EASY CRUSTY JALAPEñO CHEESE BREAD



Easy crusty jalapeño cheese bread image

Crusty cheese bread studded with jalapeños is an easy bread recipe guaranteed to be a crowd pleaser. Perfect for grilled cheese or as a side to soup.

1½ cups warm water
10 g (2 tsp) instant yeast
1 tsp sugar
4 cups flour
1 tsp salt
2-3 jalapeños
2 cups grated cheddar cheese

Steps:

  • In the bowl of a stand mixer, combine the water, sugar and yeast. Allow to stand for 5 minutes until foamy.
  • Add the flour and salt then knead with the dough hook for 5 minutes.
  • The dough will be slightly sticky but shouldn't be wet. If it is, add 1-2 tbsp flour and knead in.
  • Knead in the jalapeños and cheese.
  • Bring the dough together into a ball with your hands. Dust over 1-2 tbsp flour (you want it to be well covered).
  • Cover the bowl with a damp kitchen towel and allow the dough to rise for 1 hour until doubled in size. Leaving the dough in a warm spot will aid the rising.
  • When the dough has proved, turn it out onto a floured surface. Fold the edges into the center of the dough, pinching the seams together then place into a floured bowl, seam side up. Dust over more flour.
  • Cover with the tea towel and allow to rise for another 30 minutes.
  • Preheat the oven to 180°C/350°F. Place a pot (dutch oven) with a lid into the oven to preheat.
  • Carefully remove the pot from the oven and remove the lid. Transfer the dough to the pot and cover with the lid.
  • Place in the oven and allow to bake for 30 minutes.
  • Remove the lid and bake for another 10-15 minutes until the bread is golden brown.
  • Remove the bread from the oven and allow to cool on a wire rack for 20-30 minutes (or until it has cooled to room temperature) before slicing and serving.

2 green onions, sliced
1 loaf crusty French bread, sliced lengthwise

Steps:

  • Preheat the oven to 325 degrees F.

1 teaspoon garlic salt
1 jalapeno, minced
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 and 1/2 cups flour
1 tsp salt
1/2 cup water
1/4 cup milk
3 tablespoons butter
3 tablespoons sugar
1 packet (2 and 1/4 teaspoons) active dry yeast
1 egg

Steps:

  • Add two cups of flour, along with the salt, to the bowl of a stand mixer.
  • In a medium saucepan, heat water, milk and butter over medium heat until butter is melted. The temperature of the mixture should be between 110-115 degrees. If it is too warm, allow it to cool slightly. Stir the sugar and yeast into the warm milk and butter mixture. Let stand about 10 minutes, or until yeast is frothy.
  • Add yeast mixture to the flour in the mixer. Stir in the egg. Using the dough hook, mix until well combined. Gradually add the remaining half cup of flour until a soft dough forms and gathers in the center of the bowl. You may not need all the flour.
  • Turn the dough onto a lightly floured surface and knead for a few minutes. Let dough rest for 5-10 minutes. Using a rolling pin, roll the dough into a 10x14 inch rectangle.
  • Sprinkle the dough with the garlic salt, followed by the minced jalapenos and both cheeses. Starting with the long end, roll the dough into a tight log. Using a sharp knife, slice the log in half vertically, starting a few inches below the upper edge. You should have two ropes of dough, connected at the top.
  • Gently rotate the two ropes of dough outward, so that the cut side is facing up and the filling is exposed. Place one rope of dough over the other, repeating until you reach the end of the log. Carefully place the loaf into a greased, 9x5 inch loaf pan.
  • Cover and let dough rise in a warm place until doubled in size, about 1 hour. Meanwhile, preheat the oven to 350 degrees. Bake the loaf for 40-50 minutes, or until the top is golden brown. If needed, cover with foil during the last 20 minutes of baking time to prevent over-browning.

