GARLIC-ONION TORTILLA CAKE



Garlic-Onion Tortilla Cake image

4 whole heads garlic
1 tablespoon extra-virgin olive oil
1 cup canola oil
4 cups finely chopped red onions (about 5 medium)
3 tablespoons unsalted butter
2 tablespoons sugar
5 tablespoons grated parmesan cheese
1/4 cup mayonnaise
2 tablespoons minced fresh cilantro
12 large flour tortillas
2 tablespoons balsamic vinegar

Steps:

  • Prepare the roasted garlic: Preheat the oven to 375 degrees. Cut the top 1/2 inch off the garlic heads and discard. Place the heads on a large piece of foil and drizzle with the olive oil. Wrap up foil tightly; place the package in a small baking dish. Roast until the garlic is soft and lightly browned, 1 hour.
  • Meanwhile, prepare the tortilla cake: Combine the canola oil and onions in a large saute pan over medium heat. Cook for 5 minutes, stirring (don't over brown). Add the butter and sugar; cook, stirring to caramelize. Remove from the heat and let cool.
  • Once cooled, mix the onions with the parmesan, mayonnaise and cilantro in a bowl. Squeeze the roasted garlic out of their skins and stir into the onion mixture. Refrigerate for at least 30 minutes.
  • Set aside 1/3 of the onion mixture in the refrigerator for the dipping sauce. Spread 2 tablespoons of the remaining mixture on top of a tortilla and cover with another tortilla. Repeat, spreading and stacking the tortillas; finish with a tortilla with no mixture on top. Wrap the tortilla stack in plastic wrap and let set up for 12 to 24 hours in the refrigerator.
  • After the stack has set up, cut into 16 wedges. Preheat a grill or grill pan; warm wedges over medium heat until both sides are marked. Combine the reserved onion mixture with the balsamic vinegar to make the dipping sauce.

2 tablespoons unsalted butter
1 tablespoon olive oil
1/2 cup minced whole scallion
2 cups cooked leftover egg noodles
Salt and freshly ground pepper to taste
Minced fresh parsley for garnish

Steps:

  • In an 8-inch skillet set over moderate heat, heat the butter and oil until hot. Add the scallion and cook, stirring, 2 minutes. Add the noodles, salt and pepper to taste and pat into an even layer. Let cook over moderate heat for a few minutes or until lightly golden on the bottom. Turn and cook until golden on the bottom. Transfer to a serving plate and garnish with the parsley.

This amazingly flavorful dinner cake came to The Times from Allen Susser, a Florida chef. It's an Americanized and sweetly garlicky version of noodle kugel. With white and green fettuccine, it makes a festive spring or holiday presentation, rich and firm, that can hold its own at the center of the table.

Number Of Ingredients 12

2 heads garlic, cloves separated but not peeled
3 tablespoons olive oil
4 medium shallots, peeled and cut into thin strips
6 eggs
1/2 pound spinach fettuccine
1 pound white fettuccine
2 teaspoons salt
3/4 teaspoon freshly ground white pepper
1 teaspoon dried thyme
1/8 teaspoon ground nutmeg
2 cups half-and-half
Parmesan cheese, to coat pan

Steps:

  • Preheat oven to 350 degrees. Place garlic in a small baking dish. Drizzle with 1 tablespoon of the olive oil. Cover with foil and bake until garlic is very soft, about 1 hour. Squeeze the garlic from the skins and set aside.
  • Heat 1 tablespoon of the olive oil in a small skillet. Add shallots and saute until they begin to caramelize, about 3 minutes. Set aside.
  • Cook the spinach and white fettuccines separately in salted water until tender but firm. Drain and place each in a separate large bowl. Whisk together the roasted garlic, 1 teaspoon of the salt, 1/2 teaspoon of the white pepper, thyme, nutmeg, 1 1/2 cups of the half-and-half and 4 of the eggs. Pour over the white fettuccine and mix well. Whisk together the shallots, 1 teaspoon salt, 1/4 teaspoon white pepper, 1/2 cup half-and-half and 2 eggs. Pour over the spinach fettuccine and mix well.
  • Grease a 10-inch round springform pan with the remaining tablespoon olive oil. Coat the pan with the Parmesan. Place half of the white fettuccine mixture in the bottom of the pan. Top with the spinach fettuccine mixture. Cover with the remaining white fettuccine mixture. Cover the pan with aluminum foil. Bake for 45 minutes. Let rest for 5 minutes. Run a small knife around the edge of the pan to loosen. Unmold, cut into wedges and serve.

