste & low carb, low fat. Just what the doctor ordered. 5 green onions, chopped
1/4 cup red bell pepper, minced

1/2 teaspoon coarse salt
1/8 teaspoon coarse salt
1/4 teaspoon black pepper, freshly ground
1 large egg white (beaten to soft peaks)
1 teaspoon vegetable oil
4 pita breads
1 -2 tablespoon olive oil
1 avocado
1 lime, juice of

Steps:

  • Heat oven to 400 degrees. Cut the semi-frozen salmon into 1/3-inch dice. Place salmon, green onions, bell pepper, jalapeno, sour cream, red pepper sauce, 1/2 teaspoons of the salt and black pepper to taste in medium bowl; fold together with a spatula. Add the egg white; fold in gently but thoroughly. (The mixture will be loose.).
  • Heat the oil in a large oven-proof non-stick skillet over medium-high heat; form the fish into 4 burgers. Slide the burgers into the skillet, reshaping, if necessary with a spatula. Cook to set bottoms, 1 minute. Place skillet in oven; bake until tops are opaque and milky, about 5 minutes. Remove skillet from oven; let burgers rest in skillet 5 minutes.
  • Meanwhile, split the pitas; brush the insides with olive oil. Grill or toast pitas until hot. Mash the avocado in a small bowl; stir in lime juice and remaining 1/8 teaspoons of the salt. Put each burger on a pita half; divide avocado to top the burgers. Top with remaining pita halves.

  • Preheat a grill for medium heat. When hot, lightly oil the grate. In a medium bowl, stir together the jalapenos and cream cheese.