8 cups all-purpose flour
4 cups shredded Cheddar cheese
¾ cup minced jalapeno peppers
½ cup white sugar
1 ½ teaspoons salt
2 cups hot water
3 (.25 ounce) packages active dry yeast
4 tablespoons vegetable oil

Steps:

  • In a very large bowl, combine 7 cups of flour, cheese, jalapenos, 7 tablespoons sugar and the salt; mix well.
  • In a separate bowl, combine the water, yeast and remaining 1 tablespoon sugar. Let sit about 10 minutes; stir until all yeast is dissolved.
  • Add the oil to the liquid mixture, stirring . Add half of the liquid mixture to the flour mixture. Mix with hands to moisten flour as much as possible. Add remaining liquid mixture to dough and mix until flour is thoroughly incorporated.
  • Turn onto a lightly floured surface and knead by hand until smooth and elastic to the touch, about 15 minutes, gradually adding only enough additional flour to keep dough from sticking.
  • Place in a large greased bowl and invert dough so top is greased; cover with a dry towel and let stand in a warm place (90 - 100F) until doubled in size, about 1 hour. Punch down dough.
  • To Make Bread: Divide dough into 3 equal portions. Form each into a ball, then stretch out dough with both hands and tuck edges under to form a smooth surface. Pop any large air bubbles by pinching them. Form into loaves. (Note: I like to use a rolling pin and roll out dough, which pops all bubbles easily and quickly.) Place in 3 greased 8 1/2 x 4 1/2 inch loaf pans. Cover with towel again and allow to rise until almost doubled in size, about 45 minutes to 1 hour.
  • Bake at 325 degrees F (165 degrees C) until dark brown and done, about 1 hour, rotating the pans after 25 minutes for more even browning. Remove from pan as soon as bread will easily lift out, after about 5 to 10 minutes. Let cool about 1 hour before slicing.

3 1/2 cups bread flour
1 1/2 tsp kosher salt
2 cups shredded cheddar cheese (divided)
1 large jalapeno (diced)
2 cups warm water
2 1/4 tsp instant yeast ((1 standard .25oz packet))
1/3 - 1/2 cup shredded cheddar
10 round slices jalapeno ((or more, to taste))

Steps:

  • To a medium mixing bowl, add bread flour, salt, 2 cups cheddar cheese, and diced jalapenos. Stir and set aside.
  • To a large mixing bowl (pretty large - your bread will be rising in this bowl), add the warm water and yeast. Water should be warm, but not hot (like a baby's bath water). Add flour mixture to the yeast and water, using a rubber spatula to stir it all together until no flour streaks remain.
  • Use spatula to fold the dough from the outside of the bowl towards the center, turning the bowl a little each time, until you've folded the dough in on itself 8-10 times.
  • Cover with a towel and let rise in a warm place for 1 hour.
  • After 1 hour, use the rubber spatula to fold the dough in on itself again, 8-10 times. Cover with a towel and let rise in a warm place for 1 more hour.
  • Halfway through this second rise, add your dutch oven, with the lid on, to your oven and preheat it to 450°F. Let it preheat for a full 30 minutes. Set out a piece of parchment paper large enough to go inside your dutch oven with a bit of overhang.
  • Lightly dust a counter or cutting board with flour, and flour your hands as well. Turn out the dough onto the floured surface. Flip the dough over and brush off any excess flour.
  • Fold the corners of the dough in towards the center, about 6-8 times, until a rough ball is formed. Flip the dough over onto the piece of parchment paper.
  • Use a sharp knife to carefully score the dough (I like to make an "X"). Give the dough a quick spray with some cooking spray (or brush with oil), then sprinkle with set aside 1/3-1/2 cup of cheese and add sliced jalapenos.
  • Use oven mitts to remove hot dutch oven from your oven and remove lid. Carefully use the parchment paper to transfer the dough to the dutch oven. Put the lid on, and return to the oven.
  • Bake for 30 minutes with the lid on, then remove lid and continue baking another 20 minutes.
  • After you've removed the dutch oven from the oven, tilt it slightly and use the parchment to sort of slide the bread and parchment out of the pot. It will come out easily.
  • Remove parchment paper and let bread cool on a wire rack for 1-2 hours before slicing. Texture is best when bread is completely cooled before slicing.

1 cup Water (warm, 105-115°, to activate yeast)
2 1/4 teaspoons Yeast (equal to one standard packet)
3 tablespoons Sugar
2 tablespoons Olive Oil
3.5 cups Bread Flour

4 ounces Cheddar Cheese (about 1 cup when shredded)
2 Jalapenos (stemmed, seeded and finely chopped)

Steps:

  • Proof the yeast: In a small bowl or glass measuring cup, stir together water, yeast and sugar until mixed well. Set aside.
  • After 10-15 minutes, check the yeast to see that it has a nice foam layer to ensure the yeast is viable. If there is no foam layer, check your yeast. It may be expired and you'll need to try again.
  • Add olive oil to bread pan in bread machine. Add yeast mixture to bread pan in bread machine. Add flour and mlik powder to bread pan. Add shredded cheese to bread pan then add chopped jalpeno to bread pan. Add salt to bread pan.
  • Set bread machine to bake, light or dark loaf as desired. Or, alternatively, if you prefer a standard size loaf, set to dough only.
  • If making dough only, once bread machine is finished, remove dough ball and place in loaf pan that has been sprayed with cooking spray. Cover with towel and allow to rise about 20-25 minutes then proceed to baking in the oven, as below.
  • Preheat oven to 375℉. Bake for 25-30 minutes until golden. It should sound hollow when tapped on the top.