Roast a whole head of garlic and then spread it on a baguette before another bake with Parmesan and parsley.

1 head garlic
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
One 12-inch baguette, split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the top third off the head of garlic, exposing the tops of the garlic cloves. Put on a piece of aluminum foil, drizzle with 1 tablespoon of the oil and sprinkle with 1/4 teaspoon each salt and pepper. Wrap tightly and roast until the cloves are golden brown and very soft, about 45 minutes; cool slightly.
  • Unwrap the garlic and pour any garlic-flavored oil from the foil into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 2 tablespoons oil and mash with a fork until smooth; season with additional salt and pepper.
  • Put the bread halves on a baking sheet and evenly spread with the roasted garlic mixture. Top with the Parmesan and a few grinds of pepper. Bake until the bread is toasted and the cheese is melted, about 10 minutes. Sprinkle with parsley and cut into pieces.

300 g spaghettini
15 stalks asparagus, cut into 1-inch pieces
1/2 head broccoli, cut into bite sized florets
7 -8 shiitake mushrooms, cleaned and sliced
2 tvsp evoo extra virgin olive oil
2 tablespoons butter
6 -7 fresh garlic cloves, finely minced
2 tablespoons grated parmesan cheese
1/2 medium tomatoes, deseeded and chopped
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper

Steps:

  • Prep the vegetables as described in the ingredients section.
  • Heat a pot of water, add salt and a couple of drops of EVOO and boil the spaghettini till aldente! About 7-8 mins (Do not overcook! ).
  • At about 6 minutes add the broccoli florets to the pasta and let it cook.
  • In the meanwhile when the noodles are cooking, heat the oil and butter in a large pan, add minced garlic and saute. Add the asparagus and mushrooms and saute for 3-5 mins.
  • Drain pasta and broccoli into a colander.
  • Add the pasta and broccoli to the pan, toss in the chopped fresh tomatoes, add salt and pepper and mix well.
  • Transfer to a serving dish and sprinkle grated parmesan.
  • Enjoy delicious hot garlic noodles!

These deceivingly simple, yet devastatingly delicious garlic noodles were invented back in the '70s at a restaurant in San Francisco called Thanh Long. Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

2 tablespoons soy sauce
1 tablespoon oyster sauce
2 teaspoons Worcestershire sauce
2 teaspoons fish sauce
¼ teaspoon sesame oil
1 pinch cayenne pepper
8 cloves garlic, minced
4 tablespoons unsalted butter
¼ cup finely grated Parmigiano-Reggiano cheese
1 tablespoon chopped green onion, or to taste
6 ounces spaghetti
1 pinch red pepper flakes

Steps:

  • Stir soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper together in a small bowl for the secret sauce.
  • Place secret sauce near the stove. Place garlic, butter, Parmesan cheese, and green onion in individual bowls within easy reach.
  • Melt butter in a skillet over medium heat. Add garlic; cook and stir just until fragrant, about 1 minute. Quickly stir in the secret sauce and turn off the heat.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet slightly firm to the bite, about 12 minutes.
  • Transfer spaghetti into the sauce using tongs, bringing some of the cooking water with it. Toss until well coated and stir in Parmesan cheese. Splash in more pasta water if noodles are too dry.
  • Plate noodles. Garnish with red pepper flakes and green onions.