CHEESY JALAPEñO-BACON PULL-APART BREAD

Assembling this bread is a little messy and it will look very full, but don't be afraid to really stuff between the cuts so all the flavor and melting cheese can soak into the loaf.

1 1/2 cups shredded mild yellow cheddar cheese (about 4 ounces)
1 1/2 cups shredded pepper jack cheese (about 4 ounces)
3 slices bacon, cooked and finely chopped

2 scallions, finely chopped
1 round loaf white or sourdough bread (14 to 16 ounces)
6 tablespoons unsalted butter, melted

Steps:

  • Preheat a grill to low and medium: On a gas grill, turn the center burner(s) to low and the side burners to medium; on a charcoal grill, bank the coals to the sides with a few coals in the center.
  • Combine the cheddar, pepper jack, bacon, jalapeños and scallions in a medium bowl.
  • Slice the bread with a serrated knife in 1-inch intervals, cutting almost all the way through. Rotate the bread 90 degrees and repeat to create a crosshatch pattern. Set the bread on 2 large stacked sheets of heavy-duty foil.
  • Gently spread the bread open and brush between the cuts with 4 tablespoons melted butter. Stuff the cheese mixture into the spaces. Press the bread back together and brush the outside with the remaining 2 tablespoons melted butter; wrap in the foil.

I like to double the jalapeno's and use jarred old el paso peppers because they are my favorite. If you cut it in half and put sandwich meat and veggies in the middle its a supper to die for.

JALAPEñO CHEDDAR SOURDOUGH BREAD

This homemade sourdough bread has cheddar cheese and sliced jalapeños folded into the dough that give it fabulous flavor! The loaf is a little spicy with pockets of melted cheese.

50 grams active sourdough starter
300 grams filtered water (at room temp)
375 grams organic bread flour
30 grams whole wheat flour
8 grams fine sea salt
100 grams cheddar cheese or gouda cheese, (cut into 1/2 inch cubes (doesn't have to be exact))
60 grams pickled jalapeños

Steps:

  • In a large bowl, mix starter and water with a fork, until starter is dispersed.
  • Add flours, mixing with a spatula first. Then with your hand until a shaggy dough is formed, just enough so that flour is not visible.
  • Sprinkle salt on top of dough. Cover bowl with a damp cloth and let sit for 40 minutes to an hour.
  • Now work the salt into the dough, as you perform your 1st set of stretch and folds. Then let rest for a half hour. Perform 2 more sets of stretch and folds, waiting the 30 minutes in between for each. In essence, you are doing a total of 3 sets of stretch and folds over the course of 1 1/2 hours.
  • After you have completed your 3rd set stretch and folds, wait another 30 minutes.
  • Now you will add the mix-ins. To do this, use a dough scraper to gently remove your dough from the bowl onto a lightly floured surface. Use your hands to gently stretch the dough out into a rectangle about 12 inches X 14 inches. Distribute the cubes of cheese and jalapeños over the inside of the dough, leaving about a 2 inch border. Gently pat the ingredients with your hands so that they stick to the dough.
  • Using lightly floured hands, gently pull one long side of the dough out, and over 1/2 of the dough. Do the same with the other long side of the dough, so both meet in the middle. Now you'll have long cylinder like log. Gently roll the dough up so it is a round shape and put dough back into bowl. This step doesn't have to be perfect, it isn't the final shaping.
  • Let the dough bulk ferment on your counter, covered with a damp cloth for about 5-6 hours if your house is around 72 degrees. It will take more time if it is cooler, or less time if it warmer.
  • When your dough is about doubled in size (a little less is okay), has a glossy top and some bubbles peaking through the top, it is ready for shaping.
  • Gently move the dough out of the bowl onto a floured work surface. Let the dough rest there for 10-15 minutes. Then, shape the dough. Once shaped, use a bench scraper to put the dough into a flour dusted, linen lined banneton (proofing basket), seam side of the dough facing up.
  • Cover with a damp cloth, and let rise for a final time, on the counter. This will take about 2 hours, if your house is around 70 degrees. OR you can put it in the refrigerator in a garbage bag, and let the final rise happen overnight. The dough can be in the refrigerator for 8-10 hours at this stage. (If you do the final rise in the fridge, score and bake straight from the fridge. This makes it easier to score and hold its shape.)
  • Preheat your oven with dutch oven inside of it, to 475 degrees F.
  • Once your dough has gone through its final rise and has risen slightly and is puffy on top, you're ready to bake. You can test to see if your dough is ready by doing gently pressing a floured thumb into the dough. If it indents and gradually releases, but still holds a finger shape, you're ready. If it indents and the dough springs right back to the surface, it still needs time to rise. Let it ferment in half hour more increments, until ready.
  • Wait until oven is preheated, then place parchment over the top of your dough and flip over, so that the seam side is now on the parchment paper and you are able to score the top of the dough. Score the dough with a bread lame, making sure to go at least 1/2 inch deep in a few spots so that dough can release gases. Otherwise your bread will not rise.
  • Place dough on parchment paper into dutch oven, and put cover on it. Bake for 20 minutes, covered at 450 degrees F. Then remove cover, turn oven down to 435 degrees F and bake for 25 more minutes, until bread is golden brown and crackly.
  • Remove from oven and place load on a cooling rack. Let cool for AT LEAST ONE HOUR before slicing. Otherwise the crumb will be squished and the texture will be gummy.

Simply Perfect Homemade Cheese Bread (Two Ways) image

Delicious, soft cheese bread that can be filled with different cheese fillings - cheddar cheese and herb and Parmesan, Garlic and Herb. If you want to make two of the same loaves, simply double the filling amounts listed below. Makes 2 loaves.

6 1/2 cups unbleached bread flour ((can use all purpose, flour *see Note 1 below))
2 tsp fine salt (or a bit more, if using coarse kosher salt)
5 Tbsp white sugar (or 5 Tbsp brown sugar or 3 1/2 Tbsp. honey or agave nectar)
1 cup lukewarm water (about 95F (for even softer bread, you can use 1 cup water leftover from boiling potatoes, cooled))
1 cup plus 2 Tbsp milk or buttermilk (lukewarm, about 95F)
1 1/2 Tbsp regular instant yeast
1/4 cup unsalted butter (melted, or the same amount of vegetable/canola oil)
2 cups shredded sharp cheddar cheese
1/4 cup minced fresh herbs (parsley and chives are good choices or a heaping tablespoon of dried herbs)
1 1/2 cups Parmesan cheese (freshly grated)
1/2 tsp garlic powder (or about 2 tsp. minced fresh garlic)
1/4 cup minced fresh herbs (parsley works well, or a heaping tablespoon of dried herbs)
1/4 cup butter (at room temperature)

Steps:

  • In a mixing bowl or the bowl of a stand mixer, combine the flour, salt and sugar* together. (Tip: If measuring your flour in cups, without a scale, hold back 1 cup to add as needed later). *If you're using honey or agave, add with the liquid ingredients instead.
  • In a large measuring cup or bowl, combine the water and buttermilk and whisk in the yeast until dissolved. Add this mixture, along with the melted butter, to the dry ingredients. Mix by hand or with a dough hook, until the mixture is combined, about 2 minutes. Let the dough rest for 5 minutes.
  • Continue mixing the dough, adding more flour in very small increments, as needed, until the dough becomes soft, smooth and tacky, but not sticky.
  • Transfer the dough to a lightly floured surface and knead for a couple of minutes, adding more flour only if the dough is sticking to your hands or the work surface, then form dough into a ball. Place the dough in a lightly oiled bowl, cover with plastic wrap and either refrigerate for up to 4 days, or allow to sit at room temperature until doubled in size (about 60-90 minutes). (*Tip: I like to use an 8-cup glass measuring cup, so it's easy to see when it's doubled by the markings).
  • Note: If you have refrigerated your dough, remove from the refrigerator 2 hours before you plan to bake, to allow it to come to room temperature.
  • Grease two 8-inch by 4-inch loaf pans and set aside.
  • Divide the dough into 2 equal pieces. Dust each with a bit of flour and then, using a rolling pin, roll into a rectangle approximately 10 inches wide and 16 inches long.

  • For the Cheddar and Herb Bread: spread the shredded cheddar and herbs evenly over the surface of the dough. Starting with the shortest side, roll the dough up jelly-roll style and pinch the seam together.
  • For the Parmesan, Garlic and Herb: spread the softened butter over the surface of the dough. Sprinkle evenly with Parmesan, garlic and herbs. Press lightly with the palm of your hand to press the toppings into the butter. Starting with the shortest side, roll the dough up jelly-roll style and pinch the seam together.
  • Shaping: Using a sharp knife, cut the roll of dough down the centre, lengthwise. Rotate each piece so that the cut sides are facing upward and place them side-by-side. Pinch together the farthest end. Keeping the cuts sides facing upwards as much as possible, place the right-side piece over the left-side piece. Straighen it up all up and then repeat, pinching together the end closest to you. If any cheese escapes, just place it back on top. Using a bench scraper or spatula, carefully lift the dough into the greased loaf pan. Repeat with the other dough log, then cover both with a greased piece of plastic wrap and allow to rise until the dough rises to about 1-inch above the side of the pans in the middle.
  • Preheat oven to 350° F. (not fan assisted). Bake for 45-50 minutes total, but after 25 minutes of baking, rotate pans front-to-back in the oven and loosely cover with a piece of aluminum foil if necessary (if bread is already well-browned), to prevent the top from over-browning. Bread should reach about 185° internal temperature in the centre.
  • Remove the bread from the oven and allow to cool in the pans for a couple of minutes. Run a sharp knife around the edge of the bread and carefully remove the loaves to a cooling rack. Allow the loaves to cool for 1 hour before slicing. *Slicing hot or very warm bread will make for a gummy crumb, so resist the urge and let it cool :)

1/3 cup oil
1 Tbsp salt
2 eggs
1/3 cup instant mashed potato flakes** ((optional))
7 1/2 cups bread flour
1 Tbsp oregano
2 Tbsp garlic powder
1 Tbsp dried parsley
2 Tbsp parmesan cheese

Steps:

  • In the bowl of a stand mixer whisk together the yeast and water. Whisk in the sugar, oil, salt, eggs, and the mashed potato flakes if using.
  • Add the flour and knead for 6 minutes over low speed. Rest the dough for 10 minutes.
  • Transfer dough onto a floured surface and cut into 4 equal pieces. Cut each piece in half again to make a total of 8 pieces. Gently pat and roll into a 12-inch log.
  • Spray the tops with water.
  • Dredge into the Italian Herb Blend.
  • Place rolls onto Silicone Sub Roll Mats and score the tops (3-4 slashes.)
  • Allow dough to rise until tripled in size (up to 1 hour if rising in a warm place.)
  • Sprinkle the tops with shredded Colby and Monterey Jack Cheese. Bake for 15-18 minutes at 375°F. Cool in molds before removing.

  • DOUGH: Once the yeast blooms, add the powdered milk, salt, 2 tablespoons of butter, and 4 cups of flour. Using the dough hook attachment, mix on the low speed or ‘stir’ setting until the dough starts to come together. It should be slightly tacky but shouldn’t stick to your fingers or feel overly wet. If it’s wet, add ¼ cup of flour at a time (up to 4 additions) until the dough comes together. Continue to let the dough run in the mixer for 8-10 minutes. The dough should start pulling away from the sides of the bowl and come together in a ball shape. Lightly grease a large bowl and place the dough inside. Cover with plastic wrap and let rise until doubled, about 1 hour.
  • PREP: Save 6-8 slices of pickled jalapeño for later, this is for topping the bread. Place the remaining jalapeños on a piece of paper towel and give them a good wipe down, you want to remove most of the moisture from them. Chop the jalapeños; set aside. Spray a 9x5 loaf pan with cooking spray; set aside. When the dough has doubled in size, dump it out onto a well-floured, clean surface. Pat the dough down to remove any air pockets. Sprinkle with shredded cheese and jalapeños. Fold the dough over to incase all the toppings you added, then fold it again in half. Continue to knead and fold the dough until you see specks of cheese and jalapeños running throughout the entire dough. Pat the ball of dough gently into a 9x12 inch rectangle. Then, roll from one end to the other to make a log. Pinch seams, then gently transfer the dough loaf into the prepared pan. Place the saved jalapeños on top and gently press them in.
